Ingredients (for juicy and tender meat with rich sauce):
Meat (beef or lamb) - 1 kg
Onion - 300 g
Tomato paste - 1 tbsp.
Salt and sugar - to taste
Chmeli - suneli or your favorite spices - 1 tsp
Paprika - 1/2 tbsp.
Ground red pepper 1/4 tsp (optional)
Black pepper to taste
Red bell pepper - 2 pcs.
Tomatoes - 500 g
Garlic - a few cloves
Laurel leaf (optional)
Cilantro or parsley - 1 bunch
Vegetable oil for frying
Beef broth or water - 500 ml (as needed)
Ingredients for the dough:

300 ml warm water
7 g dry yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons of olive oil
1 egg (yolk)
1 tablespoon of water

    Instructions: Preparation of the opara: In a large bowl, mix the warm water (170 ml) with the dry or fresh yeast. Stir well so that the yeast dissolves completely. Add 130 grams of flour to the mixture and mix until a smooth paste is formed. Cover the bowl with a clean towel or cling film and leave in a warm place for 30 minutes to allow the dough to rise. Preparing the dough: After 30 minutes, add 120 grams of sugar and 2 eggs to the opara. Beat the mixture with a whisk until smooth. Pour in the melted butter and milk, then add the natural yogurt. Mix thoroughly again. Knead the dough: Gradually start adding the sifted flour (start with 600 grams) and salt. Stir the dough with a spoon at first, then when it becomes too thick for the spoon, start kneading it with your hands. Continue adding flour until the dough is soft, elastic and slightly sticky (add the remaining 100 grams of flour if necessary). Knead the dough on a lightly floured surface for about 8-10 minutes, until smooth and elastic. Rising of the dough: Transfer the dough to a clean, oiled bowl, cover with a towel and leave in a warm place for 1-1.5 hours until the dough has doubled in volume. Shaping the buns: After rising, knead the dough and divide it into 24 equal pieces (50 grams each). Form each piece of dough into a ball. To make the buns smooth and even, roll each ball between the palms of your hands. Second rise: Place the buns on a baking tray pre-greased with oil or lined with parchment paper, leaving a small space between them. Cover the buns with a towel and leave for 30 minutes to rise again. Preparing for baking: If desired, brush the buns on top with water and sprinkle lightly with sugar to give them an appetizing shine and sweet crust. Baking: Preheat the oven to 180°C. Bake the scones for 25-30 minutes, until they are golden and have an appetizing flavor. Baking times may vary depending on your oven, so check for doneness with a toothpick - it should come out of the bun clean. Final touch: Take the finished buns out of the oven and, while they are still hot, brush the top with butter. This will make them soft, shiny and give them a delicate creamy flavor. Serving: Leave the buns to cool on the rack so they don't get soggy underneath. Serve warm or completely cooled with your favorite toppings. Tip: The buns can be frozen after cooling and reheated in the microwave or oven before serving - they will become soft and flavorful again. Enjoy!

You may not need all the water, or you may need a little more. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean cloth and leave in a warm place for 2 hours until it has doubled in volume. Preheat the oven to the highest temperature possible. If you have a pizza stone, place it in the oven to preheat. When the dough has risen, divide it into portions if necessary. Roll out the dough on a lightly floured surface to desired thickness. Spread the dough with tomato sauce, sprinkle with cheese and add your chosen toppings. Drizzle a little olive oil on top and sprinkle with salt, dried herbs and fresh basil. Bake in the preheated oven until crust is golden and toppings are bubbly and lightly browned, usually about 10-15 minutes. Enjoy your homemade pizza, perfect for socializing with family and friends!

The dough should be soft and not sticky. If the dough is too sticky, add a little more flour, but not too much, so that the buns do not become dense. Allow the dough to “rest” for 10 minutes. This will allow the ingredients to come together better and the dough to become more pliable. Preparing the filling: In a separate bowl, grind the cottage cheese with the sugar and starch. Add vanillin to taste and mix thoroughly until smooth. Shaping the rolls: Sprinkle the work surface with flour and roll out the dough into a rectangular layer about 3-5 mm thick. Cut the dough into small rectangles or squares (approx. 10x10 cm). Place 1 teaspoon of filling on the edge of each piece of dough, then roll up the dough into a roll, sealing the edges tightly to prevent the filling from leaking out when baking. Baking: Preheat the oven to 180°C. Place the rolls on a baking tray lined with parchment paper, leaving a little space between them. Bake the buns for about 20-25 minutes, until they are golden. Baking time may vary slightly depending on your oven, so keep an eye on the color of the buns. Serving: Cool the finished buns slightly on a rack and serve. They are perfect either warm or completely cooled. Tip: If you want to add a twist, you can brush the buns with milk or egg on top before baking and then sprinkle with sugar or sesame seeds.

