    Looks deelish. Got a off topic ? for ya. Been thinkin about a charcoal grill since my gas one one is gettin kinda rough. My concern is some reviews are saying the quality of the Weber grills isn't what it used to be. Your thoughts. 👍🍻

      the quality HAS gone down. I remember checking out a display model at costco once and the lid was lighter and thinner. it didn't have the same feel as my old kettles. I could immediately tell the difference. have you tried checking out market place for a used one? you'll save money. the great thing about charcoal grills is there are no electronics in there that'll go bad...as long as the bowl and lid hasn't rusted through, all other things can be replaced and sometimes for free if the 10 year warranty is still active.

    Excellent tips. Rubbery chicken skin is not appealing. Crispy skin is way better. Same thing with fish skin. Cheers! 👍🏻👍🏻✌️

      Yes! crispy is always best. It’s always best to get it crispy during cooking but this is an excellent solution if things don’t work out as expected.

    Great video Sal! I’m from San Diego originally, and when you leave California nobody knows what Carne Asada is, they call it steak tacos! I didn’t get into BBQING until I left California, Mexican food was my go to out there and since that can’t be duplicated I started BBQING! I try to a lot of smoking in the winter time in Indiana because I hate being stuck inside the house and in the summer I grill a lot because I have a lot of outside projects to do!

    curious, are you losing any offset cooking area when using just one of the baskets? Maybe they're just taller? They look like nice quality. TY

      it's about an inch bigger than the normal baskets. so yes, you lose a bit on the indirect side

    God Love You and your Mom. There is nothing better to put in your mouth than a good mole. The jars at the store are good for collecting juice glasses, but nothing near the bliss I've cooked from scratch. Lie. I only cooked one mole from scratch that I love, two were ok. I think it was Poblano, but I lost the recipe and still can't find it online. Mole should be promoted and shared with the world and the best damn sauce ever created in the history of civilization! And that's speaking as a half French person. (Mom' side gots lots of Spanish/Sonoran Mexican) MOAR Mole Please!

    So, this kind of like the snake method but with the ability to use more charcoal? I would assume this allows more than a "couple" of hours, if it allows you to do a shoulder or brisket. What made you decide to come up with a different method?

      Its a slight modification to the minion method. I wanted a slower, lower burn on my wsm

      @@SJCOOKS I never had a problem getting 9 hours+ on mine, but then again I'm rarely interested in going long for something like brisket. Usually the longest I'm willing to go is a shoulder
