Roys Stuffing
Recipe notes: We decided to go heavy on the meat and lighter on the bread to make this stuffing keto, and we LOVED it! It gave us the vibes of stuffing without guilt!
6 Hero Brioche Slider Rolls (torn into 1-inch pieces and dried at 200 degrees for 1 hour)

1 pound sliced bacon
1 pound bulk pork sausage with sage
1 small onion diced
2 ribs celery, diced
1/2 cup unsalted butter
3 cups chicken or turkey stock (our stuffing was on the drier side, add 4+ cups if you want it more moist, we liked it crispy on top and moist on the bottom)
1 tablespoon dried sage
1 tablespoon poultry seasoning
1/2 teaspoon ground pepper
1/2 teaspoon salt
Parsley to finish
Directions:
Tear up your bread into one-inch pieces
Bake at 200 degrees for 1 hour until dry
Cut bacon into 1-inch pieces and start cooking on medium heat. Add sausage, onion, celery. Mix them all together, turn down the heat to low, and cook for about 45 minutes. Drain most of the fat. Place aside in a large mixing bowl to cool. Add in sage, poultry seasoning, salt, and pepper (we added it to the broth by accident but still worked)
Add butter to the pan, and deglaze with 1 cup of turkey stock, add the rest of the turkey stock and turn off the heat.
Add bread to the mixing bowl and toss the meat with the bread. Add the stock/butter mixture from the pan ⅓ cup at a time while tossing together until you get the desired consistency. We used about 3 cups of liquid.

Deviled eggs have always been the thing that has to be at holiday meals in our family tradition, we're going back generations.
I'm in the South and deviled eggs appear at every meal no matter what.
Deviled eggs are expected at EVERY HOLIDAY....LOL. My kids aka adults now....LOVE deviled eggs, as do their wives!

She would mix about four eggs with a cup of milk and a quarter to half cup sugar, a pinch of salt and if I was lucky she'd add cinnamon. The bread was mostly the end pieces of a loaf she would save until there was about a full bread bag. Mix eggs, milk, sugar, salt and cinnamon. The bread she would just rip apart without a science. Not too big not too small.
She had this small square cake pan that was barely an inch deep and it was about 9 by 7. She would butter it minimally, throw bread in and then pour the milk n egg mixture over it and let it soak until bread could not hold anymore. She baked it at 350 until golden brown on top and slightly clean toothpick (cake doneness test)
She would make this while I was in school, by the time I came home it was still warm. After a day it would get what I call weepy, but to me that was like a sauce to spoon over a portion. It was good warm, hot or cold.
Make sure all bread is saturated. One time I didn't make sure, um it was okay but it didn't taste like home.

I add two beaten eggs to wet mixture as a binder. Bake covered, 10 minutes before done, remove foil to get crispy. Im always so tempted to eat before cooked, love dressing so much❤

Yay! I just ordered these rolls, thanks for the recipe!! Hero tortillas are amazing, I put a little ghee on one side and put it in a pan - then toss my dinner leftovers in it and wrap it up like a quesadilla for lunch! They crisp up so nicely.

Yes!!! Deviled eggs are always present at the Thanksgiving table! Some with bacon! Not sure if that's just a southern thing, but it's definitely a yummy thing!
2 more tips for holiday sanity: 1) if guests seem like they really want to bring something, assign them something you would have made, or they’ll bring whatever they feel like. Save yourself some work. 2) serve the most Thanksgivingest of foods. People can eat a dinner roll, cheese, whatever else, any of the other 364 days of the year. So turkey, stuffing, gravy, cranberries, pumpkin pie, whipped cream, Ok, mashed potatoes since there is gravy anyway. No one feels good after eating too much. They don’t honestly want to be tempted. Ya, they will eat if it’s there, but then feel awful (physically, and about themselves. Not worth it.)

I had surgery just before Thanksgiving one year. So my son ordered the prepared Thanksgiving dinner in a box from the grocery store. He placed a side order of a dozen deviled eggs. They are always a family gathering favorite appetizer. Especially at Thanksgiving and Christmas. LOL

Grandma cooked it with foil part of the time too. She'd spoon turkey drippings on the stuffing as it cooked or you can use more broth. Looks so good!❤

While I didn’t make your recipe, I bought the rolls and made my own recipe which was delish !!
I never like the bread stuffing. The bread got too mushy for me. So my stuffing is made with ground beef, onions, red and yellow peppers, tomatoes, bacon, and seasoning of your choice.
I'm in California and our Sprouts is currently carrying the Hero breads. I saw the hamburger and hot dog buns and two types of breads (regular and seeded). Going to be looking for these brioche rolls.

We always added sliced sausage to our stuffing. I cant remember when we didnt, even when we used to cook it in the turkey, which isnt allowed any longer of course.
I wouldn’t drain the meat mixture … just add it to the bread to give it more moisture and flavor. That’s just my opinion.
Very different from our Southern Dressing, but will try it, or blend up something of both.
We always have deviled eggs. Being keto doesn’t allow a lot of the appetizers that we used to consume.
I've been making something similar for years, except no bacon, just mild Italian sausage, and I cook it in the microwave. Always gets rave reviews :)

I've been making Chaffle DRESSING (because NO ONE is stuffing turkeys anymore) for years. Adjusted it a couple of years ago after watching Serious Keto make his. Even the non-low carb people ask me to bring it.
