You accidentally talk to one of the pillars of filipino cuisine in the Philippines. So blessed. She is one of the people I look up too when it comes to Philippine food chefs.

As a Kapampangan, I enjoyed this very much. As an aside, my dear ima was a friend to Aling Lucing. My mom was a vendor in front of the Sandico Clinic in the San Nicolas Market in the olden days and so was Aling Lucing. But back then Aling Lucing was not into food yet, she only sold veggies.
I wish you can have part 2 of this cause, Pampanga has more to offer like the Everybody's Cafe, and Apag Marangle Restaurant to try the Kapampangan exotic food(if you wanted to really explore pampanga), and also the famous seafood house Crabs N Crack. I hope you'll come back :)
Aling Lucing's sisig is one of my favorite childhood foods. I remember eating it every Sunday when the cook was off duty. I was young back then and I was living with my grandmother. Aling Lucing's sisig was the best. It had a deep, smoky flavor from the charcoal grilling of the pork skin and meat. It was also very juicy, not dry looking at all. As I watch this video of Aling Lucing's sisig, I was sad to see that it is no longer the same sisig I knew in my head. The sisig in the video was kinda dry. 💔 I guess things change over time, especially when the person who created something is no longer around. Aling Lucing's sisig was a unique and special dish, and it's only natural that it would change after she passed away. but I will always remember the sisig that I loved as a child.
Jessica is such a great Filipino food expert. Ung Napaka detailed nung explanation nya about sa food at napaka genuine ung mga reaction nya. The best ka Jessica!👍💯 Sana malibot mo ang buong Pinas.🥰 Love you always Jess. Ingat ka and stay strong and healthy.❤💖❤️💖❤️😘
Was legit worried that you went all the way to Angeles to eat at Dainty. Hahaha. I love Dainty (I legit laughed out loud when this was the first suggestion) and I get why it was recommended but Aling Lucing's, Mila's and Cucinang Matua really were very representative of Kapampangan food and I'm glad you enjoyed.
i think the reason the older people recommend dainty is that most of the time they eat there when there is a family occassion. example, pag birthday ng isa sa mga auntie ko sa dainty talaga sila nagaaya. saka aircon kasi. hehe as for aling lucing, its undisputed that the sisig there is top notch. kaso sobrang dami narin may masasarap around pampanga, most notably in angeles. one time, may kinainan kaming sisig sa tabi ng angeles hospital, super sarap. pero parang maliit na turo turo lang. and also, may sisig festival (not sure meron pa ba nun) thats why almost every restaurant has also upped their sisig.
I love this episode! I'm glad you get to experience the hospitality of the Kapampangan's. They really go overboard especially when it comes to serving food! :D Everytime we visit our relatives in Pampanga, it always feels like it's fiesta!
Ang galing mo talaga mag food critic haha, di lang basic ang pag critic mo, where other people would just go “o it’s so good, etc” but you dive into the reasons why - marami pa additional opinion; like yung judge mo dun ky Mila’s sisig, where you said the first taste is what you’re familiar with but as you chew into it, it’s like an unfamiliar but tasty flavour. You also judge based on multiple perspective or preference (not just your own) including others perspective/preference whether it’s those people that like the simple taste or people that are into stronger flavour, etc. On top of that entertaining person and vlog overall (bonus: maganda pa 😳)
I love the part when you know the history behind the origin of the food...so amazing... and ngayon ko lang nalaman that sisig is originated in pampanga... thank you Jessica and team... such an informative content... ❤❤❤
I used to study in Angeles when i was in junior high school and im not gonna lie, the food there was really (and always has been). Our school have the best food, we have there fried siomai which was 3 for 10 pesos that time and the chilli oil was so OP. Not to mention they also sell the best ulam dish there and my faves were the sisig, sipo egg and the chicken fillet. I also remember after class we also go to my friends house and her mom always prepare super delicious ulam and their fridge is always filled with bottled soy choco milk. That was the only school that i've experienced decent and quality food and i wish i can go back there.
Also Nice Jessica does a segment on Koreatown in Pampanga. I remember hearing stories that Koreatown used to be a District for Americans when Clark was under the United States Air Force when I was little. Note I was born in the United States but my parents are from Pampanga and know the history of that in previous decades.
It's awesome that you know how to speak our national language. This is the first video I've seen from your channel and I like how you presented it. You also have a great personality. New follower here! :)
Another great video! I feel you when you had difficulty explaining the flavours. One of my favourite food vlogger Amy made in Japan really explains flavour very well. This series could branch out so much with showing the distinctness of regions in the Philippines through food and I can't wait to see Bacolod amongst that since it's such a foodie with very unique taste as well. As inspiration, Best food review series on Vietnam during covid is sooo interesting and very well made. Thanks for another great video!

