  • The pike conger, or "hamo" in Japan, is a traditional food in Japanese cuisine. A tasty way to prepare conger eel is kabayaki, where sweet teriyaki soy sauce is brushed on while the deboned fish is grilled whole. Kabayaki eel is best served over rice or with "tamagoyaki", a Japanese-style egg roll omelette.

    This is the best way to kill the eel, it is already dead after the first cut and the rest is just nerves, it also allows for most of the blood to leave the body which generally improves the quality of the fish

    This is how Osaka cut eels.
    They start on the belly.
    On some parts of Japan, they start at the back of the fish, thus not damaging any of the internal organs of the fish especially the liver which they use on their soup or sometimes added on a cup of sake.
    Japan has two ways of cutting eels, and starting from the back of the fish is somehow regarded as one of the best way to cut the fish. Others say, you should always start on the belly of the fish. It's a matter of preferences.

      Priyo Purwatmo yeah you can eat it. But it's purposes is actually to just add flavour to the sake. They don't add the liver as it is (raw). They will either dry grill it or boil it before adding it on the sake.

    Can someone explain me why they stick that metal thin rod through the eels head and body? I would think the head is so it can die faster, so they can't get bite, but why the body too?? So it doesn't spasm while it's been cutted?

      Exactly. Some of travel thirsty's other vids have shown what happens, the nerves are very active and the eel lashes even without a head. When the eel is this big, it's going to be back on the floor after you cut it unless you do that.

Not only it's more humane but it conserves the fish for longer, doesn't let it smell fishy after some time AND makes the fish taste better than the death by suffocation method because it can't release hormones that instigate decomposition. Thank you very much for this.
