Great video!! We have to take dinner with us a couple days a week due to my kids activities and church. I have been doing pasta salad, fruit and chef salads.
Batch cooking saves me. I’m looking forward to this series. One thing I do is roast up a tray of veg on the days off and eat it for sides for several days. I’ve started making a starch like noodles with veg or baked potatoes and I can alter the meat and veg I put with it on different days. That works for me because I’m just one person and if I make chicken soup or Korean beef it lasts me for days. (I usually have to freeze a few portions)!
When you shred your chicken and cook your ground beef. Could you set aside enough for a sandwich? I like to saute diced onions and bell pepper w ground beef and make a mock pepper steak sandwich w some cheese. (usually queso Blanco or provolone, though whatever works for you.) It could give you something different on one day. Put some bbq w the chicken or change it to mood. I have sloppy Joe mix froze in 4 sandwich serving increments. I work a busy varied shift schedule. So this can help. I take 2 lunches and multiple snacks each work day. (Ok Incase I work an eye extra shift. If someone calls off, they ask people to pickup the shift. I take the meal I don't eat the next day. I also keep a couple frozen meals at work too.)
I am happy for you that you got a job that works out fine for you, that you can drive together. I had a wonderful job last year, also at a friends bussines. I loved working there. Sadly she got health problems and had to close and now I am back home again. I live in the countryside in Germany and it is so hard to find another job that matches for me and my family
I have a jar of home canned soup everyday for lunch. I need something hot and a fair amount of protein so it works well. There are lots of kinds of soup so it takes a while to get bored with it, plus it's cheaper and more protein than store bought!
Buy some divided containers that you can fill with leftovers for your lunches. They can be easily reheated in the microwave at your new job. Congrats, by the way, on your new job!
I am like Rick with breakfast. I don't eat until after noon, only coffee before, but I'm like you with the sandwiches. They get old quickly!!

There is no microwave available for us. Cold lunches only 😞
@The Bealles I bought a 20oz crock pot food warmer that is awesome...just plug it in! Doesn't cook, just heats up the food.
