I'm from the Netherlands, and this dish is so common here too. Love it. When I was a child, I only knew ketjap as a soy sauce. I had not seen any other soy sauces yet.You should make Indosian penaut sauce !
I just cooked this dish earlier. Quick tip: if you cant get a hold of shrimp paste, or if you just dont like the funky smell of it, you can use a shrimp broth cube instead. I use the Knorr brand. It's sooo good. gives u that umami flavor just as well.
That Knorr shrimp broth cube is so good. Unfortunately it's not sold in Indonesia albeit being produced in the Philippines. Quite bizarre that you could easily get it in London but not Jakarta? 😂

Quick tip: Make the sambal yourself. I've tried making it with sambal oelek but the taste is not right at all. It's more of a condiment. It made the weirdest nasi goreng i've ever had. Just make a paste out of red chilis, shallots and garlic, add some salt and brown sugar (+ lemongrass if you have it). That sambal will give the right type of taste and spice to nasi goreng.

That's how it is normally served at the restaurants. You even included fried shallots. Kerupuk yes, kecap manis yes, terasi yessssss. My must have toppings: 1. Fried egg. 2. Cucumber.

I love Thai food too. I gained some kilos when I was back from my visit to Thailand a long time ago because I kept on earing and ate all on my plates. The taste of Indonesian and Thai somewhat similar that's why I fell in love with Thai food!

I make a version of nasi goereng which I guess isn't very traditional but I love it. I do it by making the rice in a large pot and frying chicken, peas, red, green and yellow peppers as well as green onions in another pan. I use sweet soya sauce, sambal and quite a bit of cumin and just put everything in with the rice and stir when the rice is cooked. It's served with pineapple slices and a home made peanut sauce.
Try cooking the krupuk in the microwave :P I am Indonesian and my dad used to do this all the time since i was a kid. IT WORKS!!!! just put a few at a time for like 10 to 15 seconds. You will see... if it needs more time. The uncooked part will appear more transparent than the cooked one

I like my nasi goreng to be super spicy. usually I put fried tofu and fresh cucumber on top of my nasi goreng. tofu and cucumber can balance it, you know, like yin and yang.. lol

As an Indonesian who live in Australia, a food lover, and a caterer you only missed one ingredient in your nasi goreng paste that is chilli. Indonesians love spicy. Chilli is used for almost of the Indonesian recipe. One more thing, kecap manis is Indonesian secret ingredient and cannot be substituted. I love your videos and inspired me in cooking Thai food.
Your videos are those that I never have a second thought on whether or not I'll watch them. I just came back from Indonesia, your recipe definitely looks as authentic as any Nasi Goreng I've had through out Indonesia.
There's just so many variations of Nasi Goreng and i personally like Seafood Nasi Goreng with shrimps fishcake crabmeat & Nasi Goreng Kampung as well with a green chilli paste and anchovies!!!
Pailin, you can add Fresh Thai Sator Beans To Nasi Goreng too; it is common to see Sator on Fried Rice. In Indonesia, we call Sator "Pete." you can get fresh Thai Sator in Vancouver's Chinatown shop called "Asian Market. " I used to shop there a lot when I was living and studying in Canada.
In east Java people use ketchup and little bit soy sauce and sweet soy sauce(kecap manis). We put Cabage (cut into thin pieces) and yu choi. Shrimp is also common ingredient. If you like stinky bean (sator) it's also good to mix with.

I'm from Surabaya, Indonesia. My favorite nasi goreng is called 'nasi goreng mawut' which consists of chicken, noodle, cabbage, bean sprout, green mustard (in Indonesia its called sawi hijau) with boiled/fried egg, cucumber (fresh/pickled), fried shallots, & green lettuce as toppings.. Its so delicious.. You have to try it..^^
My favorite dish in the world, i'd eat it every single day! I personally think the key to Nasi Goreng would be the "baceman bawang" and the sweet soysauce. baceman bawang is basically ground up garlic and candle nut, completely submerged in vegetable oil for at least 2 days to ferment in an airtight glass jar and use this fermented oil to toast the herb paste from your recipe. this gives the certain "umpfh" to the overall taste. also great for stir frying base.
Usually i'd love to put meatball, fishball, squids, shrimps, fried anchovy and veggies like cabbage, collard green, peas 😂 do versatile you can add any kind of things that u desire