Once I saw that Bringhe, I remembered and missed my Lola.. She used to cook that for Noche Buena together with her signature Asadong Kapampangan. She's from Mexico, Pampanga as well!! Pero dapat may nag recommend ng "Razon's Halo Halo"!!~
Kusinang Matua is one of best places. Imagine if you were hungry going in and the fact that you found the dishes delicious being full should be a testament to how good it is. Pampanga takes pride in their cooking and their flavor profile is balanced that leans closer to sweet in my opinion. Love from Masantol
This might be my fave episode so far. There's heritage, really authentic Kapampangan foods which me as I pinoy don't know. Nanay Lillian's the best pick, there's more to Pampanga than sisig❤
For me, the best way to describe Aling Lucing's sisig is it has that rich charred meaty flavor with the crunchiness of pig's ears. Good description though in that it has that basic/OG flavor. As a Kapampangan, I wish someone recommended her Kilayin (different from Kilawin of other provinces) and Buro. I want to see more out-of-town Paborito like in Tagaytay, Batangas, etc. :)
As a Kapampangan, I wouldn't recommend her kilayin as she previously mentioned that liver is not her likes (she'll eat them when served to her, but it's not her motivation to eat)
Pulutok is a better option but only carinderias serve it. She could also try Sinigang sa santol or kamias since I think it's way better than sinigang sa sampalok.
not a single word against this!!! heart warming, sincere plus the usual Jessica candidness and facial taste expressions.... sana ma invite kayo sa isang town or barrio fiesta for real authentic, home cooked buffet - no pun intended to our beloved restos. CHEERS!!!❤

Asado in NCR is different from Asado in Pampanga Pinakbet in Pampanga is different from Pinakbet in Ilocos Pampanga serves "exotic" dishes too like Salagubang (Beetle in english) or Croc meat or Frog dishes. It would be ideal if you also have someone native in the target province to help you pick the local's favorite eating spots. Great job and enjoy!

I recently had my own car and my friends in Pampanga is excited for me to visit. This is the perfect episode! Amazing u guys were able to meet Nanay Lilian herself and accomodated. Excited to explore Pampanga soon!!
Actually Chinese, Spanish and indian cuisins are engraved in Kapampamgan food culture. Kare kare came from Pampanga(Original curry from India brought by the Sepoys). You will notice alot of Kapampangans have fair skins this is due to their Spanish and Chinese heritage.
Chinese and Indian cuisine? You gotta be joking! Those two are so diverse and you’re telling me they’re engraved in kapampangan cuisine? Like where, in which kapampangan food. Don’t tell me it’s on kare kare because that’s bull. If you had proper Indian cuisine you won’t be making this comment.
Hello to our province. 😊 So glad you meet our food historian Apung Lilia Borromeo. She has her own vlog as well. 👍 Dakal a salamat you like our food. 😊
Would really love to see Jessica have a food travel around the Philippines. Example: Adobo food tour and pancit food tour. Exploring the different types of ingredients available to a city and how they turn it to different dishes. I really think that although Jessica says' that she is shy, she is doing a really good job hosting 👍👍👍
Filipinos are so hospitable talaga. Sayang hindi mo na-try yung Susie's Cuisine and L.A bakeshop para sa miryenda type of food. Pero ang layo ng napuntahan mo, from Angeles to San Fernando to Mexico, grabe. Good job, good job. 🤍 Thank you for featuring Pampanga sa vlog mo.
Kapampangan foods are very tasty.... sa wakas napalabas din ang pampanga paborito series. 😉 Jessica, You are very good at explaining all the dishes that you taste. thank you and we know where to find delicious foods.... keep up the good work... thanks to your teams they do their job well....🥰❤❤❤
Thank you for featuring my province, there are alot of delicious food in my province. If you comeback, there are still lot more food to try like some dishes that only you find here.
For me Pampanga is not the only province that loves to cook. Because many parts of the Philippines have special cousins that show how Filipinos show their style of cooking. For me bicol because i love spicy food. The Bicol style for me is very good.
Jessica accidentally gatecrashed the Boss's lair. lol Dude, she's the legendary Atching Lilian. I wish one day I could taste her dishes too. Greetings from Auckland.. Kalibo, Auckland 😂

Pls take care of Jessica she looks so hardworking to the point that she doesnt look like she has a team working for her, 4. change your pd, dont want to hear her voice 5. Pls hire a PA who will take care of you 6. When jessica talks the video producer adds annoying sound effects...

