      I particularly enjoyed the mushroom growing expert explaining everything like im a complete moron and continually explaining how i simply cant comprehend a mushroom... personally i think our man has had too many mushrooms! But i digress.. the rest was fantastic

    got a pink oyster block for Christmas, and it fruited probably 3 lbs of beautiful mushies, that were delicious. Stuck the block on top of the fridge with a small light on it, and time lapsed it with a go pro, really cool to watch, but def the easiest and one of the most rewarding growing experiences I've ever had.

      It's way more common than you think in the food industry, especially for produce, most people use waxed cardboard.

      The use of plastic isn’t really an environmental issue, mushrooms when not used instantly should be stored in brown paper bags to ensure freshness

      No, we have the language for it, human language, the only language we have. And we have an entire discipline called Mycology where hundreds of thousands of people can explain exactly how mycelium works. Pick up any mycology book and the explanation is right there.

      @@youssefrochdi1994 Right, and he specifically is saying that phrases like "mycelium digesting substrate" or calling the top part the 'fruiting body', both terms found in those books, aren't exactly the best words for it but they are words used to describe other plants and animals behaviors and mechanisms, and that the more this study progresses the more these words seem incorrect because of how these mushrooms actually behave. He's saying that these words were made to describe other things and miss the mark. Its like how cognitive science used to describe our brains as computers and now that's considered a reductive analogy, hes kind of saying the same thing but about the aforementioned phrases and mushrooms.

      I just got some oyster mushroom grain spawn and dropped it in a bag with some cooked cardboard and rice. And that's how I got started. It's really fun, it works well and you get really tasty mushrooms. Only downside is that it takes some time. It's relatively cheap though. Like 5 euros for the grain spawn, that you can use for a ton of batches, and then some for plastic containers and rice.

      Their cells 'walls' are made of chitin, whereas plants have cellulose. This means that mushrooms don't release their water as easily like other vegetables. This might be what he meant \(O.o)/

    Very fascinating how something as simple as mushroom cultivation gets upscaled in areas with higher cost of living. In South East Asia, you'll see farms that are 10-100x larger and denser that these "laboratories". I'm not sure about the unit economics of this NYC branch, but I'm willing to bet a kilogram of their mushrooms costs considerably more than a kilogram of mushrooms in less developed countries, not only because of the difference in cost of operations, but also because of marketing.

      @@olewetdog6254 old comment but I work in a similar type of company, chances are they run at a loss but are being bankrolled by a much larger corporation due to the fact that the technology is much more valuable than the company, so chances are they are still waiting for an in-house breakthrough before they start pushing for store sales or even mass marketing.

    This guy should take a trip to Yunnan, China to discover more varieties of mushroom. Yunnan is home to 1/3 of world's mushroom species. He will find lots of treasures there.

    Seeing the wide variety of shapes, textures, and colors in mushrooms makes me wish that the US's general grocery stores had more diversity with their produce. Your best bet otherwise is to wait for farmers' markets to open... provided there are any in your area.

      Unfortunately farmers markets are becoming scams too people just go to grocer suppliers cut the middle man and over price normal grocery food , hoping to some day have my own hard working mushroom stall at the local farmers market

    Mushrooms are amazing and unrated. They really are so good. I underestimated them and I agree they are a great replacer for meat. Not that I dont like meat I love it, but replacing my diet with more mushrooms and lentils has done wonders for me. Meat is more of a of a once or twice a week things for me now.

      You can buy the spawns and grow them yourself. It's a fun hobby. You can buy a mushroom grow kit if you want something easier.

      Amazing mushrooms are all around you in Florida walk into the woods after a rain.
      You get to learn about them and see which ones are ok to eat or which ones will make you trip or which ones make you sick. I find it fun

    Old skyscrapers retrofitted to be mushroom farms would probably be able to grow a lot. The only issue is transporting all the materials for the substrate in.

    Have these guys figured out how to cultivate Morel mushrooms? I heard some where in Japan they have but I am still having to search mine out in wildfire areas and other areas I've known them to grow. I've tried a few different things to get them to grow around my house but no luck yet.

      Different strains look different. Some have longer teeth than others. Low C02 causes longer teeth.

    That mushroom dish looks delicious. I went to Di and Di's website, but unfortunately it looks to be off their menu at the moment. I love trumpet mushrooms.

    My ex-gf hated mushrooms until one day I snuck some oyster mushrooms on her steak in a red wine reduction sauce. She was like this steak has a weird texture. I asked her if was bad. She just said no, that it just a different texture. I told her it wasn’t part of the steak, and that she was actually eating a mushroom. She was so surprised because it tasted like the steak. She thought all mushrooms had the same slimy texture. She became a fan of trumpet mushrooms after that. Too bad most grocery stores don’t carry them. I usually find them at farmer’s markets.

    The lighting looks like 6000 Kelvin. Do they prefer(mushrooms) the blue 450nm spectrum over higher red's? That would be strange to me. Most photons in a canopy that hit the ground are green and red. The blue is the fastest absorbed by the leaf canopy.

    mushrooms!!! I wish this was in my area, there aren't any local mushroom providers for some variety besides bella, whites, and the odd portabella or shitake. I love mushrooms, they have such good flavor and texture!

      Some markets also carry packaged dried mushrooms which can be quite good. I sometimes use them in pasta
