How to make Chicken Tikka Bhuna BIR style - Best and Thickest sauce!

Serves 1
1 large breast chicken tikka - precooked

2 tablespoon vegetable oil
Method:
First, Preparation.
Thinly slice your onion and chop the peppers into small chunks approximately 1 square inch. Then use gloves if possible and thinly slice your chillies.
ideally measure out your spices into a small bowl so you can add them all at once quickly.
Second, Cooking.
Put a wide bottomed pan on your hob cooker and add 2 tablespoons of oil, turn the temperature up to medium-high.
when it starts to sizzle add your onions and peppers and fry for 30 seconds before adding the fenugreek leaves and salt.
Continue to fry until the onions start to go translucent, stirring often to prevent sticking.
30 seconds to a minute later add your garlic and ginger pastes and mix in, Whenever the pan looks a bit dry, top it up with boiled water a little bit at a time and let it boil away in the pan.
When the onions look translucent, add the spice mix and stir for a few seconds, let the spices take the heat and then add the tomato puree, mixing it in until it is hot and bubbling.
Add the chicken tikka, tomato wedges and chillies if desired.
fry while stirring for a minute until all the ingredients have mixed well with the sauce. Add the onion gravy and be careful as it will spit much more now the onion gravy is added.
use a lid or a lower heat to make it more manageable and simmer until the sauce is nice and thick, stirring regularly to prevent sticking. Use a long wooden spoon and gently scrape off the fond that forms at the bottom of the pan for maximum flavour!
when the sauce is the thickness of custard and the oil rises to sit on top of the sauce you know it is done. you can continue to simmer for longer to thicken the sauce as desired.
garnish with coriander and be proud of the food you just made!
SPICE MIX
1/2 tsp turmeric
1/2 tsp garam masala
1/2 tsp coriander
1/2 tsp cumin
1 teaspoon curry powder
1/2 a medium tomato
2 green chillies
1/3rd of a green and red pepper
1/2 a medium sized onion
1 tsp ginger paste
1 tsp garlic paste
Big pinch of fenugreek leaves
260ml onion gravy

Interesting comment about taste of curries cooked on busy nights, sometimes on a Friday night we think our curry is not quite as good as usual and we always put it down to being a different chef. Maybe same chef but just working the cooking process quicker on busy nights as you said. We learn so much from you thanks. Always a joy when a new video pops up.

Jonny Beats Mate, you need to go and eat at a Bangladeshi/Bengali restaurant. The types of restaurants in Bradford or Halifax that aren’t Indian or Bangladeshi I wouldn’t touch any of them. You may want to check the hygiene ratings of the restaurants in Bradford and/or Halifax on the government website: Food Standards Agency. All the zero rated restaurants are of one type! Trust me you don’t want to go to them!

Love your content but I thought you could have left out the part where you said about going for a curry in a Monday or a tuesday instead of the weekend as it sounds like you don't get a a good curry over the weekend . Should be the same quality regardless ,,, peace
