CANNING GREEN BEANS:
Stuff quarts full of washed and cut green beans ( we take off the stem end but leave the other one)
Add:
50-100 mg Zinc
1/2 to 1 TSP salt ( I use mineral salt)
fill jars with water up to the 'neck' of the jar, or 1" head space.
Pressure can for 20 minutes at 10lbs of pressure!
Thank you for sharing - my grandfather always said “if you have one boy, you have good help. If you have two boys, you have half the help and if you have three boys you have no help”. Hahaha! I laughed when I saw three boys standing around eating the beans and it reminded me of this saying.
This is so true and my grandma would say it too.
Oh, so somewhat true! I have 3 boys and they are great workers. When they are all in the mix it's more like a circus! Cheers all to the workers and fun makers!
😂
Your grandfather was so right! I had 4 boys in less than 5 years. (No, I wasn't trying for a girl).😅 We sure kept things hopping at our house. ❤
Lol well now it makes sense why my boys were never much help when they were all together 😂 Now that they nearly grown it’s getting a bit better 😉
I am 81 years young and have canned food all my life. I have to say I have learned more from watching you than I can believe.
Please don't sell yourself short honey. You make really great videos. I love following your family and the relationship you have with your kids. It is so nice to see parents actually teaching their kids the daily chores that they will eventually need to survive in this world. Keep doing what you are doing, and may God Bless you and your family.
I agree! These kinds of lessons/knowledge seems lost these days. So glad to see you passing it on to your children.
👋 Hello ! Thank you for sharing. Can you use zinc tablets with other vegetables?
The problem of today's society is that parents have stopped teaching their children how to think for themselves, be responsible, and be respectful. I personally think this makes you the most intelligent person in the room! That's why they're coming after us!! Keep up the good fight, sister!! GOD LOVES A WORKING MAN AND A NURTURING WOMAN!!
Problem is, my son I try to ask him to think for himself, but school isn't doing critical thinking and when I try at home, he doesn't have a thought in his head. But it might be that he's 13. No 13 year old boy has a good thought in their heads.
I have watched other youtubers but i always come back to your videos because of YOU. Your voice is so calm and your smile is so lovely that no one compares. I have watched almost all of your videos since I came across you a week ago. Your children are charming. I love the way you film your amazing farm. I feel like I am apart of your wonderful work.
we love you for what you ARE and how you present yourself!! we are tired of 'professional' and 'hypie' videos! you are so REAL and down to earth, your loving family, your practical suggestions. your faith (without forcing it!) you are a breath of fresh air! THANK YOU
Oh amen to this❤❤❤❤❤
Oh my dear.. as a person now in my 60s.. with great grandparents who were horse & buggy Mennonites (my grandparents were more progressive, then each generation after has become more secular. I know my generation who are still alive appreciate the Mennonite culture very much. The food especially.. lol.. 😊)
I love watching your lives.. very much reminds me of my own childhood..
Oh my.. did we very learn Very Important lessons about life, where food comes from & the human effort to grow that food.. many other lessons too..
I love the true reality of your videos ❤😊
Nothing gimicky but as a family really functions.. and I think you are doing an incredible job of giving your children a good grounding for when they become adults.. especially in this day & times..
God bless your family..
& thanks for sharing... 😊
Thank you. I did not know about the zinc. Don’t let anyone tell you that you do not “sound educated”. I am a Home Economics major and you immediately taught me something. I would rather learn from you than some of the You Tubers who think they know everything when it is so obvious they know nothing. Do what you are doing and feel GOOD about it and yourself. Thank you again.
😊😊😊
Thanks for telling us about the zinc. This will help so many families with the appearance of their green beans. We all enjoy watching your family work together.
God bless your family and your animals
I did the zinc tabs and you are right! The color is bright green compared to my other beans! This is spectacular!
What a beautiful country we’d have if every parent raised/taught their kids like y’all do. I was raised like this but unfortunately we didn’t raise my kids this way
Your boys ate a full meal of green beans during the process. I laughed seeing the puffed out cheeks stuffed with the string beans as they were stuffing the jars! 😂 When I was a girl, my mom used to sit me outside at the picnic table on a nice day to snap the beans for dinner. It always seemed like a mountain I would never be able to conquer. Unfortunately I didn't have a couple of siblings to help me. Everytime I buy string beans now, I think about those days. I'd gladly snap beans for her now. ❤ Thanks for sharing the technique for keeping canned beans green and triggering good memories. 😊😊
Glen parked up as soon as you held up the kale asking if that's what he wanted. You are a beautiful human being, all kids should be growing up like this. Too many distractions in the world today. Bless your family, and God bless you. I hope this comment finds your family well.❤🤍💙 🚜 ☀
Do not underestimate your content. I think some of the photography of your homestead is stunning. And you content is real. Love it!
I appreciate that!
I got so tickled watching the boys "help." I said Ruth has to grow lots of beans just so some will make it to the canner! 😂 Thanks for explaining your method with zinc! The opening scenes in the garden were gorgeous!
😍😍😍 thank you!!!!
Love your channel and context
Just started watching I’m a canner too grew up canning with my mom. I’m 66 years old and still learning new techniques about canning. I’m going to try the zink in my green beans the next time I’m canning them.
You’re blessed with lots of knowledge thank you for sharing and giving back to help people who want to learn more about whatever you have to share.
I have been binge watching since I found your channel. I love that all the kids are involved in the process. It’s great that kids understand where food comes from and how to preserve it.
I agree Ruthanne, your channel is great. Love to watch Harrison as he wants and needs your attention.
😊😅😂❤
The only reason I don’t can green beans is the color. Now I can can them up and freeing up freezer space will be so great! Thanks for starting this great tip.
We've been adding zinc to our green beans and pickles forever. In the old days, they put a zinc penny in the jars. A few years after they started making zinc vitamins, we started adding a zinc tablet to each jar. It makes the color great, but also keeps them a crisper.
Hi, I processed 8 pints of green bean last night and I accidentally put zinc capsule. It was what I had on hand. Is that going to mess anything up?
@@lms3847 I dont think so. I've never used a capsule, but I can't see how it could mess anything up. In the future though, open the capsules up, and dump the powder in. No need having that bit of gelatin in there.
@@BrendaBodwin Oh my thank you ! Didn't even think of that 🤦♀️
@@BrendaBodwin Silica is a drying agent inside capsules. Table salt has anticlumping chem in it. IDK if anticlumping agents and silica would be a problem in pressure canning. Time will tell. If it smells good should be okay.
@@smas3256 As I said, Ive been doing it for years. 35 years to be exact. Who said capsule? I said, tablet. Zinc tablet. No silica. Salt, not chemical compounds that taste salty. I only use sea salt.
We love Homesteading with the Zimmerman’s… the quality of footage, editing style and commentary is special on so many levels. Thank you for taking the time to share all you do.
🥰🥰 thank you so much!!!!!
God Bless you - I have discovered your channel and the most humblest person that you are. How wonderful that we have been blessed with someone as sweet as you to show us what my Father and Mother tried to teach us. "Live Simply to Simply Live" was there lifetime motto. Thank you for your channel. I have now been following you videos, canning and preserving for over 1 year and what a pleasure I have received for successfully achieving great results from following you. I am not very comfortable pressure canning but your water baths are what I follow. Maybe I will one day venture further.
Thank you. Many blessings and love.
It amazes me how much knowledge the Mennonite people have, I love learning from them, always very great information that I trust. Thank you for sharing.
Oh my goodness what a difference the zinc made. WOW! I'll be doing this next year for sure. Thank you!!
Your a superstar & wonderful role model to your kids

