  • In my last video, I explained how I enjoyed putting delicious mole over some turkey growing up. And in this video we are going on a deep dive deep into the world of Mole Colorado - one of the seven moles that Oaxaca proudly boasts. We'll explore the history, the various types, and intricacies of Oaxaca's renowned moles.
Let’s discuss the cultural roots and historical significance behind mole and why it was topped over turkey. Mole is a complex sauce with roots dating back centuries. From indigenous traditions to contemporary culinary marvels, we'll unravel the fascinating story of this beloved Mexican dish.
Get ready for a step-by-step walkthrough as we delve into the heart of Mole Colorado. From roasting aromatic chiles to toasting spices and nuts, every element plays a crucial role in creating the perfect balance of flavors. I'll share insights into the distinctive qualities of each ingredient and how they contribute to the richness of this tantalizing mole.
Don’t let the large ingredient list intimidate you. It’s easy and I’ll walk you through it. The most important thing to know is use whatever ingredients you have available to you and make it your own. So whether you are topping your turkey with this delicious mole, or making enmoladas, chilaquiles or enchiladas…this is one recipe you won’t want to miss!

God Love You and your Mom.
There is nothing better to put in your mouth than a good mole.
The jars at the store are good for collecting juice glasses, but nothing near the bliss I've cooked from scratch.
Lie. I only cooked one mole from scratch that I love, two were ok. I think it was Poblano, but I lost the recipe and still can't find it online.
Mole should be promoted and shared with the world and the best damn sauce ever created in the history of civilization! And that's speaking as a half French person. (Mom' side gots lots of Spanish/Sonoran Mexican)
    MOAR Mole Please!

Thanks for taking a look! mole is my favorite. I made a lot last time and keep putting it in everything. I smothered some ribs with it and they were very good!

Lmao! I use to think that word was hilarious when I was little and my brother told me what it really meant so I thought it was uncool to say it. And I didn’t until way into my teen years where it became funny again lol!

When driving up the interstate 5, there is a road exit called “panoche road” and I act like a 10 year old when we drive past it and point it out to whoever is in the car. It’s usually my wife and she always says…”that’s not how you spell it!” or she says, “grow up” lol

Nice recipe Sal. If I were to try this, I'd add chocolate as there is a place by me that ruined me with a nice chocolate mole so I'd have to have it. Thanks!

Haha yup! Very tasty. The best sweet mole I ever had was at a wedding in Mexico. I saw them put all the ingredients and it was all mixed in a giant pot with a huge wooden spoon that looked like a broom handle. It was pretty epic and remember being amazed about how much they made for the guests

Question - I noticed the sesame seeds took a while in the blender. Would they do fine going in the spice grinder as well?

Yes! I was going to run it through spice grinder but I have to go through a few rounds of it since it won’t fit All of it at once