Yes you are totally correct Pai. The most important ingredients from Nasi Goreng is Kecap Manis. The second one is one day before rice. Do not use fresh cooked rice.
Make your krupuk your self, its easy and then you are sure there are shrimps in it. Buying for me is a no no. They have the shrimp color, yeah, we all know what the food industry can do... I love making a paste of green chilies (not the spicy one), shallots and garlic, sometimes adding Thai basil as well, and make a green nasi goreng. Then sprinkle crispy fried 'ikan teri', anchovies-like fish, and add some kerupuk 'emping'. So good!
I'd like to use kencur (kaempferia galanga), pete (stinky bean), julienne slices of kefir lime leaves (without midrib or leaf bone and petiole), and green chilli for my nasi goreng. It feel so aromatic, and delicious. I don't use fish sauce for indonesian nasi goreng kampung, it is for chinese style fried rice. But anyway, nice recipe, thanks.
I like to make my nasi goreng with ikan teri(nasi), the very small one Anchovy, I fry them first in coconut oil until crispy, set aside. In that same oil you fry the rest of the nasi goreng. the bumbu and the rice. I love to put patai too ( = sator beans) . To sweeten it up I also use a spoon of abon sapi. Enak sekali.
instead terasi you can use also 'ebi' . its kind of dried shrimp or shrimp that have been sun-dried and shrunk to a thumbnail size. Normally you will find it small and dry in the package and then you must put it in the water before use until the shrimp become soft and swell. Crush it or blend together with your onion. 😊
You could also put grind coriander seed and ginger, also sausage is great companion with the fried rice but actually you can put anything you want but this is how I like my fried rice.
In my hometown in Central Java Indonesia, besides shallots and garlic they add some "pala"(grind together with garlic and shallot). Tomatoes is sliced and stir-fried with the paste together with green onions and vegetables. Before adding the rice add a lil bit of chicken soup --> pour the sauce and add the rice... :D
Love the way you cook the nasi goreng. I blend dried chillies sub for sambal oelek. And also I added salted fish cut in small pieces. Omg. So yummmm! Oh yaaa less the salt too if u add salted fish. Looking forward for more asian dishes!
I usually scramble eggs with the rice straight away, top with sunny side up egg, fried sjalots, veggies, and some satay or fried chicken on the side. The variation in combinations is endless. Great vid
If it is nasi goreng, the belachan is in my opinion non negotiable. The smell is funky but sooooooo gooood. Glad you added achar as condiment along with the fried shallots. They are absolutely great at completing the dish. In Singapore and Malaysia, the achar will be a spicy sort and we tend to also include red or green chilis with the nasi.
I was surprised finding you cooking Indonesian fried rice. Yes, Thai and Indonesian food cooked with many ingredients, make them rich in flavor. In fact, Thai food was the first one got me survived in USA. First couple months in US, I was struggling finding food I liked, trying Mexican, Indian, Chinese, American, and I could not get the taste that satisfied my tongue, until I tried Thai curry from local restaurant in Melbourne, FL. Thanks God. Beside, I found Thai people are very friendly. Anyway love your videos, and thanks for your recipes.
Hi pai! I'm from a caribbean country called Surinam that is made up of many mixed etnicities such as the indonesian people! Our country is so diverse nonetheless we're basically united by food. Good food is our staple and recipes are there for generations and generations. In my family we sometimes add dried baby shrimp (can also be rehydrated). Another thing we use is oyster sauce mixed with the soy sauce for that umaminess. And another topping i would suggest is fried garlic ! Love your show and love for food!! Keep up the good work.
remind me, whenever we have leftover rice my mom will cook nasi goreng the day after. she just put whatever we have in the fridge. you can also change the rice with noodles, with the same recipe and toppings >< another toppings like lettuce, fresh cucumber, fried anchovy, fried chicken, sunny side egg or else
I'm Indonesian but actually I don't really have a sweet tongue and therefore I'm not really a kecap manis person (I use maggi or regular soy sauce more often) but I must agree that we cannot leave kecap manis for this recipe. For those with more of a salty tongue like me, in Indonesia there is also a popular kind of homemade fried rice (its rarely found at the streets or in restaurants) which is butter/margarine fried rice, it's a popular school meal for children and it's simply rice fried off with butter/margarine (hence their yellow color) and seasoned with salt or stock powder. Usually an egg will join the party. I sometimes add garlic and green onion for taste and corned beef or sausage for protein, but it's just as good eaten by itself. Pai, you've done a great job, keep it up!
my family is dutch so we also had nasi goreng a lot!! we usually used onion, corn, and green beans or snap peas in it, and my mum would melt a dollop of wowbutter (peanut allergy house lol) into it before serving! we'd usually eat it with cucumber slices ^^

