WILD RICE KALE CHILI | VEGETARIAN | LOW-FAT & HEALTHY

  • Hey guys! Try this super healthy and delicious Wild Rice Kale Chili! It's so good and so good for you!!
    What you'll need:
    Vegetable Broth or Bouillon (3 1/2 cups, I used Better Than Bouillon)
    Fire Roasted Tomatoes (1 can)
    Chili beans (1 can, draining is optional)
    Canned Red Peppers, cooked (1/2 cup)
    Chili powder (2 Tbsp)
    Cumin (1 tsp)
    Garlic powder (1 tsp)
    Cayenne pepper (1/4-1/2 tsp)
    Green Peas (1 cup, frozen or thawed)
    Wild Rice (1 1/2 cups)
    Fresh Kale (3 cups finely chopped, you can also purchase this precut in a bag)
    Instructions:
    Heat broth in large soup pot. Add fire roasted tomatoes, chili beans, red peppers, garlic powder, chili powder, cumin, cayenne pepper, stir. While your base is heating up blend ingredients together, somewhat, using an immersion blender or stand blender. If using a stand blender, remove 2 cups of your soup base, blend and return to pot.
    Add peas, rice and kale....stir. Cook for an additional 8-10 minutes and serve.
