    I’m glad you’re one of those people that actually dispatches their lobsters and crayfish rather than boiling them alive. :)

      Now that I know how to humanly dispatch them, I will try that next time I have a lobster.
      On the east coast of USA we get lobster from the state of Maine, caught off the coast, in the cold Atlantic.
      I always save the legs for last. Barely any meat, but it's the sweetest tasting!

    Couple of tips. Use water in the bath with a small amount of salt. Will purge and clean the much faster.
    Do the poop shoot tail trick before you cook them. Will work every time.
    If you don't like the flavour. Try adding some Cajun powder or even some chicken stock.
    I'm more of a catch and cook same day bloke myself. Thats where the Cajun flavoring really helps.

    Have you ever made your own lemon or saffron mayonnaise with shellfish? May work with these little beauties? All you need is a food processor, grape seed oil, lemon w-rind, a tiny speck of saffron, salt and any sort of vinegar you like, into the food processor on with the lid, run at full power for 30-45 seconds depending on how effectively they are emulsifying and then enjoy.

    Great video mate. Any tips for the cleaning process (In the bath) if I’m out camping and want to do some cleaning maybe overnight?

      Thanks mate, yeah you can get away with just one night to let them empty out in a large bucket or two. Keep them damp under a cloth and after beheading give a good scrub. Apparently you’re supposed pull out the poo pipe before you cook the tails.

    if they are anything like European fresh water craw fish: Buzara: in a pan with garlic, olive oil, parsley and white wine!

    That was a big yabbie, makes like two of ours here, except our rivers are clear, so the yaddies, or craw fish we call em don't really taste of mud, we also make warm melted garlic butter to dip the yaddies in, this is interesting and i like vinegar so I'll have to try it like that, also that look what i found thing sounds kinda fun cant wait to see what happens,

      Thanks mate, I heard about craw fish recently and I was wondering what they were. The garlic butter sounds good. I've had some good photos come through already so I'll be putting 'em up soon.

    Yabbies omg ! They Are a great feed
    From dam to boiling pot , then straight into ice cold water .
    No mud but need the brain butter.
    Garnish with some lemon .
    Oooohhh Yeeeeah.

      Brain Butter? Is that what he was removing from the head? In the USA when they eat crayfish the suck the contents of the head out I think lol. I've only ever eaten the tails and don't even remember what they taste like lol.

      Thanks mate, tell her I'll do some more on the boomerang when my shoulder gets better. I stirred up an old shoulder injury with all that throwing and am currently doing a bit of physio to heal it up.

    if i have to be honest mate, i think only the biggest of the yabbies are worth cooking. yah can use em as fishing bait and catch much bigger and much better tasting catfish and murrays with em.

    His great great great grandfather was transported to Australia for stealing 1/3rd of a loaf of stale bread. Crazy times.
    For real though is that head gunk that he removes what people suck out of the heads of crawfish?

      Actually his great grandfather left England and started a market garden - he was a farmer. I think that stuff in the head is called mustard. I don't know why people eat it, it tastes just like mud.

      a little bit. but you suck the head for the juice. can’t do that if u cut the tip of the head off. and crawfish are seasoned ALOT more

      I think yabbies are, but I’m no expert, I’ve only seen Koonacs once.

    If you like to add garlic or shallots it will be far more assertive and may overpower and ruin delicate flavours like scallops or white fishes or trout. Great with the humble Ozzie or British style chips or steamed broccoli. Once a person starts making their own mayo and steak and various meat chop type sauces and realized how cheap and utterly delicious they are then eating the American mass produced tat is sorely disappointing.
