Vegetarian Polish Tomato Soup l Zupa Pomidorowa

My husband is half Polish so this soup is a staple in our household. Creamy tomato soup that is served with pasta or rice. It is a very Eastern European recipe and every family has a recipe of their own. Don't forget to make grilled cheese sandwich as the experience wouldn't be complete without it :)
INGREDIENTS
1 TBSP OLIVE OIL
- 1 SMALL CARROT, DICED
- 1/2 ONION, DICED
- 2 STALKS CELERY, CUT INTO TWO INCH PIECES
- 1 SMALL CAN DICED TOMATOES
- 14 OZ CAN DICED TOMATOES

- 3 CUPS VEGETABLE BROTH
- 2 CLOVES GARLIC, MINCED
- SMALL BUNCH OF PARSLEY
1/4 CUP SOUR CREAM OR GREEK YOGURT
- SALT AND PEPPER TO TASTE
- BOILED WHITE RICE OR PASTA FOR SERVING

At the very end when you serve it. Put as much rice as you would like and then pour the soup. Enjoy!
