Hey Lisa! As someone who grew up eating (and seeing others make this) it's not the herb that makes raw laab bitter, it's the bile that is added to give extra flavor. It is said that the more bitter it is, the better the laab tastes and it is true as it's an acquired taste to enjoy raw laab and a delicacy. Thank you so much for bringing this dish to light as it does have a bad reputation for the bitterness and rawness of this dish!

The bitterness doesn’t come from a plant. It’s actually bile that’s added to it. For some places, that is a standard ingredient. I think it’s used as a method to preserve the freshness of the meat. I could be wrong but most places don’t serve it raw or with bitterness.

I stayed in Rock River, WY last summer, and the scenery was easily the most beautiful I’ve ever seen in my life. I live in the mountains-ish where you can never see much of the sky, and I miss the huge open sky in Wyoming so bad. I hope to be back soon.
The only thing I can focus on in the breakfast segments as a European is how every last little thing is put into some kind of plastic packaging, pretty wild.

Wow, crazy! My Mom was born and raised in Wakeeney KS. She always told us it was named Wakeeney because "you could walk aaaanywere you needed to go." 🤣 She is 83, so it has definitely grown a lot since then!

Hey Lisa! I have a recommendation for you. Next time you stop by Denver, try going to the zoo or the aquarium! They are amazing places to visit while your there! I’ve been to the zoo and aquarium many times and it never gets old!
