You make it all look so easy! I love it! The last time i made my own bread, the kitchen looked like an explosion in a flour mill, and the bread looked... rustic, to put it politely, though it tasted ok, and no one actually died.
I was a private superyacht chef, and these videos take me back. It is an astoundingly high pressure and amazing career full of blessings, challenges and stories. Enjoy every moment!

What an amazing breakfast. It all looks so yummy that I’d want to try everything I wouldn’t b able to eat anything else for the rest of the day tho lol. I imagine the smell of fresh baked bread will give guests a great appetite. You do a great job in such a small kitchen. 💕🤗
Looks nice! A suggestion for a nice bread: Eastern european style rye bread with scalded rye (rye, malted rye, potato, bit of cacao, maybe a some cumin), with poolish and a bit of sour dough starter for the fermentation. Doesn't require many folds at all, maybe just one or two. Baked in a tin. Spray with water frequently during the bake for a soft crust. Dense but soft, and the potato makes it very moist. The malted rye (preferably dark roasted malted rye) makes it almost a bit beer-like flavour wise. Very shelf stable as well. Really good crust if your sear it a bit. Excellent with strong flavours like smoked salmon.

Making special fancy breakfast dishes for such special circumstances would be lots of fun, especially to hear the moans of delight from those enjoying the tastes and smells. Your kitchen must smell heavenly much of the time, so keep up the good work, and consider what I wrote earlier about doing videos with other chefs, either on yachts or fancy restaurants, helping them make their favorite dishes, fancy or not, whatever they especially enjoyed making, perhaps knowing how delighted the people would be, who would devour their dishes. Watching the time lapses of prep work is a favorite thing for me, since that actually has a lot to do with the perfection of the creations.
It stinks that you had to edit out a bunch of the stuff about the ship, but Its good to see some of the old videos again! I hope you can get a new gig on a new ship soon

I love sourdough bread, and I get fresh sourdough typically every week or two from a local market (it's on tomorrow's grocery list). I've entertained the idea of making my own, including creating my own starter. While this video gives some hints on some of the techniques of making a loaf of sourdough (and yours looks delicious!), while you're on shore, a video on some of the finer points of making a sourdough would be wonderful! I'd even love your points on using a regular baking pan versus a Dutch oven, which you mentioned in the video. All the best, and keep up the Good Work!

Baking bread, the final frontier for me in being a novice chef (or cook). I would need a lot or reading and patience before I can pull this off. I think I might like making Focaccia over Sourdough. Might be softer to eat as well. Plus being lactose intolerant I would need to be careful in the dairy ingredients I use if I want to eat the bread myself later! Great to see these videos coming back, Nina!!

I love breakfast so this is one of my favorite videos. She calls her sourdough Joanne. She says it is quite a bit of a process but I always hear her say, she is quite the princess.
Now I’m watching dairies. You make every thing so interesting. Your work is far from easy. The most I have fed while going to school been 1500 students and staff. While out ont my own volunteering the most has been 900 helping crew of four. When the fun is doing what you enjoy goes very fat.