So nice to learn something new! I never knew zinc made the green beans brighter! Plus it’s good for you! Definitely going to add this next time I can green beans! Love your outdoor kitchen setup!
I just LOVE your channel! You are such a pleasant lady and a very good teacher. You get to the point and have a lot of great information that you share. I follow quite a few homesteading channels and you are one of my very favorites! I would watch you do anything, it's all great content.
I love your channel! You do a great job editing, but even if you didn’t I would watch you. You have a beautiful farm and your videos are so peaceful and calm, and you do a great job teaching how to do things. I’ve been canning for over 30 years, but I still learn things now and then that I didn’t know, and today was one of those days.
Well thank you for these words!!!! They are encouraging
Ditto. Me too! I’m excited to try this!
You are great . The kids are sweet and so polite . They are learning from the best .
Your videos are so refreshing and wholesome. I raised my daughter like you raise your kids and to this day she is smart, strong work ethic and very respectful to people. Kudos! Now about the zinc being added to your beans....GAME CHANGER! I'm telling everyone I know and they are as ecstatic as I am! Thanks you for providing such great content!
Our Mother had 7 Children in 8 years. Six years later I was born. The first 5 were Boys and the last 3 were girls. I was 6 years younger than my nearest Sister. I never really felt like one of them. It was okay I had pigs, dogs and Chickens as playmates! I'm still an animal lover. This was a great video. Our Mother raised us working along side of her. Our Father died when I was 10 months old. Our Mother raised us by herself.
Have you ever tried Leather Britches? So good!
GOD bless
Don’t ever put yourself down. Your channel is amazing and I love it.
You are a Beautiful person inside and out and I enjoy your videos so much! I am 60 yr.s old and still learning. Thank you for shearing your Knowledge

😍😍😍 laundry on the line brings me a feeling of peacefulness too
I loved seeing the laundry hanging out on the linef but my neighborhood doesn't allow clothes lines period. Wish I lived in the country somewhere.

Oh my Ruthann..I love your easy style with the camera….since I found u I go to u first!,
I love your videos! You always seem to show up with your authentic self. I appreciate you sharing your wisdom, garden and family with us so often!
Watching this reminds me of when I was a kid, preserving with my Peralta and family, I'm the youngest of 13 siblings, and at 57 starting to share with my adult kids the joy of making you own food. Thanks and looking forward to your next video. Shalom
I make pickled green beans every year but have never canned plain green beans precisely due to the discoloration. Thanks for the zinc tip…this will be so helpful
Just saw your video on water canning Tomato Sauce. I t brought back so many memories of my family's much younger days. My father brought a 55 gallon metal drum. He cut it into 2. in one half he cut out a nice size hole about three thirds up. Followed by cutting rebar black steal. Then in the other half he set on top and filled it about half way with water making sure the water would be over the top of the jars. He started a fire in the bottom. Mother had 50 are so can jars full of green beans to can. Dad toke 24 bottoms, put them in the warming water. once the water started to bowl he keep the water bowling for 3 hours. Let it set over night to cool. Never again did they have problems of not sealing jars . Mom always said it was her bowling the leads right before use. I think it was a little of bother. the some of ever thing were used until recently. God be With.
this is awesome! i remember doing the same process with my great grandma and my grandma every summer.
I will be adding the zinc this year and growing more GREEN beans for canning. Thanks so much.

I wanted to say thank you for this amazing channel! I love how you give information about your mum & grandma on baking and cooking! Mine did the same. I just am so much more thankful that you talk about the canning & gardening, as neither my mum or gramma did them. I have sheets wanted to live in a farm, I have chickens, ducks & a mini horse. Plus 3 dogs lol. Thank you for helping me with my canning.
