    The next time you chop a lot of onions place a small fan to one side of the cutting board to blow the onion scent away from you. I do this and can chop for an hour with no tears. Works like a charm!

      My husband told me to do the same thing last week after I canned some Sweet Onion Jam! I will be doing that my next batch of chopping onions!

    I'm almost 60, and my dad is reaching 80. He loves French onion soup in his meatloaf, he also enjoys it as a salisbury steak sauce. Both are delicious might want to give them a try.

    Use a jar of the soup instead of water to cook rice. Delicious!

    The first French Onion Soup canning video I ever saw, was by Heather, “The Kneady Homesteader”.
    I had watched her for quite a while prior to the accident, and I try to support her channel any way I can; she, her husband and 2 of their kids were in a tragic accident on Valentines Day 2021, and her husband was killed, she had horrific injuries and the 2 kids were not spared.
    I haven’t tried it, but French Onion Soup is on my list to put on my shelf.

    I love canning soups! Funny story, I cooked down my chopped onions in my crock pots one year when I was canning french onion soup. The smell of onions literally woke us up in the middle of the night and we had to move the cookers out to the garage. I didn't think the onion smell would ever go away! LOL

      We did the same thing when dehydrating onions.
      I don’t mind the smell of the onions cooking down or drying but I didn’t want it stuck in my furniture, clothing or carpet

    This onion soup does look very delicious, perfect for winter. Rachel I would.like to share a little information I've learned about the outer skins.of onions incase you don't know. The skins of onions have great health benefits to not just us but house plants and in your garden. Onion skins contain quercetin which is full of antioxidants and tryptophan which is full of vitamin A,C,E and more. Tryptophan helps the body make Melatonin and Serotonin. Melatonin helps regulate the sleep - wake- cycle and Serotonin helps regulate appetite, sleep, mood and pain. The liver also uses tryptophan to produce niacin which is Vitamin B3 which is needed for energy, metabolism and DNA production. Also a little about PURPLE fruits and vegetables that they are extremely good for your health. Purple fruits and vegetables are rich in Anthocyanins which are natural plant pigments that provide foods with their unique color. Anthocyanins can also benefit in brain health, help lower inflammation and fight cancer and heart disease. I know this is a lot of information but really wanted your to know just how important those onion skins are and in hopes you'd share this information.       Great info Christy! So… how do you recommend using the skins? I have dehydrated and powered my onions… could I just use then in the powder?

      @@dih1268 I use my skins when I make a bone broth. Gives the broth a rich dark color also.

      For plant food....put some skins in jar...handful cover with water let sit over night....plant food.........health benefits...drink as tea at night before bed.....put some skins in cup pour over hot water let seep for 10 min....add honey if you like and drink.

    Canning never stops. After Christmas made ham bean soup, canned the leftovers 5 quarts. Cleaned out the frig, carrots, celery, onions and garlic from the pantry and all the spices.
    Hope to get 7 quarts of veg stock canned. Thanks for the onion soup video, glad you had happy holidays. Happy canning, Tom, Grants Pass Oregon.

    When my grandma had several onions starting to sprout, she would clean them, of course, cut them and boil them with just S and P. She drain them well and cover with a cheese sauce. Wonderful side dish.

    I just watched this again a couple weeks ago and said I need to do this. Went down the road to Blocks and got a 50 lb bag of onions for 21.99!! (Potatoes were 19.99 for 50 lbs!). Making some of this next week for the pantry and storing the rest. This recipe looked soooo good.

    Hi Rachel. I live onion soup. Had it one day while I was with a client. She also makes onion soup all the time. When I left her on March 31, she was very sick with a fever. I went to pick up my stuff and had to leave quickly. I still miss her very much. She was a kind soul. I one day too will make onion soup. Thank you for sharing Rachel. God Bless you and Todd.     Well I just made this today to keep for gravy base and pot roasts but after tasting it; I actually could eat this as it was intended for soup! It's never been a favorite for soup but this is amazing. Even my husband, who dislikes soup in general, said "this is REALLY good"!     Rachel, I think your next big investment is to re-do your stove and get a pot filler. I'd love one myself. You make huge amounts of stuff and bringing those huge pots from the sink to the stove can get old real fast when your tired, or even if your not. Just thought I'd mention that to ya. Keep up the wonderful work.

    Thanks for this one! I have onions waiting to be processed now. The only ingredient I don't have is white wine...oh well. Drooling as I watch, and so many uses, I took my beef broth out of the freezer to thaw and boom! Hubby will be happy with this and I'll have more out of the freezer. You're awesome! We're moving and I'm trying to empty the freezers.

    I dry my onions upside down, plat them when dry and then hang around our kitchen and dining room. It enables you to check them all the time when passing! I used to store them the way you do, but platting is far easier storage. Weird thing, I made French onion soup two days before your video came out. Well done!

    Would love to have an All American canner but I am so grateful to have my little presto! But who know what the future holds.... if nothing else at least some of this delicious looking french onion soup will be placed on my shelf! It looks so yummy. when you and your hubby were smelling it I was so wanting a sniff. LOL

    My husband purchased my All American Canner in July for my Christmas present this year. Absolutely love it! Used it more than I thought I would with my small garden. But definitely worth every penny. Thanks for this video. Might just have to grab some onions out of my pantry and give it a whirl. Thanks again for all of the inspiration.

