  • In this video, Mr. Cast Iron talks about beef tallow. Can you season cast iron with beef tallow? Yes, you can, and I use it to season my cast iron and to cook with it as well. It does an excellent job for both, but it amazes me how well the seasoning turns out just from cooking it alone.

    I only use beef tallow on my cast iron. Oils are processed, even olive oil, so tallow is the healthiest and most natural seasoning to use. Yes, I use old tallow from cooking to season my pans, as I render my own lard that is highly prized for frying chicken etc. Thanks Mike for this video, it's rare to find a video that seasons with tallow. It's the healthiest thing for the body!

      Well, I appreciate that, and you're welcome too! I love the smell of it when I'm cooking with it, and it doesn't smoke up and overpower your kitchen when you are seasoning with it, either.

      Yes it does! Kind of earthly smell! I don’t know if she bought that or made it lol! So I don’t know what it’s made of! 🤣

    Excellent video! So what your saying is i can skip the curing process and just cook in it with fatty meat to start building up layers of seasoning? I have a pan that ended up sticky after a bad try with oil to cure it. I have beef tallow at home now. I already strip all the seasoning from this pan. Should I cure it first or should I just start cooking in it? I’m thinking that maybe it’s a good idea to cure it so the bottom will be seasoned as well.

    I also use coconut oil to cook with, but never tried to season with it, lol..have you? I know Teresa likes to cook with it too.

      Yes I have, not necessarily from scratch but adding layers through cooking.

    Before mass industrialization, vegetable and seed oils, everyone seasoned it with Tallow didnt they?

      Yeah or some form of animal fats.

    The only critique I've heard (via Cowboy Kent Rollins) is that your bacon grease or tallow seasonings can go rancid / start to smell if that cast iron isn't regularly used. I have lots of cast iron I rotate through, and while I save some bacon grease for flavoring, I use grapeseed oil or the various beeswax mixes in the tins for seasoning.

      Grandma used crisco for DECADES, and it worked GREAT….nothing went rancid, and yes, there were plenty that got used only infrequently…

      I would put Crisco in a different category vs say home collected bacon grease or tallow. At my last job before retirement, I worked a lot with vegetable oil processing. Most oils etc you find at the store have been processed by going thru refining, bleaching and deodorizing to remove misc stuff that can make oils / fats go bad.

    I bought a new lodge griddle and was only warming it on low med heat to apply oil for seasoning and it cracked out ? Can these not handle low med direct heat ? It wasn’t cold and I brought it up slowly?

      Wow. That’s crazy. They can definitely handle low and high heat. I’d be taking that back.

    Hey Mike! Great video. Thanks for answering this question for those of us who don't eat pork. This is another option for seasoning our cast iron. Would rendered chicken fat (schmaltz) work too? I realize any animal fat runs the risk of turning rancid if the cast iron isn't used regularly. THANKS FOR MAKING AND SHARING THESE VIDEOS!! SUBSCRIBED

      You’re welcome! Thank you, too! Yes, chicken fat or (schmaltz) can be used instead of pork. I don’t know the smoke point off-hand, but it’s definitely another option! Thanks for sharing your thoughts and suggestions with us, my friend!

    What's the difference between processed beef tallow and plain old beef suet?

      Hey Mark! Great question. Tallow is rendered or cooked down fat and suet is the fat that comes from around the cows organs.

    from what i learned from excess oil in cast iron is it makes the iron feel tacky, if that makes sense?

      Yesserreebob. Too much and it actually turns to glue. I have one Dutch oven that I stored improperly
      with the lid on, that to this day I can pick the whole thing up by the lid handle alone. It is stuck!!!
