How To Make Skirt Steak Pinwheels On The Grill

- There’s no denying steak pinwheels are not only delicious, but they present really, really well! While there are limitless possibilities for stuffing them, let's keep it basic until you get used to the method and technique. Full disclosure: this video is my second attempt at making these. There were a few, ughm, minor hiccups the first time I did these… but let's get through my second attempt today. I’ll highlight a few issues I ran across so your first time is a lot smoother than mine.
In this video, I’ll be adding chimichurri, provolone cheese, rolling the meat, and then slicing. We’ll cook them hot and fast to get a nice sear, then finish cooking indirectly until they hit medium rare. I’ll also introduce you to an easy-to-make chimichurri sauce with dried herbs ready to add the wet ingredients. Plus, I’ll run through the mistakes I made the first time so you can learn from them and have a successful first cook. Let's get started!
