Ian that was a really nice one, I don't have saffron will have to see how much it costs, may have to do without if it is expensive. looked really lovely though, I hope Mand did not mind the peppers, I dont like raw peppers Dave can eat them on salad but I cant but they may be ok cooked so much Thanks for another super dish Maggie

This looks so good Ian and very tasty I have to leave garlic out of my food but sure it’s nearly as good without and maybe a pinch of turmeric for colour as I don’t have any saffron but I love the idea of the rice cooking in with everything else I’m definitely going to do this thank you 👌Amanda xx
Wowow!! Ian this looks incredible, you can almost smell the aroma through the screen. I've got to agree with Mands, peppers need to be soft rather than crunchy! You're quickly becoming a top chef, mate. I'd love for you to try and cook up 'Butter Egg Floss Prawns' or 'Chicken Kapitan'. Both are really nice plates of food!
@BeddyEatsFood Good man, thank you. I know Mands loves her prawns so that dish should be good for the both of you to enjoy. Chicken Kapitan is more like a curry, a little more spicy but you can obviously poor your own spin on what you put in it. 🙂
Interesting way to make arroz con pollo,I guess the Spanish way,here in America it is made the Puerto Rican way,or the Mexican way,main difference is the chicken is browned,but cooked in the rice,they use an Adobo seasoning,which is usually a general seasoning,and one I use on almost everything,usually combo of salt,pepper,cumin,and garlic,one big flavour difference is they normally cook a bunch of coriander in with the rice,then at the end you throw out the cooked coriander,and add fresh chopped coriander.My neighbors are American born ,but Latino,and I know when she is cooking something with coriander in it,as there is a certain smell that’s says Latino food.I think chicken,and rice dishes are some of the best.😊

That looks great! One little thing, though: "pollo" means chicken, so it wouldn't be "chicken con pollo" because that means "chicken with chicken." "Arroz" means rice. By any name, though, it looks tasty!
That's something different to try.... a bit like a Paella and Risotto cross dish...looks delicious.... I have some Saffron growing in my Allotment, its second year, so all being well, there maybe a gift for you and Amanda after christmas to send you, i'll contact you over fb when the time arrives 😊
