Just keep your face back and use an oven mitt to hit the sealing button to venting. You can also use a 45-degree plumbing elbow to direct the steam in the direction you want. It’s probably $2 at the plumbing/hardware store and fits right over the vent. On Kathy Hester’s (vegan) UA-cam channel, she shows tips on how to use the InstantPot. I had pho for dinner tonight, but using a slightly tarted-up vegan pho broth from Halo. I became vegetarian in 1994, waaaaaay before the current pho craze, and went straight to veganism from there, so have no idea what pho is supposed to taste like. But my dinner tasted like a good soup. Will try your method next time. TFP : )
Uuuuhhh culantro! We call it recao in Puerto Rico and it's the base of our sofrito. It's freaking delicious and should be added to everything! It's easy to grow too, I bet you could grow it inside..

Have you thought about using dried shiitake mushrooms for the broth? Korean and Japanese foods use them a lot for that umami flavor especially in temple, vegan cuisine
Ooh, it looks great 🍲 ❤️ Seeing your huge pot of rice noodles though, I couldn't help but wonder - do you cook them in the smount you're gonna need for one meal, or do you store and reheat cooked noodles? I once got food poisoning from rice noodles that had been left at room temperature for too long and now I just have trust issues with rice 😬 (I didn't even know that food poisoning from rice was a thing before, naively assuming that vegan food had almost no dangers like that... apparently it's fairly common, but I also know that people cook rice in bulk all the time.) Can anyone share some tips, please? Sorry if this is like, really basic stuff to you 😅
Karolína H. I have never had any problems with food poisoning from the rice noodles. I usually cook plenty for the meal. Put the leftovers in the fridge for next time. I just reheat in hot broth and eat. The only reason I avoid cooking too much noodles is because reheated noodles aren't very al dente. They soften when enclosed in a bag and refrigerated. I would concur that risk of food poisoning is much less with whole food plant based items.

They send an email, usually on Sunday letting you know what random veggies and fruit are in the weekly box. They are usually local/organic. I have tried so many new fruit/veggies through their box. I will have to check out the sponsored website to see how to cook the new to me produce. :-)
The Viet Vegan I made this today and it was good. I bought culantro and forgot to use it 😂 I didn’t have mushroom broth so I grounded up dried mushrooms; I salted it to taste. I saw on your blog someone saying Trader Joe’s has an umami flavored seasoning. I also saw sup chay cubes at a Chinese market in NYC. I’ll add that next time and the Trader Joe’s thing, I used tofu skins and frozen gluten. Delicious!

How do you flavor this? I followed your recipe exactly but the broth was bland. Every pho recipe I’ve followed, the flavor profile is missing. Any recommendations?
FYI, if you are putting whole onions into a pot for broth, you can totally just leave to peels on (just wash the onion to make sure there is no dirt on it. The peels add onion flavor and create a brown color in the broth which, I don't know why, is more satisfying to look at than a clear broth of equal flavor. I am nuts, I know. LOL
I wish I had a larger instant pot. I feel like mine isn't large enough to make big batches of broth like this so I always end up cooking it on the stove top...