    Milk bread 🍞 (hand kneaded) Ingredients: Wheat flour - 250 g Egg - 1 egg (about 50 g) Milk - 125 ml (slightly warm is better) Sugar - 30 g Dry yeast - 4 g Salt - 3 g Butter - 20 g (room temperature) Preparation: Preparation of ingredients: Make sure all the ingredients are at room temperature. It is better to warm the milk slightly to about 35-40°C to get the yeast to work faster. Knead the dough: In a large bowl, mix the flour, sugar and dry yeast. In a separate bowl, beat the egg and add the warm milk. Gradually pour this mixture into the flour, stirring constantly with a spoon or your hand. When the dough starts to come together, place it on a lightly floured work surface. Knead the dough by hand for 10-15 minutes until it becomes smooth and elastic. The dough may be sticky at first, but it will become more pliable and uniform as it kneads. Adding salt and oil: After the first kneading, add the salt and soft butter. Continue kneading the dough for another 8-10 minutes. The butter should be completely absorbed into the dough and it should become soft and elastic. This step will require some patience as the butter may make the dough slippery at first. First rise of the dough: Transfer the dough to a lightly oiled bowl and cover with food wrap or a clean kitchen towel. Leave the dough in a warm place for 60 minutes until it has doubled in volume. Bread molding: After rising, gently transfer the dough to a lightly floured work surface. Divide the dough into 9 equal pieces (you can make smaller or larger pieces for different bread sizes, if desired). Form each piece into a ball, being careful not to let too much air out of the dough. Rest the dough: Cover the dough balls with food wrap or a towel and let them rest for 15 minutes. This will make further molding easier. Final molding and rising: After resting, shape the dough into the desired bread shape (such as loaves or rolls). Place the formed bread on a baking tray lined with parchment paper. Cover the dough and leave it to rise a second time for 45 minutes. Baking Preparation: Preheat the oven to 185°C. Before baking, sift a little flour on top of the dough to give the bread a more appetizing appearance. With a sharp knife, make a few incisions on the top of the bread to allow the steam to escape freely and the bread to open up better. Baking: Bake the bread in the preheated oven for 20 minutes. Baking time may vary slightly depending on your oven, so keep an eye on the color of the crust - it should be golden. Cooling: After baking, transfer the bread to a rack and allow it to cool completely before slicing. Tip: If you want a more tender crust, you can lightly spray the bread with water and cover it with a towel immediately after baking.

    Instructions: Yeast Preparation: Add sugar and dry yeast to warm milk (not hot, about 37-40°C). Stir and leave for 10-15 minutes until a puffy “cap” of yeast appears. This indicates that the yeast has activated. Preparing the dough: In a large bowl, sift the flour (start with 500g) and add the salt. If you want to knead the dough immediately, make a depression in the flour and pour the yeast mixture into it. Melt the butter or margarine and add it to the flour along with the yeast. Start kneading the dough, gradually adding the remaining flour until it is soft and not sticky (but not too tough). If you prefer to activate the yeast separately first, add about 100g of flour to the yeast mixture and let stand for 10 minutes, then pour it into the remaining flour and continue kneading. Kneading the dough: Knead the dough with your hands or with a mixer fitted with the dough attachment until it becomes elastic and does not stick to your hands. Grease a bowl with vegetable oil and place the dough in it, cover with a towel or food wrap and leave in a warm place for 1-1.5 hours until the dough has doubled in volume. Shaping and baking: After the dough has risen, knead it and proceed to form patties, rolls or roll out for pizza.You can use any kind of filling: jam, potatoes, cabbage, egg and onions, etc. Bake the products at 180-200°C (depending on the type of product) until golden crust or fry the pies in a frying pan. Tips: Egg in the dough: If you want a softer dough, do not add egg. This is especially important for scones and pies.     Cooking Instructions: Pour warm water (no higher than 40°C) into a large glass, add the dry yeast and sugar. Mix well and leave for 10 minutes to allow the yeast to activate. The mixture should start to foam Preparing the dough: In a large bowl, sift the flour and add the salt. This is important to make the dough homogeneous and lump-free. Pour the activated yeast into the bowl with the flour. Knead the dough until it becomes soft and elastic. The dough should stick slightly to your hands, but don't add more flour - this is important for the texture of the bars. First rise of the dough: Grease your hands with vegetable oil and gently gather the dough into a ball. Leave it in a bowl covered with a towel for 30-40 minutes in a warm place for the dough to rise. Shaping the bars: Sprinkle your work surface with a small amount of flour. Turn out the risen dough and divide it into 8 equal portions. Form each piece into a ball, then lightly press the two ends together and roll to form a loaf. Second rise and prepare for baking: Place the bars on a baking tray lined with parchment paper, cover with a clean towel and leave for 20 minutes for a second rise. In the meantime, preheat the oven to 190°C. Baking preparation: Mix 2 tablespoons of yogurt with a quarter cup of water. Brush the bars with the mixture using a brush. Make a few incisions on each bar with a sharp knife so they can rise evenly during baking. Baking: Place a bowl of water on the bottom shelf of the oven to create steam, which will help the bars to be soft on the inside and crispy on the outside. Bake the bars in a preheated oven at 190°C for 25-30 minutes until golden.The finished bars should make a thudding sound when tapped on the bottom.Cooling:After baking, transfer the bars to a wire rack and allow them to cool completely before serving. Tips:For a richer flavor, you can add 1-2 tablespoons of olive oil to the batter. If you want a crispier crust, increase the baking time by 5-7 minutes, but make sure the bars don't burn. Mixing: Add the pieces of butter to the flour and rub them into crumbs with your fingers. Adding the egg: Add the egg and ice water. Knead the dough quickly until it becomes smooth. Cooling: Form the dough into a ball, wrap it in cling film and put it in the refrigerator for 30-60 minutes. Preparing the filling: Preparing the chicken: Cut the chicken fillet into small cubes. Heat the vegetable oil in a frying pan and fry the chicken until golden brown. Salt and pepper to taste. Mushrooms and onions: Cut the onion into small cubes, the champignons into slices. Fry the onion in the same pan until soft, then add the mushrooms and cook until the liquid has evaporated. Garlic and cream: Add the crushed garlic to the mushrooms and fry for another minute. Pour in the cream, bring to the boil and simmer until the mixture thickens. Mixing: Combine the chicken and mushroom mixture, stir and leave to cool. Shaping and baking the galette: Rolling out the pastry: Remove the pastry from the fridge and roll it out into a circle about 30 cm in diameter on a floured surface. Filling: Place the filling in the centre of the pastry, leaving a border about 5 cm wide. Sprinkle with grated cheese. Folding: Lift the edges of the pastry and fold them inwards, covering some of the filling. Bake: Transfer the galette to a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for about 30-40 minutes until golden brown. Serving: Sprinkle the finished galette with fresh herbs and serve warm. Enjoy your meal!

