Nice guide. Well done. I know how much work that must have been. I've done this a while ago with Ventura on an Dell Optiplex Micro 3050, only in a way more chaotic manner. After a lot of trial and error it worked, except for the audio. I very well may have messed up things. With ethernet not really required, but you can also pretty easily get WiFi working. That's not using the original Mac Wifi, but some simulated version.
I plan to repeat the process on a more recent Intel NUC with wifi and Bluetooth, good to hear that doesn't cause too much trouble. For your machine I also think you need alcid=11 in the boot-args as it has the same audio chip as the 5070. Maybe worth looking into. Not sure if you need to patch any IRQ conflicts but as you could see it's not too difficult.

It requires specifics for each type of machine and collection of hardware. The best is to use this video as a guideline and go through Dortonia's OpenCore guide step by step and adjust for your system.

Does sleep work? This was always the trickiest thing to get working when I was hackintoshing and always required deep drilling in the DSDT files. Would be great to see if the bios tools could do all the work automatically now.
I haven't seen any issues with sleep as far as I tested. I know this was indeed always tricky but looks like it just works without further customization on this machine/versions.

An RTX 3090 will not work in macOS unfortunately. Most modern NVIDIA CPUs do not have any support as Apple and NVIDIA had some conflicts a while ago. Most AMD-based GPUs are supported though.
Depending on the brand and model of your wifi and Bluetooth adapter you will need to put some additional kexts in the kexts folder. You can find what you need in the guide: dortania.github.io/OpenCore-Install-Guide/ktext.html#wifi-and-bluetooth

Up to 10th Gen CPUs should work fine. Newer is causing challenges as the macOS kernel never got adjusted for P and E cores. Most likely you would need to disable one kind and loose some performance. For the GPU, an Nvidia 3xxx and 4xxx are not supported.

Hmm, I remember seeing this message at some point but completely forgot what I did about it. Did you start with an OC clean snapshot? Is the config.plist in the right location (OC folder)?
What exactly is the behavior? Do you see the boot options? Does space bar for additional options work? If you have a slower USB drive, it can really take quite some time before you're getting any output as well.

Newer Intel CPU's with P+E cores are difficult in terms of support as Apple never supported these generations in their OS. It might work but you will most likely not get the full performance and potential out of the CPU. Staying with 10th gen or lower is a better choice for now as far as I know.
You need a few different files for AMD CPUs, most likely you will have other components (like audio, Ethernet, etc) as well so the best way is to follow this as a guideline but closely go through each step in the guide and apply that for your specific hardware.

Roughly yes but a 2nd Gen CPU is the Sandy Bridge platform so you will need to follow the steps for that specific platform in the guide.

It boots but I think it is not detecting my HDMI
Make sure that you are using the ports directly as I initially used a DisplayPort to HDMI adapter and that was not functional.