So glad you meet our food historian Apung Lilia Borromeo.
Good to know the Paborito series is back, yehey! 5th viewer watching from Taipei

My favorite Filipino food is lumpiang shanghai 😍although I am not sure if it really is a Filipino dish or from China 😂
I love the filipino hospitslity snd friendniless, would love to try philippines food and vone there soon
Luzon in general is more on salty and sour taste when it comes to dish/food while visayas and mindanao is more on spicy, creamy-gata kind of foods
Yea, that's what I observed too. My parents are from Mindanao, but we are now living in Luzon. They love gata and creamy food.
Proud Kapampangan here!! Dakal a salamat for visiting Pampanga, Jessica. Kaluguran daka 🤍
Grabe kay Nanay Lilian ambabait. Enjoy Jessica! ☺️
Thank you for featuring my province, there are alot of delicious food in my province. If you comeback, there are still lot more food to try like some dishes that only you find here.
Only in Jessica ... throw back 1500.. Spanish time. hahaha 😂😅😅❤
Can we agree that jessica is the cutest food blogger in YT rn?
Jessica is so good at explaining the food and its flavors. It's as if the viewers are actually tasting the food too. 🫰
Hope you can visit Bulacan, too, Ate Jessica! 💓
For me Pampanga is not the only province that loves to cook. Because many parts of the Philippines have special cousins that show how Filipinos show their style of cooking. For me bicol because i love spicy food. The Bicol style for me is very good.
Jessica accidentally gatecrashed the Boss's lair. lol
Dude, she's the legendary Atching Lilian. I wish one day I could taste her dishes too. Greetings from Auckland..
Kalibo, Auckland 😂

My daughter inlaw is a filipina with a very large family. They have a lot of family get together. MY favorites are chicken adoba, pancit and lumpia. Have an amazing day and God bless you Jessica. 🙏
Sisig has different variations per municipality in Pampanga. There is also what they call Sisig Bacolor.
I love this episode and how you met one of the pillars of Filipino cuisine on chance meeting! Like I loke how all of these arent planned!! ♡
When watching an episode of "Paborito", I know it's really good episode when I'm very hungry after watching it. 😂😂. This one made me REAAAAALLLLLLY hungry!!!! Great job to you and your team as usual!!
I love and support you JessicaLee:
1. I'm here for Jessica, whether you do your videos or you hire a team to help you, or you're on your own without a team, i will watch your videos
2. Sana your team takes care of you, dont put Jessica on the spot to purposefully test her, she tends to say yes but what if she is not comfortable with what you make her eat or do
3. Pls take care of Jessica she looks so hardworking to the point that she doesnt look like she has a team working for her,
4. change your pd, dont want to hear her voice
5. Pls hire a PA who will take care of you
6. When jessica talks the video producer adds annoying sound effects...
Please visit Malolos, Bulacan too 🙂
Wow, sana all... What an honor to meet Atching Lilian, the mother of Pampanga's Culinary History... Your eating one of the food prepared by one of Filipino Treasures...

Jessica, I'm loving your paborito series more because u were honest. Like you've said that hindi mo pa nakikita yung "taste of pampanga" and it is true because commercial yung napuntahan mo until nkita mo si Nanay Lilian. So Brave!
Kaya mas masarap tlga puntahan ang karinderia sa pampanga kesa sa restaurant. Legit na lutong kapampangan
you are very lucky!!! you just experienced the kapampangan hospitality with the one an only , our legendary OG chef 😭 sana all!!!🎉🎉🎉
Finally! Pampanga . Good job jessica! ❤️❤️❤️

Very educational. Akalain mo, ang tanda ko na pero ngayon ko lang nalaman history ng sisig. Salamat Jessica. 🫰🏻✨
I love how authentic your reactions are Jessica, specially when you are being provided so many foods in Nanay Lilian's family.
Not Jessica singing La Salle hymn in UST / españa 😂😂😂 Go girl! Animo La Salle 😂😂😂😂
Also, glad that you went to Nanay Lillian’s. ❤
Ibang klase talag pinoy kahit saang sulok may makakausap kang english😄pawer!
You should go and do paborito food crawl in Los Banos, Laguna :) around UP Los Banos would be great
i am lucky i grew up eating Kapampangan food, the quality is different from anywhere else
Walang sibuyas? 😁 any sisig recommended by the locals must be good. But the original sisig will stay as the real deal. I was in Clark when it's still an American AB and our pulutan is always sisig from Aling Lucing. 👍
Part 2 please... there's lot more to discover in Pampanga
The “other” best sisig in Pampanga are the ones made at home 😂.
Hi Jessica, I really enjoyed watching your food vlogs. I hope you can visit tuguegarao city and try different dishes like pansit batil patong haha
I was really waiting for this Paborito series to feature our very own province, Pampanga, and I truly respect and agree with the reviews you left for every restaurants. Also, shoutout to the kuya's and ate's who gave you recommendation cause they lead you to the famous historic restaurants that we have and I'm so glad that they were featured.
P.S. I wish I could've met you when you were in Angeles. Thank you for appreciating our culture and food, Jessica 💗 Malagu ka palagi 🥰
