1 lb Pancetta, about 1/2 inch chop
3 extra large Eggs + 2 Egg Yolks
1 cup Pecorino Romano Cheese, grated
1 lb Spaghetti

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

There is no other UA-cam video quite like Buon-A-Petitti .... It is so down to earth real. Whoever is in charge, you capture the feeling of being in the kitchen with her. Those old pots and pans are the same ones I learned on growing up. They work well, IMO, better than some of the new stuff with celebrities' names on them. I am amazed at how some of the dishes she prepares are exactly like those in our house. It's like I'm a kid again watching and helping. A big THANK-YOU for these videos. Our culture has changed so much. There are now people in their 40's and younger who do not have a clue as to how to cook these great dishes. THIS IS THE NEW WAY OF PASSING IT ON. Keep the videos coming.

See this is the thing. This Italian grandmother uses pancetta instead of guanciale because it was what she could find. It's not always about using whatever is used traditionally 100%, Italian cuisine has always been about cooking with what you've got and what you can find. Amazing video

Where I live, it’s easier to get gota than guanciale. I’m not exactly sure about the difference besides the origin (Lazio vs Toscana). What would grandmother say about using Gota in Carbonara?

I am of Italian origin as my father was Italian and my grandma came from Pissarro and my grandoa from Padua.
My dad married a french speaking woman from Quebec and i married a English man from Newcastle.
I watch your videos all the time and i have so much respect for you and admiration.
I'm 75 years of age and today i made just a half bushel of romana tomatoes and i was wondering how in the world you can nake 10 bushels.
That was a lot of work, but i understand you when you say that you were so excited to get going whith your tomatoes.
I love cooking to and i try to teach my granddaughter about the Italian side of the family.
All this long speach Gina that i have such a pleasure to see you singing and cooking. I recognize myself and my love for the Italian food and culture.

Those are the people looking for the perfect measurements, failing to understand that cooking is heart and soul, not mixes of 'ideal' proportions. How much cheese? 'That much, plus a little more'.
I couldn't agree more. The folks that dislike this video have serious problems in their heads & their hearts. She's a sweet beautiful lady who can teach us all how we could have a better disposition and attitude in this life.
When cooking an Italian dish on UA-cam, there are always people who have to chime in and say that's not how their Italian grandmother made it and be very insulting. What we have here is an genuine Italian grandmother making a delightful dish, so all they are left with is an anonymous downvote. This food looks great.

My husband’s favorite. During our first trip to Italy in the 1980’s, he ordered it and never looked back! Now we have a home there and he can’t get enough. Good quality ingredients are key. Nonna knows that!

ANY pasta carbonara is one of my absolute favorite dishes and it's the first thing I look for when I go to a new Italian restaurant. What was so endearing, is how nervous and uncomfortable she was at the end, because she doesn't realize that she just gave a master class on how Carbonara should be done.
I hope her family cherishes who she is and what she does, because there are very few that can do it the way that she does.
The fact that she mentioned not being able to find pork cheek instead of Pancetta sealed it for me. She's a treasure

I make this the old standard way with the pig cheek. But pancetta is fine. I also heat the eggs separately and use a thermometer. I like heating the eggs to 130 degrees F. After that I add it to the hot pasta in a separate room temperature bowl to make absolute sure the eggs don’t over cook.
My daughter showed me this channel and I am so happy to watch you, your cooking and singing. What a wonderful soul you are. My grandfather immigrated as a child from italy in early 1900's. His family came through Ellis Island then in to New Orleans. Even though he was so young he still had an Italian accent in his 70's. I miss him very much ashe was such a joyful soul. Gina reminds me of him a bit. His mother taught his wife how to cook. I sure miss her food for sure. This dish looks delicous. I will have to try. My grandfather was from Polermo. I think that is how it is spelled. I always wanted to go but never made it. I am 61 now and have cancer so I will not make it inthis lifetime.

Put pancetta in the freezer for few minutes before cutting, it goes easier.

I just LOVE the songs that Gina sings! I would be interested in knowing if any of her children and/or grandchildren went into Music! I am an old 69 year old Elementary Music teacher, but when young, I sang in several regional Opera companies ( not a star, just a participant singer!- and taught voice and piano lessons). Gina is such a precious person, great cook, and wonderful singer! Every song is heartfelt as it comes directly from her heart.
