  • Team - Let me take a bit of the sweet tooth pressure off your shoulders with this classic fool proof grilled key lime pie! The perfect sweet and tart finish to accentuate any romantic evening or exhilarating morning bite to begin your day.

    Grilled Key Lime Pie
    Ingredients
    2 9-inch Graham Cracker Pie Crusts
    3 14-oz Cans Sweetened Condensed Milk
    9 Egg Yolks
    1 1/2 Cups Nellie & Joe’s Key West Lime Juice
    Garnish
    Bourbon Whiskey Whipped Cream (See Below)
    Lime Zest
    Thin Lime Slices
    Instructions
    1. Stabilize your Kamado Joe at 325 - 350F degrees. Set up your Kamado Joe for an indirect cook by placing deflector shields and setting your grill grates to the top level of the Divide and Conquer system.
    2. Combine sweetened condensed milk and egg yolks. Whip until fully incorporated, then slowly pour in Key West Lime Juice while continuing to whip. Once juice is incorporated, set aside.
    3. Pour filling into pie crusts and place pies on your Kamado Joe and bake for 15 minutes. Allow to stand 10 minutes before refrigerating. Refrigerate until cool and set in the center, preferably overnight.
    4. Top with fresh whipped cream, lime zest and lime slices. Enjoy!
    Bourbon Whiskey Whipped Cream Recipe
    Ingredients
    1 ½ Cups Cold Heavy Cream
    3 Tbsp Powdered Sugar
    1/2 tsp Pure Vanilla Extract
    2 tsp Bourbon
    Instructions
    1. In a mixing bowl, pour in your heavy cream. Whip vigorously to incorporate air.
    2. When you reach a soft peak, add your sugar bourbon and vanilla extract. 3. Continue to whisk until you reach a stiff peak.

    So this reminded me of the time my Wife and I came to your restaurant in Raleigh and had your Key Lime pie. The only difference is when you put my Wife’s Aniversary Diamond ring on top as a GARNISH. She wears it every day. Thanks for doing that for us Robert

    Quick question. Can you use the same method making a chocolate custard pie?
    I absolutely love Key Lime Pie, I followed this recipe and it’s SUPER delicious. but I get horrible heart burn from it.

    This was awesome Chef, the family loved it. A couple mentioned the outer edge was a little extra charcoal flavored/smokey. Sounds like it was from the crust, any recommendations on a way to avoid that? Thanks again!

      Possibly use less charcoal to attain the same temperature. You will have a cleaner burn due to better airflow.
      You could also let your grill get hot for an hour. Stabilize allow the coal to mostly burn away then use the residual heat of the ceramic to cook the pie and still get the benefits of the kj