Knead the dough to a uniform consistency. It should be soft and elastic. Kneading: Knead the dough on a work surface for 10 minutes until smooth. This is important to get soft and tender donuts. First rise: Cover and let the dough rise in a warm place for 20 minutes. Shaping the doughnuts: Divide the dough into small balls of 14 pcs with a weight of about 60g. Place the balls on a baking tray lined with parchment paper, leaving a little space between them for rising. Second rise: Allow the dough to rise on the baking tray for 45-50 minutes. Preparation for baking: Preheat the oven to 200 degrees Celsius without a fan. Brush the tops of the doughnuts with egg yolk for a golden crust, you can sprinkle with sesame seeds. Baking: Bake the donuts in the preheated oven for 15-20 minutes (depends on your oven) until golden in color Take the donuts out of the oven and let them cool slightly. Tips: If you want to vary the flavor, you can add some vanilla sugar or cinnamon to the batter. The finished doughnuts can be sprinkled with powdered sugar or glazed to your liking. Preparing the filling: In a bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract and cornstarch. Mix gently so that all the peach pieces are coated with the mixture. Assembling the galette: Preheat the oven to 200°C (400°F). On a floured surface, roll out the chilled dough into a circle about 30 cm in diameter. Transfer the rolled out dough to the parchment paper. Place the peach filling in the center of the dough, leaving about 5 cm of free edge. Gently fold the edges of the pastry over the filling, pinching them slightly. Greasing and baking: Beat the egg and brush the edges of the pastry with it. Sprinkle the edges with sugar. Transfer the galette together with the parchment paper to a baking tray. Baking: Bake the galette in the preheated oven for 35-40 minutes, until the dough is golden and the filling is bubbling.     Instructions: Preparing the Dough: In a large bowl, mix the whole grain flour, 7-grain flour, salt, and dry yeast. Gradually add the water (437 ml) and olive oil. Stir until the dough starts to come together. Transfer the dough to a lightly floured surface and knead for about 4-5 minutes until smooth and elastic. First Rise: Place the dough in a bowl, cover with a damp towel or plastic wrap, and let it rest for 20 minutes. Every 20 minutes for the first hour, fold the dough a few times to make it more elastic. To fold, gently stretch the dough and fold it in half several times. Second Rise: Let the dough rise at room temperature until it doubles in size, which takes about 1-1.5 hours. Forming the Mini Breads: Preheat your oven to 220°C (430°F). Divide the dough into small pieces (about 50-60 g each) and shape them into mini breads. Roll each piece into a small ball, then slightly flatten it. Place the mini breads on a baking sheet lined with parchment paper and let them rise for 20-25 minutes. Preparation for Baking: Before baking, make slashes on each mini bread with a sharp knife. Brush the mini breads with water to create a crispy crust. Baking: Place a bowl of hot water in the oven to create steam. Bake the mini breads in the preheated oven with plenty of steam for 10-12 minutes. The steam helps to form a crispy crust. The mini breads are done when they are golden brown and sound hollow when tapped on the bottom. Cooling: Remove the mini breads from the oven and let them cool completely on a wire rack before serving. These whole grain mini breads are perfect for healthy eating and will delight you with their taste and texture!