Thanks so much for including metric weights for ingredients (400g rice...). Also really enjoy seeing the local spellings for ingredients (belachan; terasi; kapi) as well as the translations! About the shrimp paste, I'd caution to moderate the added salt when using shrimp paste - it's an optional ingredient for this recipe but it is quite salty and whether one chooses to use it may affect the need for added salt. Once more tip! Some krupuk can be successfully microwaved... lower in fat, no cleanup, fast. Some Thai ones I tried this way, however, were nasty when microwaved.
wow... as an Indonesian I am amazed by the way you imitate our recipe and pallet. Just the way we used to make in here. you can also use fried tofu as a substitute for the Krupuk or fried Tempe.
Well done this looks absolutely amazing! I am Indonesian and you did us proud! I make nasi goreng so often it's our usual Sunday big breakfast! I don't usually put the terasi (shrimp paste) but I might try it! The acar is perfect for it, or fresh cucumber would do it too. Thought I mention another quick fried rice I do for the kids, with just garlic and butter, and chicken as protein. Not sure if you have tried nasi goreng padang? It's basically what you did, minus the shrimp and kecap, but more shallots and much much more blendered chili. And instead of chopped green shallots, you add chopped celery leaves. 🌹 Thank you, I love your cooking channel!
Hi Pallin, I like Nasi Goreng with stink beans and real Indonesian peanut sause. I'm from the Netherlands, so we used to eat Indonesian food from the day that we are kids...Kroepoek and peanut sause are so normal for us Dutchies ;)
If anyone whose first language is not English, please note: Pailin uses a mispronunciation of the word "herb" that some Americans mistakenly use, where they drop the aspirate from the start, so when you hear her say "urb" she really means "herb".

Hai, I'm from Indonesia, after i watched your video about nasi goreng. I never put the terasi when i make some nasi goreng, n i always add an egg mix with the rice and put some sausage or bakso "meat ball" as well. But that's very interest because i never use terasi.. hehe
Thank you Pailin for making an amazing presentation and preparation of our Indonesian national dish. It is really authentic and is prepared exactly the way we do it. Some people also add a fried chicken and chicken satay on the side. Additionally the acar may be mixed with shallots and bird eye chillis. Also plus sambal terasi on the side.
I like to put Indonesian beef meatball(bakso) and stink bean (petai) in my Nasi Goreng. Also I like to eat it with chicken satay & Bitternut Crackers(emping melinjo). I think we called it Nasi Goreng Kampung(Village Style Nasi Goreng). Suuuper Yummy

Ketjap or Kecap in Indonesian is the default name for sweet soy sauce. For a regular soy sauce we call em salty kecap specifically.

You can chili in the herb paste if you prefer spicy food. Meatball or fishcake also common to be add to nasi goreng.

Pailin, you can add Fresh Thai Sator Beans To Nasi Goreng too; it is common to see Sator on Fried Rice. In Indonesia, we call Sator "Pete." you can get fresh Thai Sator in Vancouver's Chinatown shop called "Asian Market. " I used to shop there a lot when I was living and studying in Canada.

In east Java people use ketchup and little bit soy sauce and sweet soy sauce(kecap manis). We put Cabage (cut into thin pieces) and yu choi. Shrimp is also common ingredient. If you like stinky bean (sator) it's also good to mix with.

