Ingredients Required For Making Chicken Bhuna Masala -
* 1.3 kg/ 3 lb chicken with bones
* 30 gm/ 1 oz ginger
* 30 gm / 1 oz/ 1 whole head of garlic. Please use less if you want it to be less garlicky.
* 90 gm/ 3 oz / 1 medium red ripe tomato
* 420 gm/ 15 oz/ 2 very large or 4 to 5 medium onions
* 1 dry bay leaf
* 2 inch length cinnamon stick/cassia bark
* 3 green cardamoms
* 1 black cardamom (optional)
* 5 cloves (discard the seeds)
* 200 gm/ 7 oz/ 3/4th cup plain unflavored yogurt. Please take out yogurt from refrigerator at least 30 minutes before cooking.
* 1 teaspoon turmeric powder
* 2 teaspoons Kashmiri red chilli powder
* 1 tablespoon ground coriander (dhania powder)
* 1/4 th teaspoon freshly crushed black pepper. Add less if like it to be mild
* About a teaspoon of salt distributed throughout the cooking process
* 1 teaspoon sugar (optional)
* 1 dried red chilli deseeded (optional)
* 2 whole green fresh chillies (optional)
* 1 teaspoon Shahi garam masala powder or regular garam masala powder. Please click link below if you want to make homemade shahi garam masala -

* 1 teaspoon dried fenugreek leaves (kasoori methi) - Optional
* Chopped coriander leaves (cilantro)
* I used a total of 1 & 1/4 th cup water. Please use hot water for cooking.
* 2 tablespoons oil
* 3 tablespoons melted ghee
For marination -
* 1 teaspoon salt
* 1/2 teaspoon turmeric powder
* 1 teaspoon oil
* 1/2 tablespoon plain unflavored yogurt

This looks amazing, definitely next on my list! I missed good Indian food so much since I left the UK, there are virtually no restaurants here and I didn't want to have to resort to jar sauce. This channel has been a lifesaver to help learn how to cook amazing Indian food, the Keema Matar and Aloo Gobi are real favourites and I'm pretty sure this will be too! Don't worry about the small faults like you mentioned - I wouldn't have noticed and it's clear enough anyway! You're not only cooking this amazing food but also narrating, filming and editing everything, how many of us could do that? Out of so many channels for Indian food, this one is by far my favourite - you make everything look so much easier, it's so accessible, and the end results are phenomenal! Thank you once again!!!!

This is simply DIVINE!!! I had some left-over cooked cauliflower and potatoes and added that at the end just to heat through and it was (according to my partner) the best meal we've ever made! Couldn't live without this channel as we both adore Indian cuisine and cooking it at home is the best. Wish Bumbi was my Aunt!!!!

I made this today - I followed the video, even though there appears to be quite a few steps it’s very straightforward and easy to cook. Super nice, Bumbi. I prefer with lots of gravy, but less heat, that is how I made this dish. I used to eat fiery spicy, but that has gone away with age. Now I even sweat just watching a cooking clip! How can that be? Well, thank you as always, this is a great dish.

My favorite is mums paprika chicken frim a microwave cooking book.
Coat chicken in 1cup flour 2tsp madras curry powder; 3tbsp paprika; tbsp garlic salt. Coat with butter and coat in flour mix.
Wait till it goes sticky and coat again.
Wait till it goes sticky; spray with oil and bake.
As kids it was microwave for 3 mins(too long).

So, I'm in a prolonged diet. I have lost over 30 kilograms in 12 mths. I'm thriving at 53. I have 25 kg to get to a respectable Western weight of 100kg.
My day starts w F&V juice, then a piece of fruit. Later, a salad sandwich, then nightime, I address the stove. Lentil soup, vege redbean concarne or veg or chicken curry or stir fry. There are so many ways to enjoy a healthy diet and still be able to savour awesome flavour.
I EAT BETTER DIETING THAN I EVER DID OVEREATING THAT GAWD AWFUL PREPACKED C-RAP MADE BYBIG FOOD.
Soon I move, and I'm gonna start a video channel to allow my energy an escape.

I always make it the day before and it gets better and better in taste. Heat it in the microwave or over a very low heat on stove top and stir it from time to time. Can also sprinkle some water if the chicken looks too dry.

Bumbi, could you do a video on Eggplant Curry? The family of a patient I had some time ago made eggplant curry, I tasted it and immediately loved it upon the first bite. I have been searching for a recipe for it, and so far have been unsuccessful.

The spoken directions and video are perfectly clear. The written recipe says to add 5 cloves and discard the seeds. Clove seeds? Is this a typo? thanks!
By seed I meant the central round bulb in a clove. It sometimes tends to have a bitter taste.

Hi Bumbi, you mention 5 cloves in the written recipe and to remove inner seeds. Can you clarify? Did you mean the cardamom seeds? Thx.
Hi, cloves have a round seed just at the center. Please discard that as it may make the curry bitter
I certainly will cook this one...I totally agree never take chicken breast, I always use thights with bone. I am always looking for original indian, thai etc. receipes which is not always easy, because content creators often "simplify" receipes beforehand because they deem some ingredients/spices hart to get in america/europe. I do not have this problem with my store of some 50 spices and a greenhouse...all spices are some kind "optional" in most dishes, but in this case the black cardamom has a distinct smoky flavour, there is something missing if it is not added. So good you not simply omittet it. Or the Cashmiri red chillies, here I agree for using other chillies/paprika, in other dishes you really need the intense red color...
So please in the first hand provide the receipes like you would cook it in india. Leaving out/replacing some things is always possible....
Here I possibly would reduce the garlic alot not to be a nuissance for others next day ;-)

What is shown but not sayed: one should strip the skin from the chicken to allow the marinade to seep in. If you user butter als replacement for ghee (pure butter fat) look to have not to high temperature, else the protains still contained in it will burn. as Usually I modified by using honey and caramelize the onions whit it, adding some mace flower ...

What kind of bay leaf is that. I can only find the small ones here in the states.
It is Indian Bayleaf that you will be getting only at Indian grocery stores. Use any bayleaves that are readily available at your store.
