When you said "Duncan Hines" my inner carb cop went berserk. So I looked up people who ate their Keto friendly cake and then tested blood sugar. Yes, the BG spiked as much as 20 points in 30 minutes BUT by the two hour mark, the BG had dropped to baseline and the ketones went up. I think that is awesome! I think I will make tres leches cake for my next celebration.

I think a low carb tortilla with the cinnamon sugar would make a good crispy shell for ice cream. Great recipes as always! I need single serve desserts or I will overeat them.

I've always poured milk over any dried out cake since I was a kid so I've been used to "wet cake" for over 60 years! (We did warm milk over old dried out cornbread too.) And then I lived with a Mexican girl friend and her kids and tres leches cake for birthdays! YUMMMM!
the mix is great and a quick frosting made with cream heated and chips-chocolate, white chocolate, butterscotch or salted caramel-added and melted is great, too
Much better than those sweet little dessert cups you can buy at the store. My ex husband ate almost the whole package of those dessert cups when I was working. He was diabetic. I was so looking forward to having strawberry short cake. The next day I made the shortcake on the Bisquick box. He said that was not shortcake because it wasn't sweet enough. I enjoyed it all to myself but I like your cake better.

id use the handle of a wooden spoon like we used to do for the jello cakes! mmm sugar free jellow cake would work the same way. They end up striped with color. this looks so good. Thanks ladies for another great time.
I started keto a week ago and I'm feeling so much better already. I've been keeping my carbs close to zero every day to avoid the keto flu. I already did intermittent fasting, with a fast period of about 20 hours a day. But I still had put on about 50 lbs due to medications for a chronic neurological condition. I was recently diagnosed with idiopathic intracranial hypertension also and the first line of treatment is weight loss, so I'm trying to drop weight as quickly as possible to avoid blindness and reduce my symptoms. I don't weigh myself at home, I just go by how I feel and how my clothes fit. Seems I may have already dropped some weigh over this past week. I'll see next time I go to doctor. I used vanilla cake by Splenda - yeah technically not the best item then I used sweetened condensed milk recipe with 1 cup heavy cream, I used 2 tbsp powdered allulose, couple drops of the only stevia I’ll use - vanilla flavored stevia from Best, couple swigs of vanilla from Torani, 1 tbsp butter and cooked it until thick and creamy. Yes I poured it over the cake and then added the milk.
There is a whole in this cake- my big fat greek wedding hahahaha. I am going to buy that coffee it looks amazing!

Aug. 5th 2022 .. I just checked Amazon for the exact cake mix the price there ranges around $12 to $14. a box.

I LOVE the "Super Coffee" chilled latte/espresso flavor~ oh my word, it's SO good! We've been finding them at our favorite local store~ which is a bargain/discount store w/overflow from Sprout's & Whole Foods~ Yay! My point being, I now will pay full price for them, as they are that good.=) This is rare for me btw, but I'm getting older now & really need to lighten up on this.
We get to try a lot of products that I normally would never spring for, at the regular ridiculous retail...because I'm super cheap, though my husband hates it when I say "cheap", instead opting for terms like frugal/discerning/particular~ he's much kinder to me than I am, clearly AND as it should be, right?!
*SOLA is my favorite keto bread, & one of the only ones that does not spike glucose or kick us out of ketosis. Same goes for the " Ole' X-treme Wellness" tortillas~ like them even better than Mission, which DOES give negative results for my hubs & I.
**Emily, that shade of pink nail polish is super flattering- just had to say, especially since I don't usually notice such things. Also, Sarah's blouse is so pretty! I live in the desert & it's hard to find looser, sleeveless blouses/tops that don't look 'tent-ish' on larger bustlines, & are still feminine like that.

Shoot, I forgot to ask my question! After all that, imagine~ okay, about your addition of the Swerve Brown at the end of the caramel sauce, instead of molasses- even though Sarah talked about adding it with the cream part way through- so I'm confused. Does it completely melt into the hot caramel after the 15 mins, since it looks like you added after taking off the heat? Or did you actually add it before the 15 mins cook time? I'm worried it would be grainy if added at the end- Thanks girls =)
Hey Sam lol, it melts into it at the end while it’s still warm, it’s not that much, only a couple tablespoons. ❤️❤️❤️

I see you using can whip cream. Is that Keto friendly whipped cream in a pressurized can??? I just add stevia and vanilla to my unsweetened whip cream and whip. Easy peasy!

With the caramel sauce, can you use any sweetener?
There are only a couple keto sweeteners that Caramelize like real sugar allulose is one of them and xylitol is the other (xylitol is extremely toxic to dogs at even tiny amounts so be careful if you use any products containing xylitol)
