- Hey guys! Check out this super simple and delicious, one pan dish...Quinoa Tex Mex! So much flavor and ready in under 30 minutes!
What you'll need:
Olive oil (2 tbsp)
Sweet onion (1 cup diced)
Garlic (3 large minced)
Red Bell Pepper (1 cup diced)
Sweet Corn (fresh or frozen, 1 cup)
Diced Tomatoes and Green Chilis (1-11 ounce can)
Red Beans (1-15 ounce can, drained/rinsed...black, kidney and pinto are also fine)
Vegetable Broth (3 cups, low sodium)
Taco seasoning pack (1 pack of your favorite)
Quinoa (1 cup uncooked, rinsed)
Lime (juice from 1/2 a lime)
Cilantro or Parsley (optional, 1/4 cup chopped)
Instructions:
Heat oil in large pan, add onions, garlic, peppers and corn. Stir, add tomato and chilis, beans and broth. Mix in seasoning pack. Stir until dissolved. Add quinoa, give it another stir and bring to a boil. Once you have reached a boil, reduce heat to a simmer, set timer for 15 minutes. Stir halfway through. Just before serving add juice from 1/2 a lime.
*Additional toppings: Cheddar cheese, Sour Cream or Avocado