I'm from Surabaya, Indonesia. My favorite nasi goreng is called 'nasi goreng mawut' which consists of chicken, noodle, cabbage, bean sprout, green mustard (in Indonesia its called sawi hijau) with boiled/fried egg, cucumber (fresh/pickled), fried shallots, & green lettuce as toppings.. Its so delicious.. You have to try it..^^
My favorite dish in the world, i'd eat it every single day! I personally think the key to Nasi Goreng would be the "baceman bawang" and the sweet soysauce. baceman bawang is basically ground up garlic and candle nut, completely submerged in vegetable oil for at least 2 days to ferment in an airtight glass jar and use this fermented oil to toast the herb paste from your recipe. this gives the certain "umpfh" to the overall taste. also great for stir frying base.

Yes you are totally correct Pai. The most important ingredients from Nasi Goreng is Kecap Manis. The second one is one day before rice. Do not use fresh cooked rice.
Make your krupuk your self, its easy and then you are sure there are shrimps in it. Buying for me is a no no. They have the shrimp color, yeah, we all know what the food industry can do... I love making a paste of green chilies (not the spicy one), shallots and garlic, sometimes adding Thai basil as well, and make a green nasi goreng. Then sprinkle crispy fried 'ikan teri', anchovies-like fish, and add some kerupuk 'emping'. So good!

I'd like to use kencur (kaempferia galanga), pete (stinky bean), julienne slices of kefir lime leaves (without midrib or leaf bone and petiole), and green chilli for my nasi goreng. It feel so aromatic, and delicious. I don't use fish sauce for indonesian nasi goreng kampung, it is for chinese style fried rice. But anyway, nice recipe, thanks.

I like to make my nasi goreng with ikan teri(nasi), the very small one Anchovy, I fry them first in coconut oil until crispy, set aside. In that same oil you fry the rest of the nasi goreng. the bumbu and the rice. I love to put patai too ( = sator beans) . To sweeten it up I also use a spoon of abon sapi. Enak sekali.
instead terasi you can use also 'ebi' . its kind of dried shrimp or shrimp that have been sun-dried and shrunk to a thumbnail size. Normally you will find it small and dry in the package and then
you must put it in the water before use until the shrimp become soft and swell. Crush it or blend together with your onion. 😊

You could also put grind coriander seed and ginger, also sausage is great companion with the fried rice but actually you can put anything you want but this is how I like my fried rice.
In my hometown in Central Java Indonesia, besides shallots and garlic they add some "pala"(grind together with garlic and shallot). Tomatoes is sliced and stir-fried with the paste together with green onions and vegetables. Before adding the rice add a lil bit of chicken soup --> pour the sauce and add the rice... :D
Love the way you cook the nasi goreng. I blend dried chillies sub for sambal oelek. And also I added salted fish cut in small pieces. Omg. So yummmm! Oh yaaa less the salt too if u add salted fish. Looking forward for more asian dishes!

I usually scramble eggs with the rice straight away, top with sunny side up egg, fried sjalots, veggies, and some satay or fried chicken on the side. The variation in combinations is endless. Great vid
If it is nasi goreng, the belachan is in my opinion non negotiable. The smell is funky but sooooooo gooood. Glad you added achar as condiment along with the fried shallots. They are absolutely great at completing the dish. In Singapore and Malaysia, the achar will be a spicy sort and we tend to also include red or green chilis with the nasi.

I was surprised finding you cooking Indonesian fried rice. Yes, Thai and Indonesian food cooked with many ingredients, make them rich in flavor. In fact, Thai food was the first one got me survived in USA. First couple months in US, I was struggling finding food I liked, trying Mexican, Indian, Chinese, American, and I could not get the taste that satisfied my tongue, until I tried Thai curry from local restaurant in Melbourne, FL. Thanks God. Beside, I found Thai people are very friendly. Anyway love your videos, and thanks for your recipes.

