My version: salted saugeges, caramel onion, cream milk, parmesan and macarronis al dente, all in one

This would make a fantastic meal for one. In a meals for one book on a cost of living budget. Not sure what the ingredients would be for just one person tho
Make the same amount of sauce, half the pasta, and use the rest of the sauce in something else. I could see it going on fish, into a soup or maybe on rice.

We do have vegetarian "fish" & chips, we use a deep fried halloumi style cheese made without the rennet instead of white fish

People do that using banana blossom and call it vegan fish and chips. Its just using the name of a well established dish to convey what it is like. If a menu said veggie carbonara, you wouldn't be confused, you can tell its like a carbonara but with the meat replaced with vegetables. Easy to understand.

More like a cacio e uova with leeks. It's not carbonara without strictly only guanciale or pancetta.
No problem, in italy is the same.
Eggs, Parmigiano/ Pecorino and anche other thing, became Carbonara.
The name is to make it very quick for a massive global audience to get before even clicking on the recipe.

@@nutfca no. They would. But that leaves out a lot. The cooking technique is basically that of a carbonara. So adding the name into the title tells a lot more about the recipe before the click. Also, it’s click bait for trolls, let’s be honest. Two birds, one stone.

and parmesan is not vegetarien. bc of that. it contains rennet from the stomachs of calves. Therefore it contains animal ingredients: NO LONGER VEGETARIAN

Nice, but please don't call it carbonara, it's not. I am a vegetarian myself and therefore look for good and tasty alternative recipes. But please have some respect for authentic dishes and stay away from it. Just give it a different name

Nobody cares, he's not saying it's an authentic Italian dish and the name gets the point across.
He certainly does that, simply by calling it carbonara. It's the same if Antonio Carluccio made fish and chips without using fish, people would get angry too. Of course people care about this, it's about centuries of culture, history and identity. It makes sense that Americans don't care, they are perfectly familiar with ruining everything that is beautiful about Europe, that is simply what their entire culture is built on. But for everyone with respect for culture and identity it does matter.
Why the concern with rennet in cheese making it an animal product? The butter and eggs are animal products. The dish isn't vegan but it is absolutely vegetarian.
Parmesan isn't strictly considered vegetarian. Just google "is parmesan vegetarian?" for more explanation than I could offer.

I don't understand why these people would feel the need to use the word 'carbonara'. They can easily avoid such offence by simply saying this is just a creamy leek pasta for example. I am starting to think they want to cause offence in order to gain views/comments.

This may be a nice pasta, but it has nothing to do with carbonara. Carbonara is traditionally made with guanciale, not "smoky bacon", and definitely not with leeks or any other vegetable. It also has pecorino romano, not parmesan cheese. And it should have black pepper, and more than only one egg for that quantity of pasta.
Don't call it Carbonara. If you need to call it as another dish, it means your dish sucks. And also Carbonara doesn't come with bacon. Who the hell is this guy?