    Looks amazing! I noticed when Todd poured the beef broth into the roaster how beautifully dark the broth was. That is a real key to a delicious rich tasting french onion soup! Mine never comes out that dark. I will definitely have to try Gordon's. I love this soup and now I'm craving it!

    Rachel you should try the slicing attachment on a food processor. It makes quick work on slicing onions. Love your channel!

    Such a great idea, awesome job. I already use french onion soup in pot roast, and beef stew. Just pour a jar in and voila. Eliminate lipton onion soup packets. I'm going to start my onion seeds today, so I can set them out, hopefully in mid march or april? Idk, but I'm bound and determined.

    I carmelize in the crockpot overnight, then dehydrate. They are a delicious addition to lots of things. Especially burgers on the grill.

    My favorite way to use this is to do dirty rice in the oven. Uncooked rice, butter and a jar of French onion soup and bake for an hour. It's heaven!!!

    I've missed you .. I too had a terrible onion year. Year before I had so many onions!! I braided so many and gave away them. I wished I' d made your carmalized onions then !!! I will grow my new ones this year in a totally different area for sure. I love all the comments. I'll put a fan by my chopping area. I'll use my food processor to quickly chop my onions. I do use the chopping device you are using here for daily use and I use it to chop up celery. Thanks so much for shopping how easy it is to can all sorts of things. You quietly tell us what to do. I don't feel rushed.

    Hi there, came across your channel this evening, here in NZ. Watched you can your French onion soup. Yummo, I love FOS. So many good ideas for using it as you were saying. My son and I had a FOS cook off last year. I won. He's 33 and a very good cook too, but he thinks his mistake was taking the onions a little too far. Anyway, needless to say we both love it.     Watching this video again as a refresher before I begin my French Onion soup canning adventure tomorrow. It has been at least 3 or 4 years since I've canned a batch of it and want to have it back on the pantry shelf again. Today I've done multi-processes of beef bones in the Instant Pot to get that part ready. My garden is on sabbath so I purchased sweet onions and some red wine (instead of the white wine from the Ball recipe) and have those sauteed and ready to be reheated tomorrow for the recipe assembly. Just from taste-testing it I did add four tablespoons of brown sugar to my batch and thought that really helped balance it. Boy, it smells so good in here and has made me really hungry too late at night, haha. Hoping that I'll be able to get more than one full quart-jar canner load made. Thank you Rachel, for showing how you processed this delicious meal in a jar

    Looks so Good!! I just invested in another 22 quart cooker and loving it. We just picked up our half of beef and did 44 quarts of beef broth so good also I’m freeze drying most of it. Glad to see you back and looking forward to more videos thanks for sharing..

    French Onion soup was one of the first things I canned. We use it more as a gravy base. Looks delicious Rachel. Be so blessed.
    Just an FYI, the soup bones I got with my beef were not just bones. They were primarily meet. If you are expecting just bones that may not be what you got.

    WoW, another great recipe Rachel! I had an over abundance of onions this year and the sweet onions were showing signs of needing attention. After freezing, dehydrating I was going to carmalize some and came across this video. It was perfect! I used better than beef bouillon to make the beef broth and I am very pleased on the flavour profile. Just had some for dinner and a winner! Thank you for sharing 🤗💕.

    This looks like something I would like to know how to make 30 years ago when I was canning a lot now I'm not canning quite so much but I will probably still do it if I have a good onion harvest. At the time I was canning I really needed this for an additive to my cooking and even probably could have snuck in some as French onion soup but I never thought of it as an additive to recipes at the time I can definitely see the idea about the stew meat or stew chunks I'm also wondering about as kind of a base in some Oriental applications lo mein stir fry sauce I don't have a lot of garden room anymore but I mean make run to the farmers market or a local farmer if I get a chance this year and make this work. Thanks for sharing looks yummy and I could almost smell it from here. Take care of both of you

    Congratulations to you both on your new, beautiful grandchild. Rachel, good to see you back from your visit. You were missed but Todd, you did have some great videos while Rachel was gone, as always. I tried making french onion soup to can but used a crockpot and it was a total fail. From watching your video, I don't think the crockpot got hot enough to carmelize the onions and it drastically affected the taste. Your video has inspired me to try again.     I love using my roasters! They hold so much. A drawback to roasting pans, the heat comes in from the sides.

    I’m going to try this !!! Love French onion soup…. I would love to try this in a small batch with chicken bone broth because one of my dons can’t eat beef …. He loves onion so hopefully he will like it in chicken

    Hi! Thanks for sharing this recipe! I have it going right now.. the only thing I found not accurate is the 20 cups of onions. Mine is not nearly as onion heavy as yours was, so I think when Todd said you have 9 quarts of onions (36 cups) he was right!! I did a half batch and ended up slicing another 10 cups of onions and am caramelizing them down now to add to the pot. Can’t wait to can it and have it on my shelf 💕

    You can also use the onion scraps for onion powder. Put them k the oven on a low temp till they are dry and find them.
