    In this video I will show you how to make delicious and crispy mini-breads with seeds using a simple homemade recipe. You'll learn all the secrets of the perfect dough, as well as get step-by-step instructions on how to knead the dough, make the cuts and bake the breads to a golden crust. These mini-breads will be a great addition to your breakfast or snack!
    Ingredients:
    560 g baking flour
    400 ml water (70% hydration)
    2 teaspoons of dry yeast (about 7 g)
    1 teaspoon salt (about 6 g)
    1 tablespoon of olive oil (about 15 ml)
    Sesame seeds for sprinkling

    Instructions:
    Kneading the dough:
    In a large bowl, combine the flour, yeast, and salt.
    Gradually add the water and olive oil while kneading the dough. The dough should be soft but not too sticky. If the dough is too dry, add a little water, if too sticky, add a little flour.
    Knead the dough with your hands or with a food processor fitted with the dough attachment for 5-10 minutes until smooth and elastic.
    Primary Fermentation:
    Leave the dough at room temperature for 20 minutes to allow the yeast to start working.
    Then cover the bowl with cling film or a towel and place in the refrigerator overnight. During this time, the dough will rise and take on a better flavor.
    Preparing for baking:
    In the morning, remove the dough from the refrigerator and let it stand at room temperature for about 15 minutes.
    Divide the dough into 15 equal pieces.
    Form each piece into small loaves and leave them under a towel for 10 minutes to pre-rise.
    Handling and baking:
    Preheat the oven to 230 degrees Celsius.
    Drizzle the breads with water and roll them in sesame seeds.
    Place the loaves on a baking tray lined with parchment paper.
    Allow them to rise on the baking tray for a final 20 minutes.
    Make shallow incisions (about 0.5-1 cm deep) on each bread with a sharp knife to improve the rise and form a nice crust.
    Place a bowl of hot water in the oven to create steam (this will help to get a crispy crust).
    Bake the loaves in the preheated oven with steam for 15 minutes until golden.
    Tips:
    You can add flax seeds, sunflower seeds or pumpkin seeds to the batter for variety.
    The breads are best served fresh and crispy, but can be stored in an airtight container for up to 2-3 days.
