    You may never see this because this is an old post, but I stumbled on it while looking desperately for a replacement for Best Foods. This is perfect. THANK YOU THANK YOU THANK YOU for doing all the work to figure this out. It's making a big difference in my ability to eat cleaner. I am very grateful. Like you I really can't tell the difference. It tastes the same.

      Canola oil comes from the seeds of the canola plant, which is part of the Brassicaceae family that also includes broccoli, cauliflower, and cabbage. The canola plant grows to be 3-6 feet tall and produces small yellow flowers that develop into pea-like pods. Each pod contains tiny, brownish-black seeds that are about the size of poppy seeds and are made up of roughly 45% oil.

      You can buy good quality rapeseed oil in the UK, which is not heavily processed like Canola. Like the difference between Extra Virgin olive oil and the cheaper, chemically extracted types. Whether it would be good for mayonnaise, I don’t know. I use it in cakes.

    Here’s the ingredient list I got out of this:
    -2 egg yolks (room temperature)
    -1/2 tsp (or 1 tsp if you like the taste) mustard
    -1/2 tsp white wine vinegar
    -1/2 tsp fresh lemon juice
    -1 c. extra light olive oil
    -Himalayan pink salt and
    -pepper to taste.
    Another recipe suggested 1/2 tsp salt and 1/8 tsp pepper per 1/2 c oil, so I think I will start there. And other UA-cam videos mix the ingredients in a Mason jar and mix it with an immersion blender, which looks quick and easy if you have one.

      I do not know what I did wrong because this is not the first time I have made mayonnaise. I tried this recipe three times, used a whole bottle of light olive oil and wasted 6 egg yolks. I tried it twice with my immersion blender and once with my kitchen aid mixer with no success.

      I tried over and over and nothing worked months ago. Tried again today with an emersion blender and it came out perfect. All ingredients were at room temp this time. Also don’t forget the option of sugar or stevia. I found that made a big difference.

    Hellman's is what it's called east of the Mississippi and Best Foods is what's its called west of it.

      And, DUKES is the only Mayo that uses real egg yolks and that’s what we Southern cooks use.

      I used an emersion blender and it still came out watery, This oil is not cheap and I have wasted a whole bottle!

      When using the emersion blender put the end of blender over the mixture & egg yolk hard against the bottom. Do not go up and down . Keep on bottom until mayo is thick. Hope it works for you.

      @@Cagal08Yes I found the same using a stick blender with juts egg yoke it did not emulsify but it does with the egg white but then it is fluffy and not as nice . I wonder if adding the must to the egg yoke helps, did you add the mustard also.
      I was successful when I used my blender and dribble in the oil slowly.

    I made some with extra virgin, garlic and dijon. Totally gross. I decided to try your recipe. Excellent! I used regular mustard because it's milder in flavor, 1 t. honey instead of stevia. I love lemon in mayo, so I used 2 because they were rather dry. Also, I used Dan'O rather than salt and Tabasco because I like it spicey. Your base recipe is the best I found on UA-cam. Thank you so much.

      Tabasco sounds like a real kick! I might throw a little cayenne in the mix. Or make a plain batch and then divide it up and try different additions in each.

    If you get an immersion blender, you can put all the ingredients in at once and have mayo in like 30seconds

    Have to admit, this is my first time watching a mayo video. We have been looking for a replacement mayo recently (anything processed for that matter). There is not a lot out there. This is really cool.

    Finally someone who loves mayonnaise as much as I do! And I mean I really do. I have breast cancer from the estrogen and from soy, and I actually blamed the mayonnaise for this because I ate it in such large amounts. I laughed and laughed at this girl I'm telling you I would like for her to be my best friend we would really hit it off.
    Thank you for the wonderful video and I'm going to try your version of mayonnaise. I tried making it a whole lot like what you've done here.
    extra virgin olive oil and it really was crummy. So I am looking forward to trying the wine vinegar and light olive oil .

    OMG - You are soooooo right! I've eaten Best food and Hellman's Mayo since I was a kid, but no more! The Best Food Mayo tastes like kerosene now. The soy oil is absolutely awful. Bertolli is the way to go with oil fo sho! Many thanks. So glad I found you on YT.

    You are the best!! I grew up with mayo on potatoes, pizza, burritos, etc. Homemade gags me! I'm going to forward to my husband. He's dying for me to switch to homemade mayo! Yes! The oil is rancid! Olive Oil is wrong. I love how you love mayo like I do, lol!

    Hello from Alaska! I just made this and it is sooooooo good! Yay, I finally found a yummy homemade mayo!! So, I added a squirt of regular stevia and I did a bit of research to see if there were tips to make it last longggger....and, there is! I added the "Whey" which is the liquid from the top of my plain Greek yogurt and this will help the mayo ferment and keep around 2 months or so in the fridge and you can't taste it in there at all. This way I can make bigger batches. Thank you!

    OMG! I have been addicted to Best Foods since I was a kid. So much so, that one of my favorite sandwiches was just Wonder Bread with Best Foods on it (can't imagine the damage that combo did to me, lol). This is EXACTLY what I was looking for... some way to be able to enjoy my mayo without the detrimental effects of Soybean/Canola filth oils. Thank you so much! 🥰

    Can’t wait to try this!! Avocado mayo is gross! How much lemon juice did you add? Was mixer on lowest speed, just to mix briefly? It didn’t appear that you whipped it or mixed for extended period of time.