Hi pai! I'm from a caribbean country called Surinam that is made up of many mixed etnicities such as the indonesian people! Our country is so diverse nonetheless we're basically united by food. Good food is our staple and recipes are there for generations and generations. In my family we sometimes add dried baby shrimp (can also be rehydrated). Another thing we use is oyster sauce mixed with the soy sauce for that umaminess. And another topping i would suggest is fried garlic ! Love your show and love for food!! Keep up the good work.
Ohh and another typical thing in our country is pickled peppers!! Those are the best you get the spicyness, sweetness and tartness in one combo.

remind me, whenever we have leftover rice my mom will cook nasi goreng the day after. she just put whatever we have in the fridge. you can also change the rice with noodles, with the same recipe and toppings >< another toppings like lettuce, fresh cucumber, fried anchovy, fried chicken, sunny side egg or else

I'm Indonesian but actually I don't really have a sweet tongue and therefore I'm not really a kecap manis person (I use maggi or regular soy sauce more often) but I must agree that we cannot leave kecap manis for this recipe.
For those with more of a salty tongue like me, in Indonesia there is also a popular kind of homemade fried rice (its rarely found at the streets or in restaurants) which is butter/margarine fried rice, it's a popular school meal for children and it's simply rice fried off with butter/margarine (hence their yellow color) and seasoned with salt or stock powder. Usually an egg will join the party. I sometimes add garlic and green onion for taste and corned beef or sausage for protein, but it's just as good eaten by itself.

my family is dutch so we also had nasi goreng a lot!! we usually used onion, corn, and green beans or snap peas in it, and my mum would melt a dollop of wowbutter (peanut allergy house lol) into it before serving! we'd usually eat it with cucumber slices ^^

Thanks so much for including metric weights for ingredients (400g rice...). Also really enjoy seeing the local spellings for ingredients (belachan; terasi; kapi) as well as the translations! About the shrimp paste, I'd caution to moderate the added salt when using shrimp paste - it's an optional ingredient for this recipe but it is quite salty and whether one chooses to use it may affect the need for added salt. Once more tip! Some krupuk can be successfully microwaved... lower in fat, no cleanup, fast. Some Thai ones I tried this way, however, were nasty when microwaved.
wow... as an Indonesian I am amazed by the way you imitate our recipe and pallet. Just the way we used to make in here. you can also use fried tofu as a substitute for the Krupuk or fried Tempe.
Well done this looks absolutely amazing! I am Indonesian and you did us proud! I make nasi goreng so often it's our usual Sunday big breakfast! I don't usually put the terasi (shrimp paste) but I might try it! The acar is perfect for it, or fresh cucumber would do it too. Thought I mention another quick fried rice I do for the kids, with just garlic and butter, and chicken as protein. Not sure if you have tried nasi goreng padang? It's basically what you did, minus the shrimp and kecap, but more shallots and much much more blendered chili. And instead of chopped green shallots, you add chopped celery leaves. 🌹 Thank you, I love your cooking channel!
Hi Pallin, I like Nasi Goreng with stink beans and real Indonesian peanut sause. I'm from the Netherlands, so we used to eat Indonesian food from the day that we are kids...Kroepoek and peanut sause are so normal for us Dutchies ;)

And while I accept that there are plenty of examples of genuine differences in pronunciation, 'erb' seems to have come about through pretentiousness, i.e., imitating French, in the same way people are today beginning to adopt the posher-sounding but incorrect "ommarge" pronunciation of "homage" (which should be pronounced "homidge").

Hai, I'm from Indonesia, after i watched your video about nasi goreng. I never put the terasi when i make some nasi goreng, n i always add an egg mix with the rice and put some sausage or bakso "meat ball" as well. But that's very interest because i never use terasi.. hehe
Thank you Pailin for making an amazing presentation and preparation of our Indonesian national dish. It is really authentic and is prepared exactly the way we do it. Some people also add a fried chicken and chicken satay on the side. Additionally the acar may be mixed with shallots and bird eye chillis. Also plus sambal terasi on the side.
I like to put Indonesian beef meatball(bakso) and stink bean (petai) in my Nasi Goreng. Also I like to eat it with chicken satay & Bitternut Crackers(emping melinjo). I think we called it Nasi Goreng Kampung(Village Style Nasi Goreng). Suuuper Yummy
