- BAKED ZITI (Pasta al Forno):
Olive Oil
1 small Yellow Onion, chopped
2 cloves Garlic, halved
2 lbs Ground Beef
2 qts Tomato Puree
2 tsp Basil, dried
Salt and Pepper to taste
1 lb Rigatoni Pasta or Ziti or whatever pasta you like
1 cup Sweet Peas, 4 oz. frozen
3 Boiled Eggs
1-2 cups (approx.) Grated Pecorino Romano Cheese
1½ lbs Whole Milk Mozzarella Cheese

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

I cooked the recipe just like she did, using Parmesan cheese (I'm not sure why the description shows Romano). But it came out tasting fantastic. I'm thinking that those dislikers are people who may have been taught to make it a different way by their Nonnas.

Whenever I diet (and I need to now - just got back from Disney where I stuffed my face for a week!), I make pasta dishes, but I put my portion in a tea cup and make it a side dish. Good luck with your diet - I know it's hard. Wish me luck too!!!

My nana is 92 and you remind me so much of her. She allowed me in the kitchen ONLY TO WATCH!! NEVER TO ACTUALLY COOK. LOL. although I knew her recipes i never turned on a stove or oven until I was 19 and newly married. I have to say my 1st year of marriage i lived and learned!! Also i burned alot of meals. Italian grandmothers are the BEST. My nana nursed me back to health after my surgery from pancreatic cancer. I was 46, and nana 87. My insurance company wanted me to go to nursing home for 8 weeks and my nana said no way!! Wishing you the best from Chicago.

When you speak, for those minutes I hear the voice and words of my Nana Maria, and I never thought I would hear her voice again. (She was born in southern Italy). I lost my dear grandmother years ago, but I feel her presence and hear her voice when I see your videos. That is the very special gift you give to me, and I am so grateful to you and your family for your videos. My dad was an Italian tenor, and he sang many of the songs you sing in your videos. My grandma moved in the same way as Gina does. Her hands etc.
Now we are all over in Europe and US. I am in France, some of us in Germany, some in Belgium and Boston. This makes the memorys even stronger. Everybody far from italy but keeping the culture!

Gramma you make me cry. Today is the 22nd anniversary of my mother’s passing. I remember her dancing and singing that song, as part of the Holy Ghost Church. We are part of the Portuguese immigrants that came to Hawaii to work the pineapple and sugar cane fields. Tomorrow is my birthday. I will be 69 years. I never appreciated my mother but tonight I ask her forgiveness and hope to see her again. Thank you Gina for making this day extremely special. God bless you. Thank you for sharing your gifts. My Gramma died in 1978... her funeral was over right as the big blizzard started. Not a day goes by that I don’t think of her. Watching you transports me back into her kitchen, her home. She was always happy cooking, washing, cleaning, ironing. Yes she was! She said it was because she was SO grateful to have food to cook, clothes for her children, and a home to keep them safe and warm. Gramma grew up in the cool yards outside of Boston and was very very poor. Even when she had cancer she never complained. She was like an Irish Gina: a joyful and grateful spirit. 🌹

Oh! Nona Gina, I just love you! You make this just like my beloved Aunt Mary Giordano used to. As a young Child, my job was to add the eggs and peas. I would always leave a spot with no egg because I didn't like eggs. I was the youngest of the Kids. My cousins told me if I eat eggs I would lay an egg. What?!?! I’ve never seen baked pasta like this, only ever with just cheese and sauce, maybe a meat but never with egg and peas. I know what I’m making for lunch now... Gina, you are a treasure!
Update: I made this... only used one egg but everything else was the same. It’s coming out of the oven in 5 minutes and I can barely stand how unbelievable it smells. I’ve checked on it 3 times and each time it’s looking (and smelling) more and more amazing.
It’s sooo goood. I’m stuffed but I want to eat the entire pan. I held back on the mozzarella, only used 1 ball of fresh for the whole dish and really that mozzarella makes this whole thing come together to sing like Gina. (I wish I had used as much as she did)

I literally watch her EVERY SINGLE DAY! She reminds me of my Nonna and it brings back sooooooo many memories. I just love love love hearing her voice, watch her make food and see her gentle smile. I miss my Nonna very much. She is a gentle reminder that even though my Nonna is gone, she is never forgotten. Gina isn’t my blood family, but she feels like family to me.
