    Shrimp Cocktail
    Ingredients:
    1 Pound 21/25 Shrimp, Deveined, Shell On
    1 Tablespoon Olive oil
    Poaching Liquid
    1 Each Shallot, Rough Chop
    2 cloves Garlic, Rough Chop
    2 Leaves Bay leaf
    5 Each Black Pepper Corns
    ¾ Cup White Wine
    4 Cups Water
    ½ Cup Old Bay
    2 Cups Ice
    1 Leaf Bibb Lettuce, Sliced
    ½ Cup Cocktail Sauce
    ½ Each Lemon Juiced
    1 teaspoon Old Bay
    Method:
    1. Stabilize your grill at 450F and set up for direct cooking.
    2. Peel shrimp shells and toast the shells on the grill grate over the flame. Transfer to a pot and bring all Poaching liquid ingredients to a simmer.
    3. Add Shrimp and cook for 3 to 5 minutes. Pour some of the cooking liquid into the ice then shock the shrimp in the cooled poaching liquid ice bath. Once cooled and ready to serve, squeeze a bit of lemon juice over the top of the shrimp and sprinkle with a bit of old bay. Serve as seen in video.
    Tequila Citrus Cocktail Sauce
    ½ Cup Chili Sauce
    ½ Cup Ketchup
    2 Tablespoons Horseradish
    1 Tablespoon Tequila
    1 Each Lemon Zested
    1 Each Lime Zested
    ½ Each Orange Zest
    Cocktail Sauce Method:
    1. Combine all ingredients into a bowl and whip to fully incorporate. Reserve for later use.
