I did something similar where i tried to make seasoned bean sprouts and they were so bad i just rinsed them off and ate them as rinsed seasoned beansprouts.
At home when my gran cooks food, if the potatoes gets a bit mush she just makes them into curry and adds the other stuff so it still stays good to eat with rice, your idea is also amazing lisa!!!

If you want to you can even add a splash of water and steam them while they’re roasting. Also- I would add the onions first just because they take longer to cook. Why don't you try this , In India that is one thing we cook using potatoes, the respie is : 1.Chop some potatoes ,2. Wash them two times so the starch will wash out ,3 then put few spoons of oil on full heat 4.then when the oil will became in red colur,5 then put some Cumin seed ,6 then put some chopped chillies ,7 then put your potatoes and bake it on medium heat for 15 min, but also don't forget to mix it while cooking other wise it burn , please try it. , I am sure you will like it ,,,,,,,try it please
I heard there is a trick with adding a little bit of vinegar to the water when boiling potatos for hashbrowns. It supposedly keeps them from breaking apart so easily.
She should have never boiled the potatoes to begin with especially since she took the skins off.. they should have been cooked solely in a wide pan with oil. You do not boil potatoes unless you're literally making mashed potatoes or a potato salad
