Ah. As an Indonesian, I am so happy to see this. This is pretty authentic (except the kale, it's more common to use choy sum). The toasty egg is signature. And as long as you put garlic, shallot, chilies, and the sweet soy sauce, you're good to go. We usually eat that with a shrimp crackers and pickled cucumber too. And oh, usually, we put MSG. Lots of it. Indonesians love MSG.

The moisture is in the tail.. So if you wanna avoid splattering you cut the tail in half and use a kitchen tower to squeeze the moisture out of the shrimp

This is a staple food in my home. Easy, delicious and can never, ever go wrong! My mom always pound the garlic, shallot and a few pieces of raw shrimps into a fine paste for extra flavor, add meatballs or fish balls for the protein, plus a lot of that fried shallot on top. For those who haven't try this, you should! :)
Another thing to try, many have mentioned they eat theirs with shrimp crackers. Try it with crushed pork rinds or chicharones. It’s actually really good. We also eat ours with “crunchy” eggs - it’s how my kids call them, sunny side up but cooked separately on hot skillet and oil, in high heat, splatter top with hot oil, season lightly. When done, put on top of the noodles. I promise you, it’s heaven!

It seems to make stir frying quicker than a conventional electric stove. Thank you and thank also for your amazing and mouth watering shows:)

Every region in Indonesia has their own number one soy sauce. For Jakarta maybe Bango brand. It's tasted saltier than ABC. ABC brand is easier to find anywhere here in USA and Canada and good enough.
That is looking like a great dish and must be so delicious. I have to pull my wok out more often and cook some of my favorite dishes like fried rice which I got hooked on while in Bangkok during the Vietnam War.

If you can get your hands on the brand "Bango" for kecap manis, it is a thousand times better than ABC in my (and my mom's) opinion. And also, "oelek" in "sambal oelek" is pronounced like oo-lug (lug as in glug) not o-leg if that makes sense. At least that's how they say it in Jakarta where I'm from. Best wishes!
great video! couldnt have been more perfect timing. i recently found out via one of those dna tests that i'm a little bit part indonesian so i've being trying to get the hang of my family's old """dutch""" recipes. i just made it and its delicious! i added baby corn to the veggies and a dollop of wowbutter (peanut allergy lol) and a sprinkle of curry powder to my sauce like i remember my parents doing and it was perfect!! tastes just like home :D

I love my mie goreng in wet version. It's kind of a version with gravy, added with choy sum, pork lean meat, eggs, and wood ear mushrooms. Some hawker adds pork liver, intestines and blood tofu to give it a variety of texture and flavours into their noodle dishes AND seriously, the added organs really bring up a different level of deliciousness to the dishes.

the most important thing about fried noodles is candlenut. Candlenut makes the taste of fried noodles become nutty
In the Singapore version, add cooked potato cubes, replace samal oelek with tomato ketchup, and also coriander and cumin powder. Love Mee goreng.

this is Mie Goreng Jawa since u use the egg noodle and the sliced tomatoes. The Noodle that generally used in mie goreng is the curly wheat noodle.
