It was called Three Cities of Spain Cheesecake after the restaurant in Taos N.M. that popularized it, the only difference was they used a slightly sweetened sour cream topping that was put on top for the last 10 minutes. Years ago I omitted using the bain-marie (water bath) with the same 55 to 60 minutes at 350F, and they still come out perfect, no cracking, no getting over done around the outside. I've used many things for the crumb crusts, now I mostly use chocolate Teddy Grahams crumbs since I can no longer find just plain chocolate graham crackers.
I made my first ever cheesecake last week using this recipe and technique. I followed from A-Z and came out perfectly. As a beginner and living in Middle East it's not easy to find cream cheese like any other recipe ask mostly you will find the cream cheese *spread* and this recipe calls for. So this is really perfect for me and very glad that I found this video after watching so many videos. THANK YOU soooo soon much.

I tried a piece as I don't like any type of cake but I always try small pieces when I bake new cakes and it's actually pretty good. My eldest son LOVES cheesecakes and he said, "Wow mom, this one is really good." The only small "negative" comment was from my picky sister saying that the crust felt a little too soft. Any tips to harden the crust would be greatly appreciated as I will make it again for Thanksgiving since it was requested by several family members. Thanks for sharing this easy but yummy recipe :)
Day , Thankyou so much for your comment and glad to know that everyone liked it. to make the crust hard either,. you can switch to broil mode (only top rod heated ) at a fairly higher temp for the last 5 to 10 minutes ..or until you see the crust lightly brown like in the picture. or, increase the baking temperature by 5 degrees , the baking time will reduce then so keep a watch on the cake towards the end of the baking time..

Either your oven temperature is more than shown on the thermostat or the cake was too close to the upper heating coil.. you can cover the pan with an aluminium foil and bake until done

It is of course cooled down before unmoulding.. after that it is normally cooled in a refrigerator b4 having . But I couldn't cool it ' cos my kids finished it b4 I could 😀. They love these cheesecake
