I was raised in the south by an excellent southern cook Mom and a hard-working Dad from NJ. I remember him giving Mom a break, getting in the kitchen and making manicotti in this way! It was such a treat for us kids to eat something he loved from his upbringing! This was at a time when I knew very little about Italian foods (I was learning) and pre-made manicotti pasta was unavailable in the south. He is not here for me to obtain his recipe, but I am so very, very happy to see Lidia prepare this dish just like he did! Brings back good memories!! Yum!

I love pancakes or manicotti filled with ricotta it's one of my favourites also i like cannelloni with ricotta i like the idea of lemon rind and butter and olive oil would be nice both
These look delicious. I grew up with a Hungarian grandmother and she called these palachinta(excuse the spelling). We filled them with sweetened cottage cheese and cinnamon
Growing up, my uncle made it this way. I was always disappointed ordering it In restaurants as they always made it with pasta shells. So I make my own with crepes and there's nothing better.!

We make pancakes, but we only mix sugar and cinnamon and put it on top. This recipe looks delicious will definitely try it out. Thanks Lydia 👍👍
