Long time canner, and I make this soup every year. This one is my favorite home-canned soup, to be honest! I usually make 2 quarts plus 1 pint of a home-canned meat for a 2-meal soup. And this soup never fails. I loved watching this video just because your methods are clear and concise, and your kitchen is so clean. Beautiful goodness in jars!
Beautiful in the jars and no doubt delicious! And friends will ask me WHY do I have so many stock pots? If they canned; they would know! I am glad to see you back in these UA-cam streets and hope your summer was prosperous. Mine was HOT, very HOT summer.
Yes I have lots of pots and husband had to build me another closet…. lol my summer was very hot, hotter than normal! Had to water the garden almost every day but it grew enough food to keep me busy! My tomatoes are coming in 50lbs at a time at the moment!!!
I had to chuckle a bit about your corn! I used to work with a guy who grew very big gardens. He grew a lot of sweet corn. One year was a bumper crop, as he checked the corn for harvest the corn needed a little more time to be perfect. When the corn was ready, the Raccoons ate the WHOLE crop the night before! Those little bandits are experts on when to harvest.
I just canned 10 qts of this soup. I made turkey stew with it and it was the best stew ever! I can't believe I didn't know about this. I plan on canning a lot more. Thank you, I can't wait to discover what I can make with it. My new favorite.
Thankfully we can grow lima beans here in NC. Because they are mine families favorite bean. There have been years I had to buy them along with canned crushed tomatoes, for whatever reason. I don’t like the texture of the tomatoes in chunks so I either buy or make crushed tomatoes. These gives the soup a beautiful color and spreads that tomato goodness throughout. It is such a versatile soup for many recipes and I look forward to seeing your uses. ❤

What beautiful soup! It looks like jewels in the jar. I don't like the consistency of cooked celery, so I might try just cooking a few stalk of celery in the soup and taking it out before I can. Going to be done with all store bought vegetables (prefer frozen) this winter!

Garden is still producing minus the corn...lol. Tomatoes are coming the door 50lbs at time. next up to spaghetti sauce and catsup. I already did basic tomato sauce, salsa, 3 batches of pizza sauce and this soup with the tomatoes. my green beans struggled. the first row barely got me 20 jars but howard planted 2 more rows and they are blooming now.
@@MennoniteFarmhouse around here gardens have been hit and miss it's been a weird year did my tomato and pasta sauce not sure how many more tomatoes ill get heat this week has stuff dyeing but what ever i get is a blessing.

That looks yummy. We don’t like Lima beans but I could sub in some English peas. It would be a great base for a chicken pot pie or you could add meat and be a really hardy soup. Thanks for the great video!! I am glad I found you. BTW…I wash my jars before putting them on my shelf too.
I would just leave out the limas. Substitutions are not a good idea. I would've made a pot pie if I would've had time to film it, but you're right it makes a great pot pie or cottage pie.

Great versatile soup base but why pressure can it that long if there isn't any meat in it? Or did I miss that step? My Ball book only says 25 minutes for just veggies?
In this particular recipe it said to process for an hour and 25 minutes. I had to go triple check myself. I will contact Ball tomorrow and ask why is it so long. My guess would be the density.

I have an old Ball blue book from 2008 plus I have an old, OLD blue book from 1974 ( I use it all the time). This recipe is in both of them! Looks great, I will try it.

I canned this soup when I was a new pressure canner (minus the lima beans, ick) and it lasted a long time since Hubby doesn't like veggie soup. Still in the middle of the video, hoping to get more ideas of how you use this up in various casseroles. You are such a good cook, Howard is a blessed man. Everything has struggled except tomatoes. I swear they sprouted everywhere, not just where they were planted. They are calling me the tomato whisperer. Looking forward to seeing you again!

I don’t use vinegar most of the time, when I do it’s when I’m washing them. I’m trying to get in the swing of making videos. Life comes at me fast sometimes being a farmers wife and this summer wasn’t a good year.

Yes, they are very smart creatures. I haven’t seen one in ages here but they made their presence known that night.
Same here they left a nice neat pile of picked clean cobs and husks in the middle of all the corn rows. NOT A ONE WAS LEFT 😐

It's definitely preserving season. I canned up Succotash today with garden produce. My corn was store bought too.

Look great I like putting cabbage in my soup when I open a jar to eat. I’ll have to make some of that .. I canned 55 qts with my home grown tomatoes

How long would a person water bath this if they don’t have a pressure canner in another country?
