    2 onions
    2 carrots
    2 celery sticks
    6 garlic cloves
    1 large large thumb of ginger
    5 star anise pods
    6 whole cloves
    1 tsp coriander seeds
    1 tsp fennel seeds
    1 cinnamon stick
    30g dried shitake mushrooms
    2 tbsp maple syrup
    1/4 cup soy sauce (coconut aminos)
    nori sheets
    6-8 cups of water
    Toppings
    Thai chillies
    spring onions
    Limes
    Bean sprouts
    Coriander
    Sriracha or Vegan Hoisin

    I followed this recipe and the broth is truly the star! The depth of flavors is ridiculous. It was so good, I froze some and have used it for frozen dumplings for days when I don’t feel like cooking. Thank you again so much 🍲

    Nice!! British Vietnamese here. I grew up eating my mama’s beef pho and haven’t had pho since I stopped eating meat. My family are from the north of Vietnam and they don’t usually put bean sprouts in this dish, but I am open to the idea. Northern pho is more salty than southern pho which is supposed to be sweet too. Will definitely cook a vegan version for us now. Thank you for sharing your recipe. And Lol @ “no one come for me there are no chopsticks in my house”.

      Your are absolutely corrected on the bean sprouts and the salty taste compared to the southern Vietnam cooking . After the fall of Saigon in 1975 , many northern Vietnamese introduced Pho to the southern region.

    Empty out a tea bag and re staple it instead of using a strainer. You can also reuse tea bags a couple times is you rinse them out well

    You always make the best looking dishes, that rich dark broth looks heavenly 😍 I know the black charred bits aren't healthy for us but they taste so good to me, especially on vegetables like onions and bell peppers.

    Love the way you plate the soup. (Never knew soup could even be presented in an extra eye appealing manner. Your expressive descriptions of the aromas make it seem as though I can smell the the scents.

      Actually it’s pronounced fahh and I think if I’m right that name actually doesn’t refer to the dish but the noodles themselves but however you pronounce it it’s bloody tasty lol

    I like to add Thai basil, Fresh Mint and coined Jalapenos to mine... Oh so yummy. I grew up near Seattle and there is a large Vietnamese population and so many Pho restaurants to choose from.

    thanks for this recipe! I'm not too fond of mushrooms, but i think i will give this a chance. i never thought to put my spices in a strainer while the broth cooks! genius.

    I fly to Vietnam on Monday with a one way ticket. This video is so timely. I can not wait. ALso just caught that your grandfather is from Sierra Leone.... My favourite country in the world.     I love your recipe and would SO eat it if I was Vegan. For now I'm still a Flexitarian and still eat small amounts of farm-raised, locally sourced beef, lamb & birds and therefore, must include a delicious, nutrient-rich bone broth in my pho. But I do have mad respect for all of you that are strictly Vegan!

    The Pho Broth recipe looks delicious. My own preference is all same ingredients except change rice noodles with raw zuchinni noodles and add miso to bowl with broth before added vegetables.

    love Pho ( pronounced faw). Vegan version is often tofu in the raging hot broth. I use brown miso to flavor the broth. Must have lemon grass or don't bother. So it's tofu raging hot broth, rice noodles and on a separate plate is lime, garlic, ginger, jalapeno, basil and bean sprouts. Dump your food pile into the broth which is so hot, it cooks the veggies. This is Not Ramon. Use a very large bowl and a Lot of broth.

    Authentic Pho broth correctly made is NOT supposed to be dark. It’s supposed to be a clear light brown color.

    This looks awesome ❤️ You should try a “Plátanos en Mole” recipe, which is a dessert popular in Guatemala that includes plantain with a chocolate and sesame seed sauce, it’s really delicious and I think you would love it! Greetings from Guatemala City!

    I've been a vegetarian for 2 years....Yes we definitely need a video on your vegan diet while working out. I've been having an issue with weight gain being a vegetarian because I eat a lot of carbs, however I just started training again and I do not know how to find that balance of having a low carb high protein vegetarian diet I'm so frustrated that I have definitely been considering leaving my vegetarian lifestyle and going back to chicken and fish because it just seems easier. Once I lose all the weight (15lbs), then I'll go back to my vegetarian lifestyle. I really don't want to do that so yes please come through with some recipes that will give me my protein without the carbs.
