I have watched that segment of the video 50+ times during the editing process and I laughed every time he said that line. :D Jesper has spent 20 years of his life working with food and hospitality. He makes it looks so easy but it definitely takes a lot of hard work and sacrifices to get up at 03.00-04.00 AM and bake the bread. I think it is fair to charge whatever he is charging for the bread.

fascinating video, all that manual work required a lot of education from other bakers and chefs, I bet. This guy is on an admirable mission that is about more than just making as much money as possible. 18dkk = $2.70 US. In the US this would be considered an "artisanal" product and therefore people think they need to pay more. The bakeries around here (Madison, Wisconsin) would charge US $4.50 = 30 dkk for these types of bakery items. The Danish people should not complain.

The bakery is very busy and most Danish people understand that high quality products like this costs more than the processed stuff you can buy at the supermarket. It is very few people who complain. Very interesting information about the prices in US. I did not know that.

I totally agree. I think this is the way to go. Eat high quality food without chemicals and sugar. Jespers sourdough bread is definitely more healthy than all the processed bread in the supermarket.

They shut my village bakery down when the old oven was no longer compliant with safety regulations. I've never really recovered and that was the 1980's! I'd love to have a local bakery near me now. I have the Noma books. Good luck.

Denmark is amazing. I can highly recommend going here. Make sure you visit some time between May and September. It gets cold and dark in the winter here. :-)

It was great and inspiring, but I think that a perfectionist is a perfectionist in everything, so if you make good buns, it is worth learning to make not only tasty, but also good coffee, so latte art will help you.
Yes, it’s a stunning building! It used to be an old inn, but it has recently undergone a full renovation using high-end materials. The transformation is remarkable, and it looks absolutely beautiful now.

14:01 😂 18 Danish krone is equal to like $2 - $3. As an American, I would wholeheartedly pay that amount. Our bakeries would sell it for 35 - 50DKK, we get shitty big store fancy bread for that amount. Europeans are really lucky you get high-quality food products for good prices.
Haha. That is actually a very good point! To Danish people Dyrehaven is a big forest. But in reality it is actually more like a park or something like that. :D However the point is still the same. It is always a good idea to get out of the city and into nature.
I wanted to include some comments from guests in the video. Mads and Freja were just having breakfast at the bakery. Yes exactly as Jesper wrote. Just north of the city. It takes 40 minutes on a bike. You can also take the train or the bus. In a car it takes 15-20 min.

14:01 😂 18 Danish krone is equal to like $2 - $3. As an American, I would wholeheartedly pay that amount. Our bakeries would sell it for 35 - 50DKK, we get shitty big store fancy bread for that amount. Europeans are really lucky you get high-quality food products for good prices.

Haha. That is actually a very good point! To Danish people Dyrehaven is a big forest. But in reality it is actually more like a park or something like that. :D However the point is still the same. It is always a good idea to get out of the city and into nature.

Yes exactly as Jesper wrote. Just north of the city. It takes 40 minutes on a bike. You can also take the train or the bus. In a car it takes 15-20 min.