    This is terrific! I changed up the vinigar for apple cider vinigar added a little more as well as mustard and lemon juice. Fabulous recipe! I do believe you are so right on with that extra light olive oil, Bertoli.!!! thank you

    KRAFT Real Mayo
    This was an amazing recipe but I used an immersion blender, one cold egg straight from the fridge, regular white vinegar and French’s Honey Dijon Mustard. Let me tell you. It tastes like Kraft Real Mayo. Same great texture. It’s white too. I’ve never been a fan of yellow Mayo on my sandwich. Yellow Mayo is good for egg salads and cold macaroni salad though :)
    Add the egg and other ingredients and blend. Keep the blender in the egg mixture. Then, add the oil and start mixing on high but DO NOT raise the blade until you see that the bottom has become Mayo. Then you can move the blender blade up and down to incorporate the rest of the oil. It took me like 1 minute. 3 min. start to finish.

    I was searching for a decent Helman mayonnaise replacement and I found your video. It’s old but I had to reach out and agree with you, especially about the rancid taste of the chosen mayonnaise that is being sold out there at an incredible unaffordable cost. I Have given this so called mayo a chance and every time it was so gross I tossed regardless the price I paid. Thank you for this video.. 🙏👍 Btw how much lemon do you add?

    Great Video! I too have spent way too much trying healthy alternatives that did not taste good and used unhealthy oils. Thank you for all the tips. It passed the taste test:) FYI: I made it w/ EVOO & lime instead since that's what I had on hand. I definitely get the EVOO after taste but I don't mind it. I actually like it. Next time I will use a lemon and it will be even better. Consistency and taste are wonderful. Thank you

    You must be my long lost sister, lol! Mayo is my main food, and I spend a lot of my food budget on it. Have you tried Sir Kensington's made with avocado oil? Well, now it is about sixty bucks for a case of six tiny jars (shrinkflation). I have an egg factory in my backyard so I am checking out all the recipes for homemade. But I like Sir Kensington's so much I plan to use the same ingredients and just tweak alot, I suppose. Thanks for the great video!

    Let’s try to find a non-GMO organic light olive oil. Bertolucci’s oil says it contains both refined and not refined olive oil. I’m not happy with the refined part but I’ll take it if I have to. Also the oil comes from five different countries in Europe which usually is an indication of poor quality olive oil but I’m not sure this is the case here.
    I really enjoyed your video especially after finishing watching one about avocado oil mayonnaise LOL. If someone has made this with an electric handheld mixer let me know because I’m not buying that big appliance!
    I look forward to seeing your other videos and seeing what you’re up to 😊

      I agree, John. In fact, my husband did a ton of research and the only olive oil he found that was 100% pure olive was from California Olive Ranch, and that’s the only olive oil we use now. There may be others out there that are 100%, but we at least know that one is. :)

      And you can absolutely use a hand held mixer. It’s obviously way easier with a stand mixer, but that’s the only reason I use one in this vid. :)

    The trick I do to my avocado oil mayo, I use
    2 cloves of garlic. And a little sugar my mayo is excellent.

    The white mayonnaise is made from whatever vinegar you're using. If you're using a white distilled vinegar it'll be a white mayonnaise. I used apple cider vinegar so end up being yellow.

      @@lynnking2480 I *think* the lemon juice is only for flavor, so in that case, if you like it without the lemon then yes. However, I don’t know the science behind mayonnaise to be honest, lol. It could be that the lemon helps with the emulsion, in which case probably not. I would just try a small batch if I were you and see if it works out without the lemon.

    Canola oil ist maybe different in europe but it's far on the healthy side. In german it's Rapsöl. And your dog is extra cute!

    how long does this recipe last in fridge if not used? I noticed you did not use a fermentation agent like yogurt whey or sour crout juice... So What we talking about 4 -7 days in fridge or longer?

      I typically would make only enough for a week as that seemed about the best timeframe. It probably lasts longer though.

      @@123loveyourland so I made my first batch using sunflower oil, made a small 200 ml batch... and OMG Why didnt I start this 30 years ago... I have never been this excited over mayo Ever.

    It is not an umbilical cord. It is called a chalazae. It anchors the yolk to the shell's membrane.

      @ lol I know. It was actually a joke with my mom and me. One time she even hand made me a birthday card talking about the “chalazae” because she thought it was hilarious that I was so opposed to it. :)

      @@123loveyourland I had a friend and her daughters that called it the sex organ and always removed it when using eggs for anything even scrambled eggs. I thought it was the funniest thing.
      Trying your mayo as I too love Best Foods mayo and very disappointed in homemade. I think you are right it’s the oil.

    The darkness of your mayo could be fresh farm eggs. The yolks are darker.
    Store eggs have lighter yolks giving you a lighter mayo.

    What kind of oil is that again? I heard b-lli and that's it. I'm having my husband bring some home.
    Oh and do you think it makes a difference if you use the stand mixer vs stick blender?

      Bertolli extra light olive oil. And I have never made it using a handmixer, so I don’t know if it’s worse or the same, but I can tell you for sure it’s a lot easier with a stand mixer, so if you have one I would recommend it because you have to blend it for so long.

      @@123loveyourland I have both. I'll use the stand mixer. Thank you again. My husband is super excited that I'm excited to try yet another mayo. He will not eat soybean anything unless I sneak a table spoon in a large meal. Never Canola - ever! Thanks again!

      I'm back to make this recipe again. How much lemon juice did you put in it? It was taken out of the video.
      I'm not a lemon fan so I didn't add some the last few times we've made it.

    The extra light olive oil contains other oil. Usually canola or soy oil. It is not pure olive oil

      Try Grape seed olive oil. It’s healthy and has a clean flavor

    I tried someone else's recipe and it was exactly what you described, GROSS. Too much mustard and it was just horrid with the wrong ingredients. I just want it to taste like Best Foods/Hellmans. Thanks for making this video.

      That’s hard to say without having watched you do it. The only thing I can think of off the top of my head is… Did you use a stand mixer and whip it for long enough?
