    Ingredients:
    Dough:
    ・1 1/4 cups flour (160 g)
    ・1/2 teaspoon salt (2.5 g)
    ・1/2 cup cold butter, diced (115 g)
    ・1/4 cup ice water (60 ml)
    Filling:
    ・Ripe peaches, sliced (about 500 g)
    ・1/4 cup sugar (50 g)
    ・1 tablespoon lemon juice (15 ml)
    ・1/2 teaspoon vanilla extract (2.5 ml)
    ・2 tablespoons cornstarch (16 g)
    ・1 egg (to grease the dough)
    ・Sprinkling sugar (approx. 1 tablespoon / 15 g)

    Instructions:
    Preparing the dough:
    In a large bowl, mix together the flour and salt.
    Add the cold butter and rub it into the flour to make a dough with coarse crumbs.
    Gradually add the ice water, mixing the dough until it begins to come together into a lump.
    Form the dough into a disk, wrap it in cling film and chill in the refrigerator for at least 30 minutes.
    Preparing the filling:
    In a bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract and cornstarch. Mix gently so that all the peach pieces are coated with the mixture.
    Assembling the galette:
    Preheat the oven to 200°C (400°F).
    On a floured surface, roll out the chilled dough into a circle about 30 cm in diameter.
    Transfer the rolled out dough to the parchment paper.
    Place the peach filling in the center of the dough, leaving about 5 cm of free edge.
    Gently fold the edges of the pastry over the filling, pinching them slightly.
    Greasing and baking:
    Beat the egg and brush the edges of the pastry with it.
    Sprinkle the edges with sugar.
    Transfer the galette together with the parchment paper to a baking tray.
    Baking:
    Bake the galette in the preheated oven for 35-40 minutes, until the dough is golden and the filling is bubbling.
    Allow the galette to cool slightly before serving.
