- 40 day tequila lime dry aged ribeye. After successful dry age experiments using wine & whiskey, it was time to incorporate a fresh ingredient. Lime zest combined with tequila immediately came to mind, and I’m ecstatic that I gave it a shot.
My concern was that the zest would start to rot, amazingly it not only dried out perfectly, but the flavors penetrated deeply. Even after cutting away the bark, we were left with a citrusy, sweet, and earthy final product.
This has opened my mind to all the possibilities in the world of dry aging. Coffee, chocolate, black truffles? Everything is on the table!

I came across a video talking about how medium rare(or just pink steak in general) is not the right way to cook steak because it’s pink and it’s bleeding and that well done is the right way. I need help from someone with more experience than me to prove them wrong.

@@quacksun5959 the right way is Medium or pink. Im working at a meat factory and cock It at least once a week. If u do it well done u will get a Tough Steak thats still Juicy. But Medium or Medium rare is the right way for Taste and juicyness

Lmao this steak reminds me of the kelp juice episode from spongebob where everyone drank the trendy drink kelp juice, that outrun the sales of the krusty krab, so they all decided to drink it (spongebob, plankton and mr krabs) and a side effect was everyone turning into these green hairy gorilla looking fish. No hate btw, it just triggered my memory of it and as always keep up the experiments Max

i wonder if the tequila added a bitter taste to the steak at all? sous vide everything (or maybe guga foods not sure which channel) did an alcohol experiment and found that it turned the steaks bitter.

I wish you to stop supporting the murder and cruelty of the meat industry, you don't have to stop cooking plenty of plant- based alternatives. You can show some compassion towards animals.
Nice, except for the fact that most (if not all) plant-based meat substitutes are exorbitantly overpriced by corporate producers that deal just as much environmental harm as the meat industry does. Veganism isn't any more righteous than a meat-inclusive diet if it's privatized.
