    Thank you, Monique. I enjoy your recipes. Is it OK to use VITAL WHEAT GLULEN w the YUDANE method? Also, what is your dosage in mg of VITAMIN C in your package?       You can use vital wheat gluten but I find it unnecessary with yudane. To me, the yudane is a replacement for vital wheat gluten. According to my vitamin c powder, 1/4tsp is 1000mg.

    I have that mixer and I add most of my flour at once then once it's mixed well I can tell if I need to add more.

    As you know from some of my other comments I have been having a problem getting a windowpane with my Ank. I bought the Zacme and got it yesterday. It is great. It only took about 8 minutes to get a nice windowpane. Thank you for the recommendation! 😊 BTW have you ever tried the dough hook on the Ank? If so what did you think about it. I tried it once. I may have to try it again to see how it does.

      I’m so happy to hear that you had success with this mixer! I have used the dough hook for the Ank and I didn’t have a good experience. I kneaded for 20 minutes with no windowpane and then took the dough out and switched mixers because I didn’t have time to keep waiting.

    In the recipe you don’t include the 10% rye. Should I add more hard white? Or, is 650 g enough for a 13” loaf?

      Hi! Yes I put it on the middle rack. And the rye is optional. I just had some I wanted to use up at the time. You can do all hard red or all hard white or add 65g of another grain of your choice. If you add another grain just do 65g of that grain and 585g of the hard wheat for the 13in loaf. That way it still totals 650g.

    Just found you. Do you have a tutorial on how to cook them fully in the tortilla press/cooker. I just bought one and i tried another recipe yesterday but none of mine bubbled up.

      @@esteehammer1248 great question! Sorry I wasn’t clear. You leave the top open and use it the same way you would a skillet. With the top down, I find they get more crispy.

    I just purchased this mixer. It is perfect for my needs. I have a 7 qt. Proline and plenty attachments and didn’t want to purchase the Ankarsrum. Two loaves of bread will work for me. Thank you for your well done review. I just got my Mockmill 5 weeks ago and have only made pancakes because I didn’t want to ruin my KitchenAid.

    My question is why does your dough always look so soft. Mine never looks like that. I have the Ank and I cannot seem to reach that nice windowpane and get that soft dough. I went over 30 minutes kneading in Ank today and just didn’t get it. But my first rise doubled pretty quick. I am in my second rise now. I have read so much stuff and watched so many videos including yours and Dr Mel’s. It gets frustrating. Maybe it all boils down to experience. I won’t give up! Fighting!! Well the first rise was good but it didn’t do well when I cooked it. 🤪

      There’s a learning curve with the Ank (a bigger curve than I imagined). Every loaf I made in the Ank after these didn’t do well. Even rolls and burger buns.

    I have had my Zacme mixer for almost three months now. I bought it to try my bread dough after watching Amy Learns to Cook review of all three Zacme machines. I love it. It is quiet and has never had any issues with the dough.. I love your video with the whole wheat freshly ground. I have done 1/2 wheat and 1/2 while flour with my bread dough, but after watching your video, will use all whhole wheat. I do not sift my wheat flour after grinding, but am thinking of doing that with all fresh ground whole wheat to see how much of a difference it makes. You have avery calming voice in the video. Easy to listen to and very well done with good information. Thank you for a great video.

    Thanks for the great review... I’ve been using a Bosch compact for 12 years now to make two loaves of fresh milled whole wheat every other day and this one seems to process the dough the same way but without all the wild straining sound effects and all quality stainless steel parts. The Bosch still works and develops the dough better tha than most mixers with zero bowl scraping ever needed, but I’ve always looked for something to replace it with that works as well but with the quality stainless steel parts and no straining. sound effects. This seems to be a possibility at last… I loved hearing your voice by the way… Wellness blessings to your family 🙏🏼

    Very interesting comparison. Although KA is commercial model I only do small batches. Ank can handle quadruple recipe with no problem I’ve heard. Ankarsrum is gentler on dough And I’ve also heard that often you may not need to use all the flour. Once dough is coming together Ank arm should be adjusted about an inch away from side. Also speed should be 3 o’clock position.

    How much dough did you put into each freezer bag? Did I notice your putting some oil in the bag, too? How long before you are going to use it do you take it out of the freezer? Thank you in advance!💗

      Yes, I oil the bags. I put 1000g into each bag. 500g is 1 pizza dough. The longest these will be in my freezer is 4 weeks. I make 4 pizzas every Friday.

    Thank you for testing and giving your true opinion. The dough hook kinda looks like the old nutrmill compact mixer which was discontinued, it was the predecessor to the Artiste i think. This may be a good option for anyone needing a mixer for smaller batches.

    I wanted to let you know I made these with the electric press, 65 grams butter, after I pressed I separated with wax paper & froze. Defrosted some yesterday & they puffed up beautifully! I am going to make more to have in the freezer! Thank you so much!

    Your written recipe for eggs says 500g water, but in the video you said 523g. Which is correct? Or does it matter?

      I reduced it from people saying that their dough is too wet. Go with 500 to be on the safe side. I have no issues as you can see in the video but I think the difference in egg size may be throwing some people off.
