Well done! Back in early 1980s when I learned to make bread kneading by hand, I read that it's helpful to sing, recite scripture or say prayers, to help the time go by, help keep a rhythm, and add a bit of extra love....I need to try this crust!

You were a trooper doing all the kneading by hand for us!
A favorite in our house is Canadian bacon and mushroom or cheese and green olive. Once a year I do stuffed crust with string cheese. Another occasional pizza is cheeseburger with a ketchup/mustard sauce. I will definitely have to try and make this crust. The recipe I use doesn’t call for dry milk.

Haven't made pizza dough in a while, this year, but usually friday nights my 4 children and spouses and 10 grandkids come over to make pizzas.There is always a mozzarella one, a pepperoni, and the favorite with the kids a ricotta/mozzarella and broccoli pizza. We've done dessert pizzas too.
I think the lemon juice makes it a little bit tart, like buttermilk. I bet if you just used warmed buttermilk you can get rid of the lemon juice and milk powder. I like what you have going on here. I"ll have to give it a try.

Ohhhh LeAnne! I just tried the pizza dough. It was fabulous. My 3 yo granddaughter has been giving her mother a hard time about vegetables and meat. I used an immersion blender to puree everything. The sauce was fabulous this way as well. I will email you a video of Lillie rolling dough. Thank you!

Good morning! I've never seen anyone put lemon juice in a pizza dough, so I am intrigued, & may have to try that. My husband is very low sodium, so I cook everything(we never eat out). Instead of salt in my dough, I add a little granulated garlic, oregano, & basil for that little extra flavor. Thank you so much, I always enjoy being invited into your kitchen. Many Blessings!

I don't have a problem with the rise, and bake it in a pullman pan. He has a heart condition and is on a very low sodium diet. Less than 500 mg a day. I went through at least a dozen recipes finding one that he likes, and the texture is good without the salt. Many Blessings!

My preference is really pepperoni green pepper banana pepper mushroom and maybe a little onion. As an older lady at 67 my stomach would probably appreciate the beef a lot more. My husband will eat pepperoni pizza but he gets headaches if he doesn’t get enough beef protein because he does so much hard work. So I try to make him happy where I can.
We love homemade pizza and make it often. When I don't have a batch of dough in the fridge (I use a recipe from a Bread In Five Minutes book) I make a 10 minute pizza dough. We assemble the pizza on a sheet of parchment paper and slide into the oven onto a hot cast iron griddle. For toppings we love just cheese, veggies with or without chicken, canadian bacon and pineapple, chicken and mandarin oranges (a favorite local pizza combo) sometimes I make breakfast pizza with sausage/bacon and crack a couple eggs on top the last few minutes of baking time. I've made a dessert pizza with melted butter, cinnamon and brown sugar.

That’s how I rise my bread, works perfectly. My momma never used cornmeal on bottom, so I never have either. I love mushrooms, onion green or red peppers. OH MY GOODNESS LEANNE! YOU ARE SUCH A GOOD TEACHER. Who knew pizza could be done within 3 hours? Not me. I was always taught to rise it in the fridge overnite and up to 3 nights. I guess it depends on how one wants it to taste. fermentation gives it a more sourdough flavor I think. I will try this as it has the LEMON JUICE to give it that TANG! Yes I do double it some times and freeze it. I freeze it after it’s been kneaded. Then I get it out about half way though my day to let thaw and rise, then shape. Yes, I love cooking from scratch just to control how much sugar and salt is in our diet. I love this recipe and will never change!!

My man likes, pepperoni, sausage, bacon, ground beef, onions, green peppers, mushrooms and black olives. I normally pick off or make 1/4 of the pizza with sausage and onions for me.
We use our bread maker to do the mixing and kneading, then I take it out and put it into a greased bowl and carry on with the recipe. It’s a good workout nevertheless !

After I get it all mixed and it pulls away from the bowl, how much longer would I let the dough hook knead it? I bet that would make good stromboli as well. If it’s a kitchen aid it takes 5-7 minutes. It does make a great Stromboli too! Yes my husband was so bend out of shape that he couldn’t have his pizza on Friday… I didn’t think it would bother him but that pizza didn’t make it past today lunch! Let me know how it turns out!

I will have to try it with no salt… I do love to add the garlic and herbs to my dough when the mood strikes me.
If you don’t add any salt, it really affects the texture and rise of the dough. Salt is important to the yeast rising process.

You just reminded me of why I only make quick breads or no knead oven breads. Kneading for ten minutes is not something I enjoy doing, ha ha! Your recipe does look great though! I do love pizza! Tell your spouse we appreciate the food testing!

I use grocery bags to place the bowl in to cover the dough. Cheaper than Saran Wrap.

As always it looks fantastic!! It is so nice to have fresh milk available from the farm to make cheeses. We make mozzarella and ricotta and sometimes butter.

We had to cut salt from our diet a few years back an try not to use store bought packages of food, this could be a permanent weekly item. Could I double this an freeze the dough, if so at what step. Thank you
Yes I do double it some times and freeze it. I freeze it after it’s been kneaded. Then I get it out about half way though my day to let thaw and rise, then shape. Yes, I love cooking from scratch just to control how much sugar and salt is in our diet. I love this recipe and will never change!!
Look awesome and Looks like your husband was a hunger man. I do believe we will be having homemade pizza for supper this evening. My man likes, pepperoni, sausage, bacon, ground beef, onions, green peppers, mushrooms and black olives. I normally pick off or make 1/4 of the pizza with sausage and onions for me.

We use our bread maker to do the mixing and kneading, then I take it out and put it into a greased bowl and carry on with the recipe. It’s a good workout nevertheless !

That smile said good pizza! I've making pizza for many years trying so many recipes. Ones is too thick or too thin. Yours looks perfect. Will be making the dough this week. How long have you refrigerated it and have you frozen it?
I have freeze after I left it rise for an hour for a week or so it I make more than one batch at a time.
Homemade pizza is the best

Dinner tonight! We love Friday night pizza night. 😋 I appreciate the tips and tricks of making the dough. I'm going to use my stand mixer. After I get it all mixed and it pulls away from the bowl, how much longer would I let the dough hook knead it? I bet that would make good stromboli as well. If it’s a kitchen aid it takes 5-7 minutes. It does make a great Stromboli too! Yes my husband was so bend out of shape that he couldn’t have his pizza on Friday… I didn’t think it would bother him but that pizza didn’t make it past today lunch! Let me know how it turns out!
