PECAN PUMPKIN PANCAKES | Gluten Free

  • We are talking gourmet pancake here guys! So yummy and gluten free! I hope you give these a try. I think you're really going to like 'em!
    What you'll need:
    Oat flour (1 cup finely ground)
    Almond flour (1/2 cup)
    Baking soda (2 tsp)
    Pumpkin pie spice (1 tbsp)
    Powdered sugar (1 tbsp)
    Eggs (2, room temperature)
    Milk (3/4 cup)
    Apple cider vinegar/or white vinegar (1 tsp)
    Vegetable oil (1 tbsp)
    Vanilla (1 tsp)
    Pumpkin Puree (1/2 cup, puree, not the filling)
    Pecans (1/4 cup roughly chopped, toast them in a dry pan before adding to batter for even more flavor!)
    Preheat frying pan (casted iron works well). While your pan is heating up mix dry ingredients into wet. Don't over mix, just enough to blend all ingredients together.
    Spray your preheated pan with a nonstick coating. I used a small (2 tbsp) ice cream scoop to measure out my batter. This will make 12 pancakes. I didn't level the scoop off. I scooped up as much batter as it could hold. Place on skillet and spread out just a bit.
    Cook 1-2 minutes per side. Once you turn them over, allow to cook then tap the center with your fingers...it should feel firm when done.
    Enjoy with real maple syrup! Try freezing these in a zip-lock freezer bag for a sweet treat you can pop in the toaster!
