Thank you for that.. I got the same burn 2nd degree right wrist. Granted I have only canned black beans once before I attempting cold pack porkloin. Didn't realize I was going for difficulty level 5 combining 1st try with tattler, fatty meat, and 2nd time in adulthood canning. 🤣🤣 Now that the pain has gone I was trying to figure out what I did wrong. Found out fatty meat takes extra care. Then found out there might be differences with the metal vs tattler. Finally found this video and I can say definably I over-tightened. Will be water bath canning lotsa water tomorrows. Thanks again for info.

3 days ago I processed my first canner of Harvest Guard lids on quarts of soup. Much to my surprise they all sealed and are holding. After reading about them I was expecting at least 1 failure because of the learning curve with a new product. They all sealed, better than the Ball lids I used for soup the same day. I can recommend them and look forward to being able to reuse them.
Customer service is excellent. I had a question and they responded right away.

Thank you for putting this out there, Heidi! 💜
When Tattler came on the market, I was at a canning class offered by my local organic nursery. We each prepped a jar of tomatoes. One of the jars broke in the canner. Great example of overtightened!
I'll probably still use the metal ones for jams and jellies because some of them go out in Christmas baskets. 😉

This video is a godsend for me! I am new to Tattler lids which I came across online while searching for jar flats. I ordered a large amount because I knew if I didn't, they would also be hard to get. I made that mistake when I didn't order the All American pressure canner when I first thought about it in April. Anyway, I used them for the first time to can tomatoes. I had watched videos and followed the instructions exactly only to find lids blown off of the jars and tomatoes everywhere in my tall double canner that had 14 jars in it. In hindsight, I should have done a practice round with water. At this point I should have watched your video but nope, I started another canner full of 14 jars of tomatoes just being extremely careful to make sure I was putting the rings on exactly as the video I had watched. You guessed it, same results. This morning I found your video and wish I would have found it at the start because I discovered I have the EZ seal Tattlers! I'm now going to do a test run with water in the jars but I am confident that I will be successful this time!
I'm excited to watch more of you and your husband's videos!

I use both Tattler and Harvest Guard. The EZ Seal Tattler lids seem to have a burr that sometimes prevents them from sealing. I use a small piece of sand paper to smooth it out. That solved my problem with Tattlers. I've used Tattlers for years and years. I just started using Harvest Guard. The Harvest Guard and Tattler EZ Seal work much the same. I use both wide mouth and regular and can fruits, veggies and meat.

I use the Tattlers on everything, including meats. I found by giving an additional 1/4" of headspace to higher fat content foods, I've had a much better success rate.
I agree with you that everyone's finger tip tight is different. But, I've had failures by putting the bands on really loose. The bands have actually come loose and off the jar, releasing the lid. I still share with people to place their finger on the center top of the lid to lightly hold it down, then tighten the band until the jar turns.
I order all of my Tattler lids from Tattler by bulk as well. I'm waiting for one more order to come. I ran short of regular mouth because that was the only size mouth jars I could find. Many people are ordering them! Blessings 💗

Thanks for the info, Heidi. With the lid shortages, reusable have become essential. Yes, Harvest Guard works the exact same as the old style tattlers (not the ez seals). Harvest Guard are also slightly cheaper than tattlers and free (and quick) shipping through their site (canninglidsdotcom). Gaskets are interchangeable between the old tattlers and harvest guard. Harvest guard sells a plastic lid opener for $4 which makes it so much easier than holding your breath when opening with a metal utensil, praying you don't score the gasket.

Keep an eye open at garage sales and estate sales for inexpensive used canning jars and even canners, tongs, and funnels. You never know WHAT you're going to find. Just make sure to check jars for chips and cracks, just like you would when reusing your own jars. And (it should go without saying) wash them throughly, you never know what they had in them. And don't be afraid to buy jars with food still in them. Of course don't EAT it, but you can often get the jars cheap or even free if you are willing to empty them yourself. You can even compost the fruits and vegetables (not the ones with meat in them though).

Here is the video I did about how to watch out for scams because I did a lot of looking into it after that happened to me so I would know what to warn people about:

Dear Heidi, I have stored my rice in jars with the food saver system. Someone on another channel recommended that we put the rice in the freezer first to protect against bugs. Could you please tell me if this is necessary or not? I don't want to take the jars apart and start over unless it is necessary. I value your opinion and thank you very much. Tami

When people put grains in the freezer, it is only temporary to kill bugs and eggs. While I never bother to do this as weevils are very rarely a problem here, it is a good idea. The main issue I have with this though is making sure that after removing from freezer to put up in dry storage, I would recommend giving them a day (maybe even three depending on size of bag) to dry out in case there was any moisture inside the grains caused by ice crystals.

We have Never did second tighten hot like you showed .
Have 98% or better success rate.
Will not seal meat again in them, the field mice chew the rubber, didn't break the seal , just not like the looks.
We wash jars off with a vinegar/soap then rinse before store on winter racks.
We tighten similar , will turn till jar moves , grab jar tighten 1/2 turn, back off 1/4. If rings are not new or near perfect , they can create a false feeling.
    Hot tighten seem dangerous .
We had great success over the years.
I do most of the canning process. She preps fills , normally I try to process them. Most is pressure canned . Lots of our methods would be frown on by Canning books tho. I'm old enough to remember glass lid easy seal jars with wire bails.

The instructions say to tighten after coming out of the canner. I often would miss this step and have several failures. Some jars do not need it and I can tell when I go to tighten down after taking out of the canner, these would be the ones that would have sealed fine without taking that step

Hello Heidi, how are you? Thank you! I'm glad you did this video. I had stocked up on the Tattler lids over a year ago when lids were hard to come by. I have yet to use them. I had also bought Golden Harvest jars and lids.
I haven't used the lids because I hear "Go Ball for lids only.
Have you used either jars or lids at anytime?
Another question I have is why I pressure can anything and what I have in the jars spews out some are these no good? I had bands that were really loose when I took them out. Is that the cause not tight enough bands?
AND OR--- WHEN I'M WAITING FOR MY STEADY STREAM OF STEAM, (TONGUE TWISTER lol) I find a good hard continuous steady steam is when my nipple pops up.(the round silver button on top of pot.)
    That's when I start my 10 mins.
I don't know if that is too long to wait or not.
I had pressured canned baked beans and a lot of them spewed over. So I put them in all new jars because I heard the contents are most likely not any good, and then canned them over again.
I made sure the bands were tighter and waited for the nipple to come up.
The end product was great! Looked beautiful! NO SPEWING AT ALL!
So now I'm thinking are the jars that spewed in the last 2 yrs. No good or what? That's all of my canned food! I don't remember what jars I had to clean because of spewing! Would you please help me with this?
I always respect you and your husband's advice on anything.
I looked through both of my Balls books and I can't remember the other place that has answers to questions. And
If they are NOT safe to consume after spewing out of the jars. With the contents all over in the pot. All of the jars sealed. Again I want to thank you for all of your knowledge and sharing it with us!
God bless you and your family!

    • @RainCountryHomestead
      @RainCountryHomestead  2 роки тому

Golden Harvest is also made by the same company that makes Ball. Only difference is since they may have slight imperfections that do not effect the integrity of the jar. So they can sell those under the Golden Harvest name for a lower price but the reality is that they are the same jars with a different name.
It is normal for jars to lose a little of their contents during the canning process due to the pressure from the inside of the jar pushing up against the lid. Once removed from the heat and the jars begin to cool, that pressure is reversed and this is when the sealing of the lids happens
