    To shorten the boiling process I strain my tomato pulp thru a polyester paint strainer bag which removes about half the water, more if you squeeze the bag. I got mine at a paint store (SW) and ran them thru a quick wash with hot water to remove any fuzz or debris. I use a 5 gallon bag wrapped around my large bowl and squeeze the pulp directly into the bowl/bag combo. When I lift it out to transfer it to the cook pot, most of the water stays behind. They rinse out nicely if your turn them inside out and hose them down outside or spray them off in the sink. The bags are sturdy and have an elastic top. I wash them at the end of the session.

    Love this video. I have always done a water bath for my tomato. I just bought a 6qt nuwave instant pot. Can't wait to try it out. Very helpful video.

    Thank you so much for this video. I am a beginner so this helped me. I used the water bath method. I do have an Instant pot and I had assumed that I could use that but it does not have the canning button feature. I guess I know what I will be asking for Christmas. Thanks again.

    Wow wow wow! Mind blown!!! I never knew Instant Pot made a pressure canner!!!! Woah!!!! Game changer!!!! I gotta put that on my Santa list lol. Thanks again for your thoroughness and letting us see all the details of everything, especially the pulsing of the canners and stuff. Would have freaked me out. You're an excellent teacher!

    I will never understand the rule to use Citric Acid when PRESSURE Canning tomatoes. To me it tastes like crap. But peppers, etc. - no problem! Bonus points for using red tomatoes or those leaning strongly to acid level as it is! Why didn’t you Pressure can them in the max to avoid the Citric?

      Good question, i usually make like 20 quarts at a time and it would take me forever to pressure can them in pints. I can get alot in my stock pots.

    Since waterbath is only at 212 degrees, can you set timer for less time since it takes a while to get back down to 212 afterwards?
    I’m trying to figure out how to water bath can in the Max. But all I know how to do is pressure can in it. Not how to boil water. And my manual is missing!

    I'm really enjoying your videos! You mentioned not being in the mountains, and being under 2,000 feet so you don't have to worry about altitude. I'm in the process of moving as I type this, and my new location will be around 1500 feet elevation. Do I need to worry about the altitude?

      You should not have to worry anything under 2,000 ft you should not have to adjust anything to can. Once you get over 2,000 ft you have to adjust because water boils at a lower temperature.

    Just curious how you came up with the 15 mins on the instant pot for the tomatoes?

      Hello Nusar, so I just went off the guideline in my ball preserving cookbook. If you feel more comfortable I would run them as long as a hot water bath 35 for pints and 45 for quartz. Extra time in the tomatoes will not hurt them one bit and will give you more of a piece of mind. Since I grow my own tomatoes and know the acid level, and also added the citric acid I feel comfortable with the 15 minutes on low. You can always kick it to max for 15 minutes as well.

      This will be my first time canning and I have been reading and watching lots of videos. I will be using the instant pot Max. I know there is a lot of worry because it hasn’t been approved for canning but I use my instant pot for everything and I love it! Seeing your videos make a little more confident in going for it.
      I’m reading the USDA complete guide to home canning and maybe you can help me with times for a low acid food like corn.
      It says for a pint 55 mins for a dial gauge pressure canner. If used my instant pot max for corn I would have the setting on high (since it’s low acid), and should I use the same time they have - 55 mins?
      Thanks in advance.
      If instant pot goes through an approval process and has a complete guide on times, that’s going to be a game changer, especially if they have a bigger model!

    Weather on the Oregon coast is not the best for growing tomatoes. If I get a can of crushed tomatoes restaurant size then do I just follow the rest of the steps?

    When you add water to the IPMax you said you like it 1/4 to 3/8” up the side. Is it up the side of the IP Max or the side of the canning jar? Thanks

    How long does your insta pot max take to depresserize?.. I just got one n only done a couple things and they were over cooked as it took a long time to depresserize.. thanks Mark

      If canning mine takes 1hour -1:15 on natural release. That helps stop siphoning of liquid from the jars if you did a different release.. I just get busy with other things. I also let them rest in the pot for 5-10 minutes after opening. I often hear the lids pop then. If I do hard boiled eggs it's a fast release, depends on the process or food. You will learn your preferred pressure cooking times for food as you use it. But if canning, no reducing specific time or natural release.

    Can you tell me how long the 4 jars were in the Max? And if you were just processing tomatoes, would you purchase the Max? Or just do the water bath?

      I put them on low for at least 15 minutes. I also run them sometimes just as long as I would a hot water bath. 35 for pints 45 for quarts. No, if I was just doing tomatoes I would just hot water bath. Just make sure you are using your citric acid.

      Yes only pints, I believe the presto brand holds quarts. I Like the pints, better for my family size.

      It should be fine typically you do it for 5 minutes in hot water bath, but having that extra pressure it should be fine, too much time in it could ruin your pectin and then it wouldn't set.

      Hi Alisa, it is so when you are boiling your jars you do not get a white water residue on them.

    Does your canning stockpot need to be stainless steel? Also, I noticed you did a set time, but people are always saying you're listening for your lids to pop. Is that 35 or 45 minutes the amount of time it takes for the lids to pop/seal?

      Hello Nicole,
      Yes I recommend a stainless steel pot, that way you can get a better even heat. Also your jars will not pop/seal while they are in the hot water bath. Once they cool down they will pop/seal and you will hear it.
