    Measurements for 12 9in loaves:
    4350g hard wheat berries
    2958g water (room temp)
    309g oil
    348g honey or sugar
    87g salt
    44g yeast
    81g sunflower lecithin
    169g vital wheat gluten (optional, I did not use it in this video)
    1.5tsp vitamin C powder (optional, I don’t always use it)

    It's just the 2 of us, so I have no need to make 10 loaves at a time, but I find your videos and voice so mesmerizing and well done that I watched the whole thing.

    That was very interesting! That mixer is awesome! Once I finally make a loaf of home milled bread that I’m completely happy with, I will go back to big batches……..well I used to think I was making big batches when I did six loaves😂. I am definitely going to try using the lecithin, even sifting on #40 and adding 3% gluten powder, I don’t get the bread to rise like yours! It tastes good though! I hope to eventually make the bread for our church’s potlucks.

      @@Lovelybellbakes I watched that video today! Thank you for giving the grams. I’m going to convert your recipe to bread makers percentages and then put it into my Bread Buddy app so I can get any weight of dough I want! I’m using a Mockmill, that shouldn’t make a difference to the resulting flour should it?

    What a great video. You are extremely talented. I wish I could have seen you cut one apart and give it a taste. You are so easy to understand. I have a question as to what the sunflower lecithin does for the bread? Thanks for a great video.

      Thank you so much! The lecithin helps to emulsify the fats which means the loaf is soft and stays soft longer.

    Did you take a water bottle and spray that for just a second with a very fine mist as it begins to mix it will keep the dust from getting into the air.

    What brand of mixer do you use to make large amounts of dough? Never mind, I found it. Did some research on this mixer, and what a work horse.

    Thank you for sharing! At this point I’ve been just making two 12 inch loaves at a time for our family of 9 but I’ve decided I need to start making 4 loaves so I don’t have to bake so often. Your recipe is fantastic and stays fresh for days! Do you freeze some of the loaves?

      I have a family of 10 so I know what it’s like to be baking bread every other day! I freeze all but 2 loaves. I slice it all up and freeze in plastic bread bags from amazon. It thaws very nicely and is still very soft.

    So beautiful! When the loaves are baking, you don't keep them on the cookie sheets, right?
    Do you shift the pans around halfway through or leave them in the same place the whole time?

      Great question. In this video I did not keep them on the pans but I have started keeping them on since filming this. It makes it much easier to shift the loaves half way through cooking, when they’re on the sheet pan. I do have to increase the heat with them on the sheet pans.

    Do you have a conventional home oven, or a convection oven? I've got an electric oven, and it's the standard 36" size stove. I've been afraid of lowering the bottom shelf too low to bake additional loaves of bread. Love your videos, by the way, and am going to save your bread recipe to try. I've not tried bread with lecithin or vital wheat gluten yet. I did just order vital wheat gluten tonight, and am going to also look into ordering lecithin to see if it makes a difference in my loaves. I am new to FMF, but learning has been fun! I love your gentle voice, and videos. :)

      Thank you for your kind words! I have a standard conventional electric oven. Sounds like we have the same size oven. I used to be concerned with cooking at the bottom of my oven as well but I got so tired of having to bake in multiple batches so I just gave it a shot and it was trial and error but I eventually got the hang of it. I’m just now realizing that I forgot to mention in the video that I move the pans around half way through so they cook evenly

      Thank you for sharing your wisdom . I would like to try making the same amount of bread in my oven. How did you move your bread around in the oven ? Did you switch bottom loafs of bread with the top ? Or keep them all in the same rack and just move them around ? Thank you again. 😊

      @@rickmenendez3869 I switch the top to the bottom and the bottom loaves to the top. Putting the loaf pans on baking sheets makes it easier to maneuver them as well.

    One more question I have a Bosch mixer would that be okay to use on large batch

      The Bosch is a workhorse. It should be able to handle 5 loaves easily.
