I’m not sure if you know but that 28 in spoonbill you threw back could have been kept...here in Missouri and especially at Bagnell Dam/Osage River in the ozarks 24 inches is the minimum...not including the bill.
The hooks are above the weight so the weight hits the bottom before the hooks do so you know you close to the bottom. you will still get snagged on the bottom here and there though
David Pemberton paddlefish are micro filter feeding fish they do not bite hooks or eat bait we have a short 45 day season limit is only two fish the only way to “catch” a paddlefish is to snag them.

What does the meat taste like and do you ever get any eggs/caviar?
the meat is very delicious taste like catfish. but the meat is way more dense like chicken
How do you not snag all the random logs rocks and crap at the bottom and lose your gear every cast?

That isn't sporting, it's known as foul-hooking for real anglers.
