    This is an amazing dish. I saw an old episode of Anthony Bourdain in Armenia where he was served this, and I knew I had to try it.
    The fist time, I made more of a Ghapama inspired vegetartan full meal. I didn't add the honey. Instead, I made it a sweet/savory dish by adding onions, celery, herbs and mushrooms to your recipe. I then drizzled a little garlic sauce on top. It was delicious!
    Now that I have an idea of how to make it, I'm going to make Ghapama and follow your recipe to the letter for Thanksgiving.

      I have now made your tried and true recipe this pumpkin season, but a little less sweet. I loved it 😍
      I'm making the savory/sweet version again for Thanksgiving this year. It was a success last year.

    Would scoring the inside add to the sweetness of the pumpkin layer? Or if a quick smoke with a mosquite plank before adding the filing. Got to try the original first I love it.

    I think this is incredible and beautiful!! Is this served as a main dish, or as a side? What is the darker fruit with the apricots? Is it a different type of apricot? Is it ever served with a meat added? I think it would be amazing with cranberries, almonds and some meat as a meal. Thank you!!

      yes you’re absolutely right it is incredible and delicious dish! you can serve it as main dish or side dish it depends on how the family likes it, you can definitely add cooked meat to it like chicken or beef if you like but it’s mainly done without meat. and yes it is different kind of appreciate, you can choose any dry fruits and nuts you like to add in even dates are added some time.       I just made this dish today, and I used almonds, dried cranberries, and cashews along with all the ingredients already listed here, and it was great. I added a bit of mint for decoration but it turns out that it really tastes great as well.
      As for the apricots, the orange ones are dried in ovens, whereas the purple ones are also dried apricots, but that were left to dry naturally. So they fermented a little and have a sweeter taste, sort of like figs :)

    I followed exact recipe you have. My rice is still crunchy. I’ve been cooking it for three hours now in the oven. I don’t know what is wrong. I think maybe we need to cook rice all the way through and not half way.

      Thank you for sharing your experience with us! You didn’t cook rice enough, it should be cooked where you can smash it by fingers as shown in video, and if you cook it all the way before it will get very lumpy and over cooked inside the pumpkin.
      For now to fix your situation I would add couple of tablespoons of water in the rice and cover the top make sure steam is not escaping to help rice to cook! Best of wishes to you and hopefully you will enjoy it🥰🥰❤️‍🩹
