Great video - I had this dish in a restaurant once, liked it so much I had a go myself - made up the recipe, which I now do regularly - almost identical to yours! Only difference, the restaurant added a few peas, I presume more for colour than taste, so I did too.

I have stopped buying chicken from supermarket and I get it from the local butcher it’s a bit more expensive but no water added and it seems to taste better

Great looking dish Ian I’m loving these meals that you and mand make with the rice cooked in with everything else cuz I’m hopeless at cooking boiled rice it always turns out like pudding lol I can’t get the carpenters song out of my head now either since seeing the name of this dish 😂Amanda xx
Hi Ian, I hate the water content it’s a rip off, my other half had just had inflammation to the the lower gut so can’t eat red processed meat, ham, white bread, pasta cheese etc so now has to be like Spanish food with with no cooking other than white meat, brown foods etc 🙄 could you do a meal with no processed red meat..? Or white pasta, rice etc… has to be all brown ughhhh or fish an not many things without salad or fresh fish or I’m happy to kick him out 🤣🤣🤣🤔
I looked it up about water in chicken,as I have never really noticed a problem,it said that water is not pumped into chickens,but they are cooled down in cold water baths,and naturally absorb some water that way,plus chickens are 79 percent water like us. Of course this is the answer for the US,and not the UK.I think if you sauté off half as much chicken at a time it will brown quickly without being dry,I personally think people cook chicken to much anyway. I notice on cooking channels when chicken is temperature probed the temp is always well over 80C rather than 74C,meaning it’s overcooked.I guess you don’t get andouille sausage in the UK for your jambalaya,I suppose chorizo would be a good substitute,though here I think either kielbasa,or Italian sausage would be the substitute. I never really liked foods from Louisiana,the trinity they use isn’t a taste I like,and I know it’s the celery in their recipes I don’t like,as the Latinos use red peppers,and onions,garlic,and tomatoes,and I love their foods, so really the only difference is Cajuns use celery in the trinity.😊

I’d suggest that you could try a Paella with brown rice/ wild rice and use rabbit for the meat for a change from chicken.
